Total cooking time: 60 minutes
Cooking time: 10 minutes
Yield: 6 servings

Ingredients

  • wheat flour - 250 g
  • baking powder - 2 tsp with a slide
  • 9% cottage cheese - 200 g
  • butter - 130 g
  • sugar - 150 g
  • vanillin - on the tip of a knife
  • chicken eggs - 3 pcs.
  • salt - 0.5 hours. l.
  • lemon juice - 1 tbsp. l.
  • grated lemon zest - 1-2 tsp
  • frozen berries - 3 handfuls
  • corn starch - 1 tbsp. l.
  • sugar - 1 tbsp. l. for sprinkling berries

Cooking

    I immediately turned on the oven to 180 degrees. For the dough, soft butter (it should melt to room temperature, you need to remove it from the refrigerator in advance) was beaten with sugar and a pinch of vanilla.

    Then she introduced the eggs one by one, continuing to beat.

    In a separate bowl, combine the sifted flour, baking powder and salt. Gradually introduce the flour mixture into the dough, stirring with a mixer at low speed. The consistency should be thick, like a cake.

    Pour the batter into an oiled mold and smooth it out with a spatula. Do not forget to pre-grease the form with butter. I used a detachable one, a diameter of 23-25 cm is suitable. The dough should be no more than 1/2 of the volume of the form (leave room for berries and rise).

    She laid out the berries sprinkled with starch, slightly drowned them in the dough with a spoon. Sprinkled with sugar on top - about 1 tablespoon left, the sugar will sweeten, and the starch will thicken the filling. I used frozen raspberries and currants, you can use any of your choice (no need to defrost).

    Immediately sent the form to the oven, heated to 180 degrees. Bake a cake with frozen berries for 40-50 minutes (the larger the diameter of the mold, the faster it will bake).

    We check the readiness with a wooden skewer, if it comes out dry, without pieces of sticky dough, then the dessert is baked. It is best to set the form at an average level, and place a baking sheet with water under the bottom. For the first half hour, the oven should not be opened so that the cake does not donate.

Sprinkle the finished berry pie generously with powdered sugar and serve. It tastes best when warm, so it’s best to brew tea right away. As the dessert cools, it will become denser due to cottage cheese, currant sourness is more pronounced, so it makes sense to sprinkle with powder again if you like it cold. Happy tea drinking!

The butter should be softened, at room temperature.
Sift flour with baking powder.
The total weight of the eggs is about 180-190 grams.
It is better to take fine sugar or replace it with powdered sugar.
Vanilla sugar can be replaced with a couple of drops of essence.

20 grams of milk is 2 full tablespoons.
Just put all these ingredients in a bowl and mix with a mixer until smooth, just a minute.

I have a mix of red and black currants. I made it with just blackcurrant and blueberries. I would say that the pie loves sour berries. Therefore, if blueberries, then it is better to mix it with some currant, for sourness.

I don't defrost berries. I separate about half, sprinkle with flour (roll a little) and mix it into the dough. The rest will just need to be put on top of the pie.

I have an 11/30 cupcake pan wrapped in greaseproof baking paper.
I always turn on the oven in advance, 180 ".

Gently mix half of the berries (those that are rolled in flour) into the dough and put everything into a mold.
Pour the remaining half of the berries on top and put everything in the oven.

Bake for approximately 40 minutes. After that, I turn off the oven and let the cake stand there for another five to ten minutes. After I select and get from the form.

While the cake is baking, we will make the frosting. Work for half a minute. Place three large tablespoons of powdered sugar in a mug and add 1 teaspoon each of lemon juice and water. Get a thick white porridge.

Pour frosting over cooled cake and let cool completely.
If you want a richer and more aromatic taste of the cake, you can also add orange zest to the dough.
And in the glaze instead of lemon juice, you can add orange.
Happy tea!

Even professionals in the home kitchen sometimes do not have enough time to prepare some grandiose dessert, so simple recipes like frozen berry pies are a real find. We heat the oven to 180 ° C and bake our cake for about 30-40 minutes. You can check the readiness of baking in the old fashioned way with a match or a toothpick, if it pierces the cake and remains dry at the exit, then the cake is ready.

Pie with frozen strawberries from yeast dough

As a result, the dough should come out quite elastic, it should not stick to your hands. Add softened butter and mix again. Closed grated pie with frozen currants

Each housewife will get a delicious and original dessert for tea - a closed grated pie with frozen currants. It takes very little time to prepare it, as well as ingredients. There is nothing unusual in the recipe, the main thing is that there are frozen currant berries. For cooking, we take the following products:

  • Flour - 45 g;
  • Salt - 5 g;
  • 2 eggs;
  • Butter - 200 g (butter);
  • 200 g of sugar;
  • Currant berries (black) - 500 g;
  • 1 tsp baking powder;
  • Starch - 3 tbsp. l.

Sift wheat flour through a sieve and mix baking powder with it, after which we salt the mass. Butter, already softened, must still be cut into pieces. If the oil is just taken out of the refrigerator and there is no time to wait, then you can still grate it hard. Eggs should be mixed with sugar and rubbed well, but do not beat.

Then we mix the resulting masses together, kneading an elastic dough, from which two balls must be formed. We pack each ball in cling film or put it in a regular plastic bag and send it to the freezer for 60 minutes. You can prepare the dough in this way for the future, it can be stored in the freezer for a long time.

We heat the oven to 180 ° C, and at this time we are preparing the pie dish. We put baking paper in it and grease it with oil. Next, one ball of frozen dough is rubbed over the form on a grater, distributing the chips over the entire bottom. Slightly thawed berries are washed lightly in water, dried on a kitchen towel and sprinkled with sugar and starch. Then we spread the currants in a mold on top of a layer of dough chips.

Now it's the turn of the second ball of dough, we also rub it over the berries and carefully distribute it evenly over the entire form with a spatula. It takes about 50 minutes to bake a cake with frozen currants in a preheated oven. See when a beautiful crust with a ruddy top forms. Shortcrust pastry pie with frozen berries

We offer to cook a simple and quick shortbread berry pie. It will need the following products:

  • Frozen berries - 0.5 kg;
  • 1 st. sugar or powder (it dissolves faster);
  • 200 g margarine (butter is also possible);
  • 2 eggs (1 protein is not needed);
  • 2 tbsp. wheat flour;
  • Vanilla sugar - 1.5 tsp.

How to make shortcrust pie with frozen berries

You can take any berry for the pie that is at hand, or rather in the freezer: raspberries, strawberries, blueberries, currants, and so on. The main thing for more sour berries is to carefully measure the sugar so that the cake does not come out sour as well. So, we defrost the berries and wash them, then throwing them into a colander.

Pour 0.5 cups of sugar into the dried berry and mix the sweet berry mass well. Now you can knead the dough. To do this, break 1 whole egg and 1 yolk into a separate container. Pour the rest of the usual and vanilla sugar to them and mix everything thoroughly. Then we put margarine in the egg sweet mass and grind everything. It is convenient to do this with a fork.

The next ingredient is flour, which is sifted to eggs with sugar and margarine, gradually rubbing with a fork. After that, a dough that is tight in consistency is already kneaded by hand, which is removed in the refrigerator for half an hour. At this time, you can prepare a cake pan by lubricating it with oil (silicone can not be lubricated, but only sprinkled with water).

After 20-30 minutes, take out the dough and divide it into two pieces - a bigger one and a smaller one. 1/4 part will go to the decoration - the lattice, and the rest to the cake itself. With your fingers, distributing most of the dough in shape, we make the sides of the cake, which will help the juice from the berries not escape from the mold. We put our berries in an impromptu flour bowl, after draining the juice from them. Now you need to make a lattice from the remaining piece of dough.

We evenly spread the berries in the form and proceed to the manufacture of the lattice. To do this, you need to roll up several long sausages from the rest of the dough and lay them on top of the berries, fixing them on the sides so that they create a grid on top of the pie. We send the almost finished cake to the oven preheated to 180 ° C for half an hour. We look, when the dough is reddened, you can get our dessert.

We put the layer in a mold, previously lubricated with oil, forming even sides and cutting off excess pieces of dough. They can go for a braided pie decoration. Now we return to our berries, they have already cooled down and you can add crackers, previously crushed into crumbs. They will be an excellent substitute for starch.

Pour the resulting filling from berries and crackers into the mold. From the pieces of the remaining dough we create a lattice with which we cover the cake. The form can be sent to the oven. The dessert is baked for about 30 minutes until browned. At the end, the cake can be smeared with sour cream and baked a little more, then it will be softer.

So that the finished cake does not sweat, after cooking it must be immediately removed and laid out on a wooden board. This recipe for a delicious and simple frozen cranberry pie is perfect for tea or milk.

Puff pastry pie with various frozen berries

Puff pastry allows you to get a cake at the same time airy, crispy and incredibly tender. It is suitable for both meat and sweet recipes. And most importantly, with the dough prepared for future use, you can quickly and easily cook delicious pies at any time.

Ingredients for Puff Pastry Pie with Frozen Berries:

  • Dough - 0.5 kg;
  • Berries - 0.5 kg;
  • Starch - 2 tsp;
  • 2 tbsp. l. flour;
  • 200 g of granulated sugar.

Absolutely any frozen berries are suitable for this recipe. Lightly flour the prepared form for the future pie and turn on the oven at 200 ° C to warm up. It is more convenient to do this with a manual small kitchen sieve. Now let's get down to making the filling.

Frozen berries are defrosted, washed and left in a colander to drain unnecessary juice and water. If the berries were well washed and dried before freezing, then you can simply defrost and drain the released juice.

Then sprinkle the kitchen board with flour and put two pieces of puff pastry on it. It must stand at room temperature for 10 minutes in order to acquire greater plasticity. After that, lightly dusting the dough with flour, quickly roll out layers of 0.5 cm with a rolling pin. Speed is important, since the dough should not become too soft.

One layer is lined with a form with the formation of the sides of the pie. Half of the potato starch is sprinkled on top of the dough so that in the future the dough does not become damp from the juice flowing from the filling. Now put the berries in the form and sprinkle with the remaining starch and sugar, distribute everything evenly.

The second piece of dough goes to create the lattice. To do this, it is cut into long strips and placed on top of the berries, forming a grid on the pie. You can use a special pastry knife so that the edges of the strips come out curly, and the mesh is “weaved”.

We send the pie to the already preheated oven for 6 minutes, after which the dough will rise a little. Now you can reduce the temperature to 185 ° C and bake the dessert for another 20 minutes. The finished puff pastry pie with frozen berries should become golden in color, and the aroma of the baked filling will be proof of the readiness of the treat.
