First of all, we will prepare the dough, for this you need to mix the indicated amount of water and honey, heat them until a solution of a homogeneous consistency is obtained, then add flour, soda, eggs, butter, almonds and spices. Mixing well and crushing all the lumps, you will achieve a sufficient density of the dough, after which you need to put it on the surface of the desktop, after sprinkling it with flour.

Next, roll out the mass of dough into a sheet with a thickness of one to one and a half centimeters and cut out the figures that you like. The contents of the pan at this stage should be well melted and warmed up, it is important not to bring it to a boil.

Dry the surface of the table well, pour flour on it, add baking powder to it and mix. How to make gingerbread for the Christmas tree:

Step 1. Making dough for gingerbread.

Grind the butter ( beat) with sugar, while whisking, add egg and honey.

Knead the dough well and put it in the refrigerator for an hour 1,5.

Step 2. Cut out the gingerbreadand bake them

Cooking process

For high-quality gingerbread, cooking takes very little time. The only thing is that you have to tinker with painting in order to get really beautiful holiday products. Let's start by kneading the dough:

  1. Pour liquid honey into a large bowl, where further kneading will take place. It is also permissible to use frozen honey, only it must first be melted in a water bath or in microwave oven and then cool to room temperature.
  2. Also melt the butter and cool to room temperature, mix it with sugar while it is hot, until all the crystals have dissolved. Combine honey and butter with sugar using a whisk.
  3. Break the eggs into a separate bowl, stir with a mixer until smooth. Lush proteins in this recipe are not required, but you need to connect the eggs. Pour the beaten eggs into the honey mixture.
  4. Mix well, add vanilla sugar and spices to this mixture. Usually dry ground spices are used in recipes, but if you use fresh root ginger, it must be grated on a fine grater or crushed in a mortar.

  1. Enter cocoa. If the cocoa is a little lumpy, add one tablespoon of powdered sugar to it and stir, and only then add to the honey mixture.
  2. Add salt and soda. You can use baking powder instead of baking soda. In this case, you will need one bag, designed for 1 kilogram of flour.
  3. Be sure to sift the flour, then pour it in portions into the honey mixture and knead each time with a submersible mixer.

  1. Roll out the dough into a layer about 4 millimeters thick, covering it with parchment. Then turn the sheet upside down with the parchment.
  2. Prepare stencils in advance, according to which you will cut the gingerbread cookies. In addition to paper stencils, these can be special cuttings or molds made of tin or silicone. If you use paper blanks, it is best to make them from parchment so that they do not stick to the dough.
  3. Now attach the stencils to the dough so that they do not overlap each other. Cut out the outlines with a very thin sharp knife. You can use various improvised means. For example, cocktail tubes are quite suitable for creating small holes.
  4. Now we cover the baking sheet with parchment, grease it with a small amount of melted butter. Carefully, using a wide spatula, transfer all the blanks to the parchment. You can not leave gaps between them, since the gingerbread dough does not increase much in volume.
  5. Preheat the oven at 180 degrees, then place a baking sheet with gingerbread in it, bake for about 5 minutes, depending on the thickness of the product. Ready gingerbread will darken, at first it will seem very dry to you, but when they cool, the dough will become softer and juicier.

Put all the gingerbread cookies on a dish in 1 layer and cool to room temperature. Before decorating such products, the dough must be completely cool, otherwise the glaze will not stick to the surface.

For the decoration of New Year's gingerbread, a special icing is required. We offer the most simple and affordable recipe glaze for painting:

  1. Separate one chilled egg white and pour it into a clean bowl without any traces of fat. In this recipe, you do not need to beat the protein until fluffy foam with a mixer, just lightly stir it with a fork or whisk.
  2. Then carefully add 200 grams of finely ground powdered sugar to the protein through a sieve, remembering to constantly stir the mass. Mix everything until a homogeneous consistency. The mass should resemble cream for a cake.
  3. Now squeeze one tablespoon of juice from the lemon, be sure to strain it so that no seeds or pulp get into it. Pour the lemon juice into the glaze and knead for about 3 minutes with a silicone or wooden spatula.
  4. To get colored glaze, you need liquid dyes. It is best to use gel ones, they are thicker, better combined with icing and creams. Add dyes very carefully so that the color is natural.

Now let's start decorating:

  1. The most difficult thing is to make a voluminous gingerbread Christmas tree. To do this, while the dough is still hot, make an incision from top to bottom about 2/3 of the length of one piece. After that, insert a second flat workpiece into the groove so that both of them are at right angles to each other.
  2. To cover the Christmas tree, you will need green and brown icing. Using a pastry bag with a narrow nozzle, apply brown icing to the trunk, paint the branches of the Christmas tree with green icing.
