2) HOME "PROVENCAL"

INGREDIENTS:
● 4 egg yolks,
● 2 table. l. fresh lemon juice,
● 2 table. l. mustard,
● 1 tsp. a spoonful of salt
● the same amount of sugar
● 100 ml olive oil,
● 200 ml vegetable oil.

COOKING:
Pour the yolks into a bowl, add sugar, salt, lemon juice and mustard. Blend everything thoroughly with a blender. After the egg yolks are whipped, you need to slowly pour in two types of vegetable oils little by little. Continue whisking until the oil runs out. If the cooked mayonnaise is too thick for your dish, you can dilute it with milk, adjusting the consistency yourself.

In ready homemade sauce feel free to add various additives:
● parsley or dill
● minced garlic
● black ground pepper
● pieces of fresh paprika
● circles of olives
● fresh or pickled cucumber
● capers
soy sauce
Orange juice
● grated horseradish
● pureed red or black caviar
● minced slightly salted salmon

INGREDIENTS:

COOKING:
Peel and finely chop the onion. Heat a mixture of olive oil and butter in a frying pan or a shallow saucepan and sauté the onion until transparent. Pour the wine into the pan and, stirring, reduce to half. Add to the onion with wine vegetable broth and bring it to a boil. Then add cheese to the broth and cook, stirring constantly until it is completely dissolved. Salt and pepper the sauce to taste.
Place the greens in a blender bowl and chop. Pour the sauce into a blender bowl and carefully spur it again, pour into a gravy boat and serve hot. The sauce is universal, suitable for meat, fish, and vegetables. I served with meat and rosemary potatoes and fish with mixed vegetables.

4) MUSTARD - HONEY SAUCE

INGREDIENTS:
● 2 tbsp sour cream
● 2 tbsp. mayonnaise
● 2 tbsp. Dijon mustard / grains / or without according to your taste
● 1 tbsp. honey
● 1 tooth garlic
● 1 tsp. lemon juice
● 1 tbsp olive oil
● white pepper

COOKING:
Mix all components until a thick homogeneous mass.

5) SPICY TURKISH SAUCE

INGREDIENTS:
● 2 bulbs
● 1 tbsp tomato paste or
● 1/2 cup chopped tomato
● 2 tbsp. olive oil
● salt, red and black pepper
● 1 tsp. ground coriander
● green cilantro, dill
● 1 tsp. lemon juice or vinegar to taste

COOKING:
