Fried rice is mine favorite dish in Thailand. I can order it for several days in a row and it does not bother me. Thai rice can be either shrimp or chicken, or a vegetarian option without any meat. Since many people come to Thailand for seafood, we also chose cooking with shrimp.

Let's start with the basics.
Ingredients:
1. Boiled rice (cooked in advance) - 1 cup
2. Shrimps (or other meat) - 200 grams
3. Egg - 1 piece
4. Tomato - half a piece
5. Onion - half an onion
6. Carrots - half a piece
7. Young corn - 1 piece
8. Chinese cabbage
9. Garlic - 1 head
10. Sunflower oil- 3 tbsp (generally used in Thailand soybean oil, they usually fry on it, but in the absence of it in Russia, it is quite possible to use sunflower)
11. Soy sauce - 2 tbsp
12. Fish sauce - 1 tbsp
13. Sugar - 1 tsp

This is how we prepare all our products.


Separately egg, shrimp and rice.
Tomatoes and onions are cut into 4 parts in equal parts of a square shape.
We press the garlic with the side of the knife and crush, then finely chop it. Keep it separate from other vegetables.
Carrot cut into cubes. Corn slices.
Chinese cabbage as usual cut green onion and other greens.

Now a few words about sauces. Fish sauce and sugar are added to absolutely all dishes, be it soup or a second course or dessert. Soy sauce is always added to the second. Well, they're fried in oil.

Now, let's get down to cooking. The whole process takes less than 10 minutes. The main thing in Thai cuisine is speed, otherwise everything will burn and ruin the whole result at once. That is why the cooked chopped ingredients are all laid out right next to each other. Moreover, if something should be thrown into the pan separately from the other, then they must also be prepared on a plate separately. All this will need to be quickly grabbed and thrown into boiling oil. Thai dishes are cooked on a big fire. Therefore, be careful not to burn anything, it happens instantly, stir constantly, and if necessary, add a little water, which should also be in a small jug at hand.

Cooking Thai Fried Rice:
1. Heat the pan, pour oil on it.
2. After the oil has warmed up a little, immediately pour the garlic into it. Don't wait for the oil to get too hot, the garlic will immediately burn into black embers. And it should remain only golden.
3. As soon as the smell of garlic has gone, and this happens somewhere in 30-40 seconds, so throw the shrimp into the pan. At the same time, with a spatula, constantly mix everything well.
4. Continue stirring actively for another minute, add the egg. Stir well to break up the egg into small pieces.
5. We just saw that the egg is ready, and this happens in 1-1.5 minutes, so you immediately throw vegetables - corn, onions, tomatoes, Chinese cabbage. Continue stirring vigorously so that nothing burns.
6. Immediately add soy sauce, fish sauce and sugar. Mix everything thoroughly.
7. Do not let the vegetables burn, add rice. Press all the lumps with a spatula, not a single lump should remain, the rice should be well mixed with vegetables.

As a result, after about 7-10 minutes, we have ready-made rice.

We put it in a bowl, then abruptly turn it over onto a plate and such a slide remains.


Proper Thai rice is always served in such a slide, on a plate, as a rule, you will also see sliced fresh cabbage, tomatoes and cucumbers.

Ingredients:

    It is very important not to overcook the rice, otherwise the food will turn into an unappetizing porridge. To prepare Thai rice, the product must be brought to readiness "al dente", that is, ready, but not boiled, retaining its shape.

With pineapple and pork

Exotic lovers will definitely be interested in the rice recipe, the rich taste of which is simply impossible to forget. Juicy pineapple pairs well with lean pork, hearty rice, colorful vegetables, and fragrant nuts.

Ingredients:

  • 1 pineapple;
  • 250 g lean pork;
  • 2 tbsp. boiled rice;
  • 1 carrot;
  • 1/2 st. frozen green peas;
  • 3 cloves of garlic;
  • 2 eggs;
  • 1/4 st. roasted cashew nuts;
  • 1/4 tsp ground turmeric;
  • 1/4 tsp ground coriander;
  • 1/4 tsp chili flakes;
  • 1 st. l. coconut milk;
  • 1 st. l. soy sauce;
  • 6-7 green onion feathers;
  • vegetable oil;
  • salt and black ground pepper- taste.

Cooking:

  1. Preheat the oven to 175 degrees.
  2. Cut the pineapple in half along with the green part. Make cuts in the flesh, then carefully scoop it out with a metal spoon and knife. Dry the inside of the blanks with paper towels, and wrap the leaves with foil for baking. Place tropical fruit halves in hot oven and bake for 5 minutes.

  3. Cut the pineapple pulp into small triangles, cut the pork into cubes, chop the garlic and half the green onion.
  4. Cut the peeled carrots into small cubes, place in a small pot of boiling water and blanch (cook) for 6-7 minutes.
  5. Pour boiling water over green peas and leave for 5 minutes, then drain in a colander.
  6. Lightly beat the eggs with a whisk or fork.
  7. In a large skillet, heat 1 tbsp. l. vegetable oil and fry the pork for 3 minutes. Transfer the meat to a plate.
  8. Pour another large spoonful of vegetable oil into the pan, put chopped garlic and green onions, cook for 1 minute. Remember to stir all the food during frying so that they do not burn.
  9. Add half of the beaten eggs and fry them with garlic and onion without stirring for 30 seconds. After half a minute, mix the ingredients, put boiled rice, fried meat, blanched carrots and green peas, add the remaining eggs.

  10. Pour spices into the dish, add salt and black pepper to taste, mix and, stirring often, continue to fry over high heat for 5-7 minutes.

    When adding salt, be careful with the amount of product, as the rice will be supplemented with salty soy sauce later.

  11. Remove the skillet from the stove. Add cashews to your meal coconut milk and soy sauce, stir again.
  12. Arrange the rice in the pineapple pieces, place in the oven and cook for 10 minutes.

With shrimps

A simple and understandable recipe that any chef can handle, regardless of their experience.

Ingredients:

  • 100 g of rice;
  • 100–150 g cooked shrimp;
  • 1-1/2 bell peppers;
  • 3–4 tbsp. l. soy sauce;
  • 1 cm ginger root;
  • 1 clove of garlic;
  • 2-3 green onions;
  • 1 egg;
  • 2–3 tbsp. l. vegetable oil;
  • 2-3 sprigs of fresh parsley;
  • salt and hot red pepper (ground) to taste.

Cooking:

  1. Rinse rice in several waters and boil.

  • Onion: one medium, chopped
  • Garlic: 7 cloves, finely chopped
  • Cherry tomatoes or sliced ​​tomatoes: about 200 g

  5. Pour the egg and vegetable mixture over the rice. Season the combination of ingredients with soy sauce, remaining spices.

To cool the rice as soon as possible, spread it out on a parchment-lined baking sheet and let it cool in the refrigerator. Substitute soy tofu for eggs if desired. Roast the Cubes useful product until crispy.

  5. Then pour in the coconut milk, season with yellow curry powder, turmeric, lime juice and salt; stir well to combine all ingredients.
  6. Bring to a boil, then add rice, chicken. Reduce the heat to low, cover the pan with a lid, simmer for 18-24 minutes.

After 20 minutes, most of the liquid should have been absorbed, and Thai rice with vegetables should be fully cooked. Advice! Don't use brown rice. Cooking this cereal takes much longer.

  • 210 g beef tenderloin;
  • 100 g mango;
  • 30 ml peanut butter;
  • 2 chicken eggs;
  • 1 bell pepper;
  • basil, ginger, garlic.

First, fry the beaten eggs in a frying pan. Cut bell pepper and mango into cubes, cook with spices and peanut butter. Add finely chopped beef, fry until tender, set aside. After heating the rice, combine with ready-made products.

There are so many ways to serve Thai rice with vegetables! If you don't have leftover cooked rice on hand, be sure to chill the side dish before adding it to the wok - if the grains are too warm, they create too much steam and stick to the sides of the pan.

Today I want to share a recipe for one of my favorite Thai dishes - this is fried rice or khao pad (the name is in Thai). The literal translation of the name of the dish sounds like this: rice ( cao) fried ( pad). Usually Thais cook fried rice with meat (chicken, pork, sausages) or seafood, there are also vegetarian options.

Our today's recipe will be just vegetarian. Juicy, crunchy vegetables, tender jasmine rice, sauces and seasonings - all this is harmoniously combined in kao pada. There was already one on my blog. The dish is prepared in a matter of minutes due to the fact that we will have pre-boiled rice.

Ready-made fried rice with vegetables is a bit reminiscent, but the abundance of vegetables and unusual seasonings make khao pad a completely unique dish. By the way, if you want delicious pilaf, yes, such that you lick your fingers, try the recipe for pilaf in pots, it is very easy to cook!

Vegetarian Fried Rice Recipe

For 1 serving of kao pad you need 50 grams of rice. We cook it in a rice cooker or slow cooker, so it will certainly turn out crumbly. You can boil rice traditional way on the stove. Be sure to add an egg and fresh vegetables to fried rice. For 1 serving of the dish - 1 egg. Vegetables can be any, be sure to put onions, garlic, chili peppers, tomatoes, other vegetables to taste.

Fried Rice Ingredients - Eggs, Tofu and Vegetables

For 2 servings of ready-made kao pad you need to take:

  • 100 g of rice (it is better to take the jasmine variety);
  • 2 eggs;
  • vegetable oil for frying ~ 2 tablespoons;
  • 1-2 small tomatoes;
  • 1/3 onion;
  • 2 cloves of garlic;
  • 1 chili pepper;
  • 1 handful chopped fresh vegetables (I have broccoli, carrots, pumpkin)
  • 50 g tofu;
  • fish sauce 2-3 tablespoons;
  • crushed peanuts 2 tsp;
  • lime juice 2 tablespoons;
  • coconut sugar 1 tsp;
  • for serving green onions or fresh cilantro.

In Thai cuisine, the combination of several flavors in one dish is key. Here we combine salty taste (fish sauce) with spicy (chili), sour (lime juice) and sweet (coconut sugar).

So, boil rice in any convenient way. Heat up vegetable oil in a frying pan. For cooking Asian dishes, it is better to use a wok and a gas stove.

Crush the garlic with the edge of a knife and fry together with the onion cut into half rings for 1 minute, add the chili (optional) and pieces of vegetables. raw eggs Pour into a mug and stir lightly with a fork. Pour the egg mixture into the pan and fry, stirring with vegetables. Add fish sauce and coconut sugar.

Add diced tofu and boiled rice. Fry over high heat for 3 minutes, stirring constantly and without closing the lid. The total cooking time of the dish is 7-8 minutes. Vegetables should remain crispy.
