Apples, without peeling, cut into halves and remove the core, and then cut each half into three or four more parts. Place the sliced ​​apples in a glass or ceramic bowl and microwave for about 10 minutes.

Apples are very soft, so it is quite possible to get by with a fork. I got 450 grams of applesauce from this amount of apples. For baking cupcakes, we need 250 gr. Instead of raisins, you can use any dried fruits (cranberries, cherries, dried apricots, prunes), candied fruits, nuts or even poppy seeds. Only poppy should first be poured with hot water, left for 5-10 minutes, and then drained.


Mix together flour, raisins, cinnamon, soda and sugar.

You can add pieces of nuts or pumpkin seeds. You can increase the amount of sugar to taste, in the recipe it is at a minimum. Although in original recipe it’s not there at all, it’s a cupcake from the “sugar-free” section.

You can sprinkle with powdered sugar or chocolate white or lemon icing, it will be beautiful and tasty.

Instead of an apple, you can put a pear, pumpkin and even carrots, as in this one. Canned pineapple chunks can also be added. This recipe takes it all.

Ingredients:

2. Melt the butter with honey and sugar in a water bath. Cool until warm.

3. Add spices, soda to flour (do not extinguish!), mix well with a whisk.

4. Combine kefir with eggs, mix.

5. Knead the dough: add a little flour to the melted honey and butter, mix, then add the eggs with kefir, then the rest of the flour. Knead dough consistency thick sour cream. It does not pour, but falls from the spoon.

If the dough is thicker, add 50-100 grams of kefir or water.

6. Wash the apples, remove the skin, cut into 4 parts, cut out the core. Cut into small cubes, pieces. sprinkle lemon juice, mix so that all the pieces are moistened with juice. Lightly roll in flour, 1 tablespoon of flour from the total will be enough for this.

7. Add apples and raisins to the dough, mix.

8. Put the dough into a mold. It should be approximately two-thirds full.

I have Silicone molds for the cake. It's big, so it's half full.

Bake in an oven preheated to 180 degrees for about 60 minutes. Check for readiness with a match or a wooden barbecue stick.

9. Serve chilled with tea, coffee. The cake is very tender and sweet enough. If there is not enough sweetness, you can sprinkle the cake with powdered sugar or cover with icing, preferably white.
