Celery how to peel celery stalks. How to peel celery: types of plants and clear cleaning recommendations. Root celery: cultivation and use

Aromatic celery is a spicy vegetable that came from the countries of the Mediterranean Sea. In terms of the content of vitamins and useful microelements, it occupies one of the leading positions among vegetables. Thanks to the great content essential oils gives dishes and salads a specific bright flavor. All parts of the plant are eaten both raw and processed. And in this article we will analyze the types of celery and how it should be properly cleaned.

Fragrant celery- a biennial herbaceous plant, in appearance of the leaves is very reminiscent of parsley, only much more massive. In the first year, the plant forms a powerful rosette of dark green leaves with a beautiful gloss, fleshy cuttings and a strong white root or even a root crop. In the second year, green leaves appear in early spring, and by mid-July the plant is already blooming, in August the seeds ripen and the celery dries almost immediately.

The appearance of celery depends on the variety to which it belongs: leaf, petiole, root.

Leaf celery is grown for fragrant greens. rich in vitamins. It is eaten fresh, in salads, as a seasoning for soups and other dishes.

This type of green has thin stems and a tough root, both of which are not suitable for eating.

Petiole celery is cultivated to produce petioles and leaves. Petioles reach a width of 4-5 cm, very juicy, oily, contain a large amount of essential oils, vitamins, useful minerals. First and second courses, dietary low-calorie salads are prepared from them, they are added to pickles and preserves to give a piquant, bright aroma and pleasant taste.

grown solely for the root crop, similar to a large white beet and reaching from 500 to 900 grams of weight. Root crop - a real storehouse of vitamins, has a beneficial effect on the human body. It is used both fresh and in salads and hot dishes.

Leaf and petiole species are sown directly into the soil in early spring or winter, and the root species are planted in seedlings.

Useful and harmful properties of stems and roots

Different parts of celery close-up on the table

This is far from all the miracle vegetable.

But such a powerful remedy cannot be equally useful for everyone, therefore there are contraindications:

  • with urolithiasis in order to avoid the movement of stones and exacerbation of the disease;
  • with varicose veins, the presence of blood clots;
  • due to the high content of essential oils, it is not recommended during pregnancy and lactation, with colitis and enterocolitis.

How to eat a stem vegetable

All parts of the plant are equally useful and edible. But since most of the essential compounds, vitamins and trace elements are destroyed during heat treatment, celery is eaten raw, pre-peeled. Young green leaves - as a seasoning for salads, fish and meat dishes.

The root crop is peeled, and the grated juicy white pulp is added to fruit, vegetable and even meat salads.

How to clean petioles

Juicy, crispy, fragrant pulp of petioles is an excellent ingredient for salads, appetizers, sauces. But not many people know that in order to fully enjoy the taste and aroma of green stems, they must be thoroughly cleaned.

The upper layer of the petioles consists of hard long fibers that make it difficult to chew the vegetable.. Therefore, before eating, slicing into salads, etc. you need to cut off the top layer with a regular or economy knife.

If there are no fibers when breaking the stem, then you can start chopping or cutting the vegetable.

Proper cooking methods

Dishes from petioles and celery root may not be so saturated with vitamins and fiber, but they will certainly have spicy taste and aroma. The vegetable is used to make soups, vegetable stew, side dishes, as a filler or additive to sauces. It can be boiled, stewed or fried in sunflower or olive oil.

Without a doubt, celery is exactly the vegetable that should be constantly on our table in any form. Such useful product cannot be excluded from the diet. According to nutritionists, daily use of the product will have a positive effect on the entire body, the functioning of internal organs, the condition of hair, nails and skin.

Many people have not yet learned how to use it in cooking, hence a number of questions arise: how to choose the “right” plant and how to peel celery? The answer to each of them comes with experience, but it is better to stock up on theoretical knowledge in advance.

Celery comes in three varieties.

  1. Sheet. The root crop is undeveloped, the plant spends the main forces on the maturation of green foliage. The leaves contain essential oils, which are very useful for the body. Salads are prepared from them and added to soups.
  2. Petiole. The root crop is also underdeveloped. The plant has juicy thick stems. Their diameter reaches 4 cm. It is the stalks that are used for food: salads, stews, and freshly squeezed juice are made from them.
  3. Root. Under the ground, a rounded root crop is formed, which reaches 20 cm in diameter. The taste of the pulp is bittersweet. The root crop is dried, added to soups or salads.

How to choose celery?

If you have not previously encountered the preparation of this product, you still have a lot to learn about it. Cleaning celery depends on its condition: how young and fresh the plant is. In order not to waste your money, learn a couple of secrets on how to choose the “right” celery.

  • Foliage. Greens should have a rich bright color. Be sure to feel the leaves, they should be elastic, not sluggish. The plant should be scented.
  • stems. They should look full of juice. When you cut or break, you will hear a crunch. If the petiole is covered with scratches, has a weathered appearance, the green color has acquired a brown tint, you have a stale product in front of you.
  • Root crop. The root should be firm and not squeezed when pressed with fingers. The surface should be as smooth as possible. Don't buy root crops covered in "knots". Pay attention to the color of the upper leaves: green indicates the freshness of the plant.

When buying, pay attention to whether the plant has released an "umbrella" with seeds. In this case, you risk buying overgrown celery. It will taste bitter, and the petioles and root crop will be very hard.

Leaf celery does not need to be peeled. The leaves are used in cooking as an addition to fresh vegetable salads, in stews or first courses. Chopped greens are dried, using as a seasoning. In addition, greens are added to pickles. However, in many countries it is believed that only when fresh it retains all the "magic" healing properties. Like parsley or dill, it is enough to separate the twigs from the main stalk and rinse under cold running water.

How to clean stem celery?

When cleaning the stems, the hostesses have many more questions than when processing a leafy plant. Culinary opinions on this matter also differ. Some believe that it is necessary to remove the top layer of the stem, others claim that this procedure is not necessary. It just depends on the freshness and age of the celery.

In addition to the skin, the lower part of the stem (the first 3 cm) is necessarily removed and the upper shoots are cut off, if any.

The young petiole growing inside the bundle is not covered with thick coarse fibers. Its skin is thin and almost invisible. In this case, it is enough to rinse the stems under hot water. If the plant outgrows a little, the petiole is covered with a thick film. It is hard to the touch, so it must be removed with a knife (it is more convenient to use a vegetable peeler).

How to clean the root crop?

This part of the plant causes the most questions among housewives. And it's not strange at all. The fruit has a rough surface and is covered with earth when sold. There is also controversy among culinary specialists about its cleaning. Some argue that it is enough to wash off all the earth - and the fruit is ready for further cutting. This opinion is erroneous, because only a well-washed root crop with a peel removed can be eaten.

Buying a root with a smooth surface, you will not lose a lot of pulp when peeling. "Knots" interfere with quick and economical peeling. First of all, wash off all the dirt under running water, take a sharp knife, vegetable peeler and cutting board.

  1. With a large sharp knife, cut off the upper and lower parts of the fruit.
  2. It is unlikely that you will need the entire root crop to prepare a dish. Cut off the part you need. Place the remaining root crop in the refrigerator or in a dark, cool place.
  3. It is necessary to cut off the skin and damaged areas. It is convenient to do this with a vegetable peeler or a sharp knife. Do not leave spots or dots, the flesh should be white and clean.
  4. Remove the spongy part of the root, as it is tasteless and will not add flavor to the dish. However, if you are cooking celery for the purpose of losing weight, you should leave it, as it is a coarse dietary fiber and is valuable for cleansing the body.
  5. After processing, rinse the root crop again and start cutting. The shape of the pieces depends on the dish you are going to cook.
  6. The cut root crop tends to darken when interacting with oxygen. If you are making a harvest, then the chopped fruit must be poured with water, like a potato.

All skills come only with experience. Knowing how to handle a particular product, you will facilitate the process of cooking. Celery is a storehouse of vitamins and minerals. It is easy to prepare and process. This plant should be a frequent guest in every kitchen.

Root celery: cultivation and use

I grow celery for its tasty and healing roots that keep well in the basement. And the fragrant vitamin leaves of celery root are a by-product for us.

Previously, we grew about 80-90 roots of this most valuable seasoning vegetable every year. But with the advent of new imported varieties of root celery, the number of planted plants was reduced. This is due to the fact that high-yielding imported varieties of celery have a large root weighing up to 800 g (for example, the Prague Giant variety). And before, I grew varieties of celery "Apple" and "Gribovsky", in which the weight of the roots was no more than 200-250g.

Proper sowing of celery seeds and seedling maintenance

Celery seeds must be fresh, as they quickly lose their germination capacity during storage. Already in the second year of storage, their germination drops to catastrophically low values.

I start sowing root celery for seedlings in mid-March. To kill inhibitors that hinder germination, I soak celery seeds in snow or rain water. I regularly change the water to fresh (3 times in three days).
After that, I pour the soaked celery seeds onto moistened paper (filter or toilet paper) placed in a shallow saucer.
Then I put the saucer with the seeds in a plastic bag. It should be in a warm (possibly dark) place; the condition of the seeds should be monitored regularly.

As soon as the swollen celery seeds begin to peck (they will have the beginnings of roots), then it's time to start sowing.

With the help of a toothpick or a sharpened match, I plant the seeds one by one in the prepared soil mixture (I take the sifted sand and humus in equal proportions). I am planting in rows. I maintain a distance between the seeds of about 2x2 cm, which allows the seedlings to actively develop without interfering with each other.
I sprinkle the sown celery seeds with a layer of substrate no more than 0.5 cm.

I put the bowl with crops in the brightest place. I water regularly, not letting the soil dry out.
If possible, then in early April I place celery seedlings in a greenhouse, protecting them from possible frosts.

When 1-2 true leaves appear in celery seedlings, I dive young plants into small pots one at a time, pinching the central root.
In order for rooted celery seedlings to develop well, I spend liquid top dressing (2-3 times).

Planting celery seedlings in open ground

At the end of May or at the beginning of June, after the end of heavy rains and possible dangerous frosts, I transfer celery seedlings from cups to open ground. I plant them in well-cultivated and seasoned soil according to the 20x30 cm scheme. At the same time, I try not to destroy the clod of earth, which by this moment is already completely rooted.

Benefits of Celery Root, Stem and Leaves

I do not bury plants when planting. I water well.
Celery in the process of growth should not experience a lack of water, but excess moisture is undesirable for plants.

Caring for celery during tuber growth

When young plants take root and grow a little, celery will have new leaves. It is time to remove excess roots from grown plants.
At this stage of development, I unwind the root celery, while cutting off all the roots that are located horizontally. I'm going to do this again. It is better to cut off unnecessary celery roots with a knife.
If you leave horizontal roots at the root celery, then the tuber will grow "horned" - then when digging up the celery crop, you will have to cut a lot of roots.

And remember - celery root should never be spudded!
Therefore, when loosening plants in the process of care, I try not to add soil to the roots.

Removing and using celery root leaves

As the celery tubers grow, we use the lower leaves for food; they usually fall to the ground on their own. These leaves can be removed from the plants without affecting future tuber yields.

The strongest increase in the mass of celery tubers begins with a decrease in the length of the day (up to 12.5 hours or less). During this period, I gradually cut off most of the leaves from the root celery. I leave on each plant only those leaves that grow vertically upwards.
Note: if the leaves are not cut off, then the celery will have flat roots!

Celery root leaves are widely used throughout the season - as a seasoning for a variety of soups (we do not put them only in milk soups), when boiling broths, for stewing meat, etc.
Be sure to use celery leaves for pickling cucumbers (at the same time, dill was generally excluded, as it gives a bitter aftertaste). With the addition of celery leaves, pickled cucumbers are especially spicy, with a mild taste.

Digging and storing celery

I dig up root celery in the fall as late as possible so that the plants gain a good mass and an abundance of nutrients over a long period of development.
Frosts at -3 degrees, its tubers can withstand without problems.

Around the middle of October, I dig up celery tubers, clean them from the roots, cut off the leaves with a small part of the fruiting body.
I put celery leaves intended for consumption in the near future in a small amount of water - so they perfectly retain freshness in a cold place for a whole month.
To use fresh celery leaves in winter, freeze them in plastic bags.

I store celery tubers in the basement (where other vegetables are stored), without any powders. When heat comes, I continue to store the remaining roots in the refrigerator until the next harvest; we use them as needed.

The nutritional and medicinal value of celery root is undeniable, especially for men's health. From this useful plant you can cook a huge number of dishes using celery tubers both independently and as a component of a complex dish.
The celery tuber has a sweet taste, it does not have a strong spicy flavor compared to the leaves.

I decided in the article to collect thesis answers to "technical" questions on celery :) So to speak, for the convenience of using the material, so that you do not have to climb through the articles in search of answers to specific questions, for example " how to cook celery».

Celery root can be cooked both in peel and pre-peeled. Can be fried like regular potatoes(By the way, it turns out very well, it's delicious). You can bake the root in the oven or on coals.

How to properly peel celery

The method of cooking celery root in the microwave was also tried - the experience was recognized as positive (details in the section " How long to cook celery»).

The stalk of celery is best consumed raw, but you can also throw it into the soup - it will add piquancy to the soup. For the sake of the experiment, I boiled the stems in water for a test - I didn’t like it :) It’s a matter of taste, of course, but still I don’t recommend it.

In fact, there is a universal answer to the question " how to cook celery"(root): like a potato, one to one.

How to peel celery

If you're wondering how to peel petiole celery, then this is not for me: I cut off the bottom and top of the stem and mine. Everything. Some people still peel the outer skin with a vegetable peeler and scream about the absolute necessity of this act. Probably, cooking in ancient times also had its own god - so let it be their judge, this "someone".

It is more difficult with the root, because its peel is not suitable for food, and the knotted roots do not at all simplify the matter. There are two ways to peel celery. Both involve a preliminary thorough washing of the tuber. The first way: we take a sharp knife and carefully cut off the skin, scraping out everything dark from the recesses and between the roots. Since the roots are usually quite large, for convenience, you can first chop the root into pieces - so that it lies better in your hand. Before using the second method, you will first have to “strangle your toad” :) We chop the root into two parts (so that it doesn’t crawl along the board), take a large knife and cut off everything superfluous with “broad strokes”. Gets not economically, but quickly. Knowing my habit of using the second method, I take celery with a margin :)

How long to cook celery

Celery root should be cut into small pieces and boiled for 30 minutes, there is no wisdom here. The chip is in another. The root has the structure of a sponge and absorbs water, so before making, for example, mashed potatoes, boiled celery should be ... squeezed :) Otherwise, it turns out a liquid slurry, not mashed potatoes.

Above, the method of cooking celery in the microwave was engaged - let's reveal the essence.

If you stuff small celery roots into bags and put them in the microwave for 800 for 15-20 minutes, they will cook, and you won’t need to squeeze them out. We did it without cleaning, but I think you can remove the peel. Thinness: before turning on the microwave, pierce the bags in several places with a toothpick - to release air. Why do you need "boom" in the oven?

What to do with celery

Since the entire site is essentially devoted to the issue of " What to do with celery”, In this article I’ll approach it in a military way :) From the root - mashed potatoes, from the stems - lettuce. If you like it, you can move on to other recipes. If not, even better :)

Celery is a spicy vegetable brought to Russia from the Mediterranean countries. Due to the large number of nutrients and vital vitamins, celery is a leader among other vegetable crops. Essential oils, also included in the composition, give the salad a unique aroma and a special rich taste. Every part of the plant, from the stem to the leaves, can be eaten. Raw celery is just as tasty and healthy as processed celery. Below we will consider possible types this vegetable, and methods of cleaning it.

What is celery?

In the vegetable section, you will most likely come across four main types of celery. Plants can be distinguished visually - leafy, petiole or root.

Fragrant celery is a two-year herbaceous vegetable crop, appearance which may resemble massive parsley. In the first years, powerful bunches of bright greenish leaves with a characteristic glossy surface, a fleshy stem and a strong white root system are formed in the plant. A year later, as a rule, in the early spring, greenish leaves form on the plant, and in July the vegetable begins to bloom actively. In August, the seed ripens and after a few days the plant begins to dry out.

The most fragrant type of celery is a leafy plant. It is also an indispensable source of beneficial trace elements. It is most often consumed raw or as a component in a salad. It is used by gourmets to season soup or other dishes. The vegetable got its name because of the unsuitability of eating its petioles and roots. The thin petiole and harsh roots have fewer vitamins than the leaves and have an unpleasant taste.

Petiole celery is a vegetable that is eaten exclusively with petioles and leaves. One petiole can reach four to five centimeters. It is rich in essential oils, various vitamins and minerals useful for the human body. Petiole celery is perfect for preparing first and second courses, a dietary low-calorie salad, and is an excellent addition to pickles and canned foods. Gives the dish a spicy, bright aroma and unique taste.

As you might guess from the name, only the root crop is eaten from the root type of celery. Such celery looks like a large beige beet. On average, the weight of a vegetable can reach nine hundred grams. The fruit of this species is a real storehouse of trace elements and minerals. It is equally delicious both raw and when added to a salad or a hot dish.

  • the plant is contraindicated in people with blood clots or dilated veins;
  • since the vegetable crop contains a huge amount of essential oils, its use is undesirable for women who are preparing to become a mother;

Cleaning and processing

Leaf celery does not require any pre-treatment. It is enough just to separate the leaves from the stalk and rinse in cool water. Let the plant dry and you can start cooking. The celery stalk must be thoroughly cleaned. First of all, you will need to cut at least three centimeters from the bottom of the plant, and be sure to remove the top shoots.

The age of celery plays a determining factor in the method of processing the plant. A young plant, which is characterized by a thin skin without any hint of dents and streaks of a brownish tint, does not need to be cleaned. The vegetable can be rinsed in hot water and dried by laying on a terry towel.

If the plant is mature and covered with a thick film, it is advisable to get rid of it. For cleaning, use a vegetable cutter or kitchen knife.

Most of the difficulties, as a rule, arise with the cleaning of celery root. First of all, the root crop must be cleaned of the soil remaining on the surface. In this regard, it is desirable, when purchasing, to give preference to a vegetable with a smooth surface, and not covered with knots. Its cleaning and processing will be much easier, and it will not take much effort to remove the skin. Let us dwell in more detail on the celery cleaning algorithm.

First you need a strong kitchen knife, with which the upper and lower parts of the skin will be removed from the root crop.

Cut off the required amount from the fruit, and put the rest in the refrigerator. In this case, there is no need to use a bag or cling film, since their presence does not increase the shelf life of the vegetable.

The main rule for processing root celery is the absence of any spoiled areas on the surface of the vegetable. The flesh of the plant must be absolutely clean and uniform.

Pay attention to the structure of the vegetable. It consists of a spongy and main homogeneous lobe. The spongy area is characterized by a huge amount of plant fiber. Its use helps to cleanse the body of toxins, however, it does not have any taste. In this regard, the spongy area is used to add thickness to the soup or make a tincture to detoxify the body.

The homogeneous part of the root crop has a pronounced aroma, thanks to which it is so loved by gourmets. And the presence of a large number of vitamins and minerals makes the dish not only tasty, but also healthy. There is an opinion that cleaning the celery root is optional, as you can lose the lion's share beneficial vitamins located in the skin. However, this is a fundamentally false statement. The fact is that the skin of the root crop contains nitrates, and therefore its processing is extremely mandatory.

Thoroughly cleaned and washed in cold water the root crop is chopped according to the recipe of the prepared dish. Culinary experts advise cutting celery as small as possible - thus, the juice released from the pulp will soak all the ingredients of the dish.

If you do not plan to use the peeled vegetable immediately, then you need to soak it in cold water. Otherwise, the celery will darken, as happens with potatoes.

How to choose?

If you are choosing this wonderful vegetable crop for the first time, then you need to properly familiarize yourself with some recommendations that will help you buy a high-quality and ripe vegetable. Handling and cleaning celery will depend on its condition and age. About what celery to buy, we will consider further.

High-quality leaf celery is characterized by a juicy greenish tint. Feel free to touch the leaves, their structure should be elastic. The plant, as a rule, has a pronounced aroma. High-quality and mature stalk celery is characterized by a bright green color and a smooth surface. When purchasing a root crop, pay attention to its appearance. It is desirable that the surface of the fruit be smooth, without any nodules. So its further processing will be much faster and easier. Green upper leaves indicate the freshness of the vegetable. A high-quality root crop is hard enough and does not squeeze through when pressed on it.
