How to dry strawberries in the oven. Dried strawberries are a healthy treat that you can easily prepare at home. Methods for drying berries

Dried strawberries are a source of vitamins all year round, which can be stored very compactly for a long time at your home.

This vitamin supplement will improve the taste of tea - put dried berries to tea leaves and enjoy excellent taste. And such strawberries can also be used as a non-caloric sweetness, because it retains not only useful substances, but also a pleasant sweetish taste, complemented by a characteristic strawberry aroma.

Hard, not overripe berries are suitable for drying. More juicy strawberries will take longer to dry, so it is better to choose sweet varieties with medium-sized berries.

There are several ways to dry strawberries at home. You can use special equipment or dry it in the sun. Choose the method that suits you and enjoy the fragrant berry all year round!

Air drying strawberries

This is the easiest way to get dried strawberries at home, but also the longest. Despite the fact that you will not need special devices, get ready for the fact that you will have to monitor the berry for 4 days. By the way, you can arrange strawberry sepals on the next pallet, they are also great for tea.

Ingredients:

  • Strawberry.

Cooking:

  1. Rinse the berries, sort. Dry thoroughly.
  2. Cut into thin slices.
  3. Lay a layer of newspaper on a balcony in a sunny location.
  4. Spread parchment on the newspapers and lay out the berries. Place them so that they do not touch, otherwise the strawberries may turn moldy.
  5. The paper will absorb the berry juice into itself, so it needs to be changed periodically, and the berries themselves must be turned over.
  6. There is another way - to string plates of berries on threads and also hang them in the sun.

Strawberries in an electric dryer

A special dryer will save you the hassle - you only need to put the berries on pallets. Drying time depends on the number of loaded berries.

Ingredients:

  • Strawberry.

Cooking:

  1. Rinse the berries, dry thoroughly.
  2. Cut into thin slices.
  3. Arrange on pallets in a loose layer.
  4. Set the temperature within 60°C.
  5. During the drying process, periodically swap trays.

Dried strawberries in the oven

Using the oven, the berries can be dried faster than in the air. Be patient and follow the directions, and the result will be a fragrant sweet berry.

Ingredients:

  • Strawberry.

Cooking:

  1. Rinse and dry the berries.
  2. Spread strawberries on parchment. The berries should not be pressed tightly or lie on top of each other.
  3. Preheat the oven to 60°C.
  4. Send the strawberries to the oven, leave the door ajar.
  5. Remove the berries after 1 hour and 30 minutes. Let them cool completely. Flip.
  6. Send it back to the oven.
  7. Repeat the technology several times until the berries are completely dry. The whole process usually takes about 10 hours.

Dried strawberries in the microwave

This is the fastest way to cook dried berries. There will be less vitamins in the berry after such processing, but you can get a sweet addition to tea in a few minutes. If saving time plays a major role in cooking, then feel free to use this recipe.

Ingredients:

  • Strawberry.

Cooking:

  1. Rinse the berries, dry thoroughly. Cut into thin slices.
  2. Line the plate with paper towels. Spread the berries on it - the layer should not be dense, and the strawberries should not touch.
  3. Cover the top of the berries with a piece of parchment.
  4. Send for 3 minutes in the microwave (at a power of 200 watts).
  5. Remove the berries, turn over, cover again. Send another 3 minutes.

There are several ways to dry strawberries. Choose the most suitable for you, based on the technical equipment of your kitchen and your preferences.

The berries must be carefully sorted out (remove rumpled, dried, overripe or, on the contrary, unripe fruits), peeled from the leaves, rinsed under running water. Then you need to let the excess liquid drain, dry the berries in a colander or on paper towels.

Strawberries can be dried whole, but it works better if you cut them into slices of about 2-3 mm thick.

Read the instructions for your dryer carefully. Much depends on the model of the device and in most cases the drying process is described in detail. Most often, the recommendation is as follows: cutting tightly on pallets is not necessary, since there must be a certain space for unhindered air circulation. I laid out my strawberries like this, as in the photo. I installed the first pallet, then another one, after which I decided to make apple chips as well.

You should also pay attention to the difference between drying with the help of the device from drying in natural conditions. If in the second case fresh slices are reported to those already dried, then this should not be done with an electric dryer.

When all the sieves with strawberries are installed, you need to start the electric dryer. Set the temperature to no higher than 45ºС, in this case more benefit will remain. Don't forget to swap pallets. That is, rearrange the lower ones to the upper position, and lower those from the top to the bottom. Such actions are necessary for uniform drying of berry slices.

Dried strawberries should be soft and elastic, but without traces of juice.

And these are apples.

You can store it for the winter in glass jars or plastic containers with lids.

Such berry-fruit chips can be eaten without a twinge of conscience on

Ripe but strong strawberries are suitable for drying. Berries should not be overripe or watery. Large strawberries are easier to cut, but small ones will work too. Before proceeding with drying, the strawberries must be thoroughly washed and cleaned of the stalks. Spread the strawberries on a towel and let it dry. Wet strawberries take longer to dry, and they endure slicing worse.

Cut strawberries into slices. The thickness of the plates depends on where you plan to use the berries. For tea, it is better to cut thinly, about 3 mm. The slicing knife must be sharp, otherwise the strawberries will release the juice. I use a paring knife or a thin serrated knife.

In order to cut strawberries a little thicker (5 mm), you can use not only a knife, but also various devices, for example, an egg cutter or such a knife for slicing tomatoes. All plates are obtained the same thickness, which means they dry the same way.

Don't cut all the strawberries at once. It is better to cut some of the berries and spread them out, then cut some more. The amount of strawberries you need will depend on the thickness of the slices and the number of trays in your dryer.

Lay the sliced strawberries on pallets in a single layer, so that the plates do not stick together. Dry the strawberries for about 12 hours. It is difficult to specify the exact time, because each dryer has its own characteristics. During the drying process, it is recommended to change the pallets several times, so the berries will dry more evenly, and you will be able to control the process.

Once upon a time, jam was cooked in every family - regardless of whether they ate it at home or not. Today we make only those preparations for the winter that really bring pleasure - either in the process of preparation or in the process of consumption. One of those recipes for the winter - Sun-dried tomatoes which have become very popular in recent years. But you can also dry cherries, melons, and strawberries for the winter - mother of many children, Marina Yaroslavtseva, shares recipes for preparations.

You will need:
  • 1 kg strawberries (it is important that the strawberries are large and ripe, but dense)
  • 800 g sugar
  • 1½ cups of water
  1. Sort the berries, leaving strong healthy specimens, rinse, transfer to a colander and leave for 15 minutes to make the water glass well.
  2. Remove the stalks, sprinkle the berries with some sugar and refrigerate for a day. To prevent the strawberries from absorbing foreign odors, tightly close it with a lid. During this time, the berries should give juice. It can be used to prepare strawberry ice, pouring into molds and freezing, or you can dilute to taste with drinking water and get a fragrant strawberry drink. You can also bring the juice to a boil, pour into sterilized jars and store in the pantry.
  3. Mix the remaining sugar with water and boil the syrup until the sugar is completely dissolved. Dip the prepared strawberries into the boiling syrup and cook over low heat, covered, for 10 minutes. Remove from stove and refrigerate 10-15 minutes.
  4. Transfer the berries to a colander and let the syrup drain. The syrup can also be sterilized and removed for long-term storage or use to make drinks.
  5. Arrange the berries in one layer on a baking sheet and dry in the oven at a temperature of 85 ° C for 1.5–2 hours, stirring every half hour. After that, leave the strawberries at room temperature about a week to dry.
  6. Store dried strawberries in a cool place (but not in the refrigerator) in airtight, dry glass jars.

You will need:

  • 1 kg pitted cherries (choose large cherries with firm, non-juicy flesh)
  • 350 g sugar
  • 50 g powdered sugar
  1. Sort the cherries, removing damaged and unripe fruits. Rinse the remaining berries and let drain with water.
  2. Remove pits from cherries. In stores, you can find many different devices for removing stones. In extreme cases, remove them with your hands, remembering to put on gloves first.
  3. Mix pitted cherries with sugar and leave for 5 hours. During this time, juice will stand out.
  4. Put the container with the cherry on the stove and bring to a boil over low heat. Turn off the stove, cover the container with a lid and leave for 5 hours. Once again, heat and again infuse the cherry for 5 hours. Repeat this operation three times.
  5. After that, throw the cherry on a sieve and leave for an hour so that the syrup drains well. Then try to gently wring out any remaining moisture with your hands. The released syrup can be diluted with water to taste and used to make drinks.
  6. Arrange the cherries on a baking sheet lined with parchment and dry in one of two ways. You can leave the berries for 12-15 hours in the oven at a temperature of 60-65 ° C or for 5-8 days at room temperature, turning them over once a day.
  7. Sprinkle finished candied fruits with powdered sugar and store in a dry, hermetically sealed jar.

The hardest part of this recipe is choosing the right tomato variety. Their flesh should be dryish, fleshy. Watery juicy fruits will not work.

For 2 cans of 0.5 l:

  • 1 kg tomatoes
  • 200 g olive oil
  • 2 tbsp. l. salt
  • spices to taste
  • ground black pepper
  1. Rinse and cut the tomatoes: oblong - lengthwise in half, round - into four parts. With a teaspoon, select the seeds in a separate container - they can be used for cooking other dishes.
  2. Lay the tomatoes cut side up, season with salt and pepper, then turn upside down on paper towels and forget about them for one to two hours.
  3. Now line a baking sheet with parchment paper and brush it with olive oil. Lay the tomatoes cut side up on the paper, drizzle with oil, sprinkle with chopped garlic if desired.
  4. Place the tomatoes in an oven preheated to 70°C and dry to desired consistency – this may take 6 to 12 hours.
  5. Put sun-dried tomatoes in jars and pour over olive oil. You can add your favorite spices to them: for example, a pinch of rosemary, a few rings hot pepper, half a teaspoon of thyme, and for better preservation - 1-2 tablespoons balsamic vinegar and a couple of pinches of salt.
  6. You need to store jars of delicacy in the refrigerator, and the oil infused with sun-dried tomatoes can be used to dress salads or even just spread on bread.

Dried melon is an unusually tasty and fragrant delicacy. You will spend quite a bit of pure time on its preparation, although it will take a long time to dry the melon. But stock up on a little patience, and you will be rewarded with a wonderful dessert that retains all the useful substances!

  1. Cut a well-ripened but dense melon in half, remove the core with seeds, peel with a sharp knife, cutting off the greenish flesh underneath with the peel.
  2. Cut the peeled pulp lengthwise into strips 2–3 cm thick. Lay the melon strips on a tray, cover with gauze from flies and wasps and dry in a warm place, preferably in the sun. You can dry melon in the oven at a temperature not exceeding 75 ° C. When drying in the sun, turn the strips every two days.
  3. After 10-14 days (depending on the temperature of the room and the type of melon), weave the dried pieces into braids, connecting several strips. The melon strips will be sticky and flavorful.
  4. You can store such a dessert in dry boxes or jars in a warm place.

You will need:

  • 1 kg lemon peels

For syrup:

  • 200 ml water
  • 1.5 kg sugar
  1. Cut the lemon peels into strips 1-2 cm wide and soak in cold water for about a day. During this time, drain the water twice and fill the crusts with fresh water. The rinds are soaked to remove bitterness.
  2. Drain the soaked peels in a colander and let the water drain.
  3. Pour water into a saucepan, bring it to a boil. Put the lemon peels in boiling water and blanch them for 10 minutes, then fold them back into a colander.
  4. For the syrup, bring the sugar and water to a boil and heat, stirring, over low heat until the sugar is completely dissolved.
  5. Dip the blanched lemon peels into the syrup and boil them for 10 minutes.
  6. Turn off the stove and infuse the crusts for 10-12 hours. During this time, bring the lemon peels to a boil three times, boil, then remove from the stove.
  7. Drain the cooked crusts in a colander and let the syrup drain completely. Do not pour out the syrup: it can be used to make desserts and drinks, it can be used to soak cake layers or pour over ice cream.
  8. Put the lemon peels on a baking sheet covered with baking paper and dry in the oven at a temperature of 30–40 ° C until small sugar crystals form on the surface.
  9. Pour the finished lemon candied fruits into a dry, clean jar and seal tightly.

The variety of berries is so pleasing in the summer that you want to keep their aroma and taste for a long time. Someone cooks their jam, freezes berries, prepares marshmallows or candied fruits. However, the berries can also be dried. It is very easy to do this at home.

Preparing berries

Dried strawberries are an excellent vitamin preparation for the winter. Such berries can be consumed on their own, you can add them to tea or compotes or to a variety of pastries. Separately, it is worth mentioning that in dried form the berry retains many beneficial features. Dried strawberries contain numerous vitamins, minerals and other beneficial substances.

First you need to select high-quality berries and prepare them for the further process. Only ripe specimens without a single flaw are suitable for drying. Try to choose such varieties so that the berry is sweet and dense. Soft and watery varieties already lose their shape during washing and become completely unsuitable for drying.

Ripe berries are carefully washed with running water and the leaves are removed. Then lay out in a single layer on paper towels to dry the strawberries a little. Then we cut each berry into thin plates 5 mm thick. Try to keep the plates the same thickness. You can cut it both along and across. After the berries are prepared, you can proceed to the drying process.

Drying methods

Prepared strawberries can be dried simply in the open air. Perhaps this is the easiest and most proven method of drying. It is quite possible to use the method of our grandmothers: you need to string each plate on a thread and hang it to dry. It is advisable to dry outside, if possible. As a rule, in this way the berries are dried for 3-4 days.

And you can also dry the strawberries in the air in another way. To do this, you need a flat surface that needs to be covered with several layers of newspapers. On top of newspapers it is better to put white thick paper. This is necessary so that the paint from the newspapers is not absorbed into the pieces of berries. Lay out the strawberry slices in a single layer. If you use this recipe, then remember that the plates need to be turned over periodically so that the strawberries dry evenly on both sides. After 3-4 days, the berries will be ready.

By the way, on the first day you will need to replace the paper soaked in juice.

If you want to speed up the process, you can dry the berries in the oven. Strawberries cut into plates should be laid in one layer on a baking sheet, which must first be covered with baking paper. Fruits should be dried at a temperature of 50-60°C. At a higher temperature, they will begin to fry. Therefore, if you have a gas oven, it is recommended to constantly monitor the temperature.

After an hour and a half, we take the berries out of oven, turn over and let cool completely. After that, the baking sheet is again placed in the oven and the strawberry plates are dried on the other side for another hour and a half. For better drying, the oven door should be slightly open.

Nowadays, you can use more modern and fast way. For example, dry the berries in an electric dryer. We lay out the prepared pieces in one layer on special pallets of the apparatus. We set the temperature to 55 ° C and turn on the electric dryer.

If the house does not have an electric dryer for berries and vegetables, then it is quite possible to use the usual microwave oven. Put the prepared pieces on a flat dish. It is recommended to pre-lay the dish with baking paper or a thick paper napkin. From above, we also cover the berries with thin paper. We set the power to 600 W and turn on the timer for exactly 3 minutes. After that, open the door and remove the top paper.

It is quite possible to use an air grill for drying strawberries. Prepared pieces should be placed on a pallet and set the temperature to 45 ° C. During drying, open the lid slightly to evaporate excess moisture. The drying process in such a unit will take a maximum of two hours. After one hour of this drying, the temperature should be increased to 60°C. At the same time, during the process itself, strawberries do not need to be turned over.

Small strawberries can be dried whole. Peeled and washed berries must first be dried a little in the sun. It is advisable to dry them in the sun during the day. After that, you can put them in the oven and dry at a temperature of no more than 50 ° C. A well-dried berry decreases in size and does not stick to hands at all.

Storage and application

Dried strawberries must be stored properly, otherwise they may become moldy. The ideal storage location is a glass container with a tight lid. In this form, the berries can be stored for up to two years.

Dried strawberry slices can be ground in a coffee grinder and added to baked goods. As a result, cupcakes or pies will be a pleasant pink color and acquire an unusual aroma. Strawberry powder goes very well with classic charlotte. An infusion of dried strawberries is used during seasonal colds. This drink strengthens the immune system and has a positive effect on health.
