The recipe for homemade chokeberry wine is my signature recipe. For several years in a row, every autumn I have been using it to make wine. Wine from chokeberry is stored quite well, it has an excellent taste, a beautiful dark ruby ​​color. Probably, this wine can be called the most delicious of all that I make.

First, we prepare the wine sourdough. Usually I take raspberries for wine sourdough, but if the season has passed and there are almost no raspberries left in the garden, it doesn’t matter. In spite of everything, it is necessary to collect and put into action all the remnants of raspberries and strawberries. And as the main source of wine yeast at this time, I use rose hips. So, we collect berries (about 2 cups) and unwashed! put in the bank. If the berries are washed, then all the natural yeast that is on the surface of the berries will disappear.

We fall asleep with 2 tablespoons of granulated sugar, pour 0.5 l cold water, tie the neck with 4-layer gauze and leave for 3 days. Periodically, the mass must be stirred. After 3 days, the wine starter will begin to ferment actively and can be used to make wine.

3 kg of chokeberry (I don’t wash it either) grind into food processor(can be crushed with a crush), pour the mixture into a bucket, add the wine sourdough.

Now you need to add sugar and water.

Water should be taken 3 liters. I always filter the water, let it settle. If possible, it is better to take well water.

We measure out 2 kg of sugar, cook sugar syrup with a small amount of water from an already measured measure. Pour into a bucket with chokeberry only cooled down, so as not to damage the wine yeast! Thus, we have prepared wine must.

We tie the bucket with 4-layer gauze and leave it for 8 days for active fermentation. During this time, you can stir the wort 2-3 times a day, because. the berries float to the surface and form a crust that prevents the access of oxygen.

We put in a cool (20 degrees) shaded place. I leave in the apartment under the table. After 2 days, slow (quiet) fermentation will begin. Air bubbles will start to come out of the tube. Periodically, the bottle with the wort must be gently shaken.

At home, you can get juice from aronia chokeberry using a juicer or juicer. In addition, you will need: a sieve, preferably metal, a large enameled bowl, a saucepan, also enameled and large.

Juice preparation is carried out as follows.

With this technology, many beneficial features chokeberry fruits are stored for a long time. Just store juice jars in a dark, cool place. If after some time the lid on the jar is swollen or clots of a different color appear on the surface of the juice, then such juice will have to be thrown away without hesitation. This means that the pasteurization took place in violation of the rules.

If you have a juicer, the process of harvesting juice is greatly simplified. Place the peeled berries on top of the juicer. Place the unit itself in a container for collecting juice.

This whole structure must be put on fire. When the first signs of condensation appear, heat the juicer very carefully so as not to destroy the beneficial properties of the berries. When the juice appears, sugar can be added to it in the proportions indicated above.

The duration of the juice cooker on fire is measured approximately 1 hour. After that, you need to open the tap, ensuring that the juice drains into the bowl. The pasteurization procedure described above is no longer necessary. Just pour the juice into jars, and then seal them tightly. In this case, you can skip the wrapping procedure in a blanket. It is enough to put the jars on the lids, wait for the juice to cool completely, and then transfer the vessels to the place of permanent storage.
