  3. Add flour to the curd mixture and knead the dough with your hand or a fork.
  4. Pour 1 tbsp. a spoonful of vegetable oil and immediately reduce the heat to medium (for example, to level 5 if the stove is electric).
  5. With wet (!) hands, form the first cheesecake: scoop up a small handful of dough and roll into a ball. Next, put it in the pan and lightly press down.
  • Often in recipes, during the modeling process, cheese cakes are recommended to be rolled in flour so that they do not stick to hands.   • Flour - 1.5 tbsp. spoons (or more if the cottage cheese is liquid);
  • Vegetable oil for frying - 1 tablespoon;
  • Vanillin - 1 pinch (optional)

  1. In a bowl, mix the egg until smooth (do not beat).
  2. Add semolina to the egg mass, mix and set the mixture aside for 3-5 minutes so that the semolina begins to swell.
  3. In another bowl, mash the cottage cheese with a fork.
  4. Pour the egg-semolina mixture into the cottage cheese and mix well until smooth. Next, add sugar, salt, vanillin and other additives, such as raisins. At this stage, it is advisable to let the mixture stand for 20-30 minutes.
  5. We begin to pour flour into the curd mass. It is important to do this gradually: first add 1 tbsp. spoon and stir the mixture; if the dough is still liquid, add another 0.5 tbsp. spoons of flour and mix again. The consistency of the dough should be such that balls can be molded from it.
  6. Place a frying pan on medium heat, pour oil into it.
  7. With wet hands (!) Blind the first cheesecake: take a handful of dough and roll a ball out of it, then put it in a pan and press down a little.
  8. Continue sculpting the cheesecakes and put them alternately in the pan.
  9. Brown the cheesecakes on both sides (2-3 minutes each), then cover them with a lid and then simmer for another 2-3 minutes over low heat. Hooray! A delicious breakfast is ready, it remains only to add sour cream, condensed milk, jam or other favorite topping.

4 secrets of successful cheesecakes

  • Are your cheesecakes starting to burn too quickly? Most likely, the matter is an excess of sugar in the dough. Ideally, it is better not to use sugar at all, especially since sweet additives, such as condensed milk, can easily compensate for its absence.
  • For the preparation of cheesecakes, cottage cheese with a fat content of 5-9% is best suited. It should be dry (but not too dry), free of palm oil and ideally free of large grains. If the cottage cheese is not dry, then it must be wrapped in cheesecloth and hung over any container for 30 minutes to drain excess buttermilk. Granular cottage cheese before cooking cheesecakes should be chopped with a blender or rubbed through a sieve.
