    With some ailments, the use of sour cabbage is strictly contraindicated. It is not recommended for the following diseases:

    • pathologies of the thyroid gland;
    • kidney disease;
    • pancreatitis;
    • gastritis with high acidity and ulcers;
    • urolithiasis.

    Bigos with meat

    Products: 450-500 g of meat, 100 g of brisket, 200 ml of meat broth, 50 g of onions, one small carrot, 300 g of fresh and sauerkraut, vegetable oil - three tables. spoons, salt and spices - to taste.

    Cooking. Chop fresh cabbage, put in a saucepan and put to stew. Finely chop the onion, fry vegetable oil, at the end, when it becomes golden in color, add grated carrots - put in a saucepan, to the cabbage. Cut the meat into small pieces, fry, also add to the saucepan. Do the same with the brisket, when it is browned, put sauerkraut on it - first it should be washed and drained. The final stage of preparation: put all the ingredients in one bowl, pour meat broth, add about 50 ml of brine from sauerkraut. Simmer for 10-15 minutes.

    Shchi with sauerkraut

    Products: 0.7-1 kg of beef bones, 200 g pork belly(ribs), 0.5-0.6 kg sauerkraut, 1-2 onions, small carrots, 50 g celery root, herbs, 2-3 tomatoes (if out of season, replace tomato paste), bay leaf, salt, sweet peas - to taste.

    Cooking:

    • Put the beef bones in a saucepan, pour water (3 l), wait until it boils, carefully remove the foam, put the peeled carrots and 1 onion (do not peel), cook over low heat for 2–2.5 hours.
    • Cut the brisket into small pieces (remove the meat from the ribs), finely chop the onion.
    • Peel the celery, then cut into fairly large slices, do the same with the parsley root.
    • Fry the chopped onion, add the roots to it, simmer for 3-5 minutes.
    • Squeeze the cabbage, add it to the pan - to the brisket, add 1 liter of water with tomato paste diluted in it (or add grated tomatoes - in summer). Simmer for 2 hours in the oven at 140°C.
    • Strain the broth, remove the meat, remove from the bones, place back in the pan.
      Remove the cabbage with fried brisket and roots from the oven, add to the broth, boil for 15 minutes. At the very end, add greens.
