Spring rolls and filo dough March 18th, 2012

I have an obsession - spring rolls. Prepare them in different countries differently. Somewhere they wrap it in the thinnest transparent dough made from rice flour, somewhere they make dough from wheat flour. I’m not talking about toppings at all - there are vegetables, meat, and shrimp .. But my fetish is deep-fried crispy pancakes with a spicy sweet sauce. I tried them many times, but I never learned how to cook. And the reason for this is the dough, supposedly "phyllo", which I long time couldn't buy. I had this dough myself, but for some reason it seemed to me that in spring rolls it was a little different, I wanted to compare.
I knew that filo was sold in Azbuka Vkusa, the most expensive store in Moscow, but paying 333 rubles. for 12 sheets of dough, consisting only of flour and water, I did not want to.
But one day I still could not stand it and bought it.

Puff pastry KANAKI "Filo" 450g
"Filo" - thin sheets of unleavened draft dough made from premium flour. They are highly elastic and easily take any shape.
It is widely used in Mediterranean cuisine for both sweet and savory pastries.
Interestingly, the name of this test comes from the Greek "phyllon", which means leaf.
Leave for two hours before use room temperature. Brush the dough sheet with butter, fold in half, brush again and fold. Put the filling in the middle, wrap the edges and roll up the roll.
Price 333-50

So, in front of me is filo dough - my cherished dream.

To prepare spring rolls, I will use the following set of ingredients:
400 g raw shrimp
100 g shiitake mushrooms
200 g fresh cabbage
2 small carrots
1 stalk stalked celery
1/3 sweet pepper
300 g green beans
a bunch of green onions
ginger root 5 cm
1 tsp lemon peel
soy sauce
olive oil
Sesame oil
sunflower oil deep-frying
sweet and sour sauce for serving

Vegetables may be seasonal. It would be nice to add mung bean sprouts and bamboo sprouts, but I don’t have such good in Ruza.

Dried shiitake soaked in warm water for 4 hours.

The shrimp thawed slowly overnight in the refrigerator. Then she cleaned and removed the intestinal vein.

I cut the vegetables into thin strips, I did not cut the beans. Ginger cut into small cubes.

Hot olive oil fried the ginger, and then took it out with a slotted spoon.

Saute shiitake in ginger oil until golden brown.

I added chopped vegetables to the fried mushrooms and fried them over high heat, stirring, until softened (5 minutes). Added beans, continued to cook for another 2 minutes. At the end, I poured 2 tbsp. soy sauce and cooked over high heat for a couple more minutes.

Chopped green onion.

I let the filling cool down.

That hour has finally come... Drumroll. I unpacked the frostbitten dough, it is rolled into a roll.
It looks like tissue paper - thin and transparent.

Wet and wring out the towel. She unfolded the dough on the table and covered it with a damp towel, took out the first sheet. She folded the dough sheet twice, smeared the edges with water with a brush. I laid out 1 tbsp on the corner. dressings from vegetables and 1 shrimp and wrapped in an envelope. She put the envelopes on a plate and covered them with a damp towel.

She heated sunflower oil in a deep saucepan and lowered the first batch of pancakes. Roasted for about 1 min. from each side.
Ready-made pancakes (and only a person with great imagination can call them rolls) was served with sweet sauce for spring rolls and soy sauce.

My impressions.
Apparently, the sheet of dough needs to be divided in half and put less stuffing - then the pancakes will turn out smaller in size and will look more like rolls.
I either overcooked the dough, or it is what it is - tough, but crispy. The stuffing inside is amazing. Everything would be great if I cleaned the shrimp to the end, and did not leave them tails :)
I have another package of dough, and another recipe for making dough for spring rolls - today will be the second series.

By the way, in Vietnam this dish is usually called "nem" - here they are recognized as a national type of treat.

Thus, spring rolls can be called snacks that are wrapped in very thin wheat pancakes or rice paper made in a special way. And this is their most important difference from the traditional rolls familiar to us. The fillings for them are varied - meat, based on seafood, vegetables or berries, mushrooms, fruits, etc. If we draw an analogy with other dishes, these rolls can be compared with stuffed pancakes very popular in Russia.

On a note! You can eat such rolls both fresh and lightly fried so that they get a beautiful and appetizing golden crust. It is customary to serve them with sauces, but they are very, very tasty on their own.

What is used for cooking?

In order to cook spring rolls, you need to prepare two main components. One of them is what the filling will be wrapped in, the second is, in fact, the filling itself. Also, you can not do without, with the help of which the rolls will be directly formed.

Table. Spring roll ingredients.

ComponentCharacteristic
This is the main ingredient that is needed to create spring rolls. But it’s worth relaxing - you won’t have to eat “paper”. Rice paper is the thinnest dried translucent pancakes that are made from rice flour. They are just so thin that they can be safely compared to paper. Moisten them a little with water - and now they are supple and ready to work.
Sauce is an optional, but recommended ingredient for serving. Sauces such as plum, hoisin, chili, ginger-lemon, etc. are suitable for spring rolls. Of course, here you should focus on the filling with which the rolls were made.
For spring rolls, you can take absolutely any filling and mix the components - the main thing is that they combine with each other. You can cook vegetable, meat, sweet, fruit, berry, mushroom spring rolls, etc. Almost every spring roll is added and fresh leaves lettuce (it is better to take greens of soft varieties). Here you just need to turn on your imagination and cook such spring rolls that you will like, because it is the filling that will set the main taste tone of the dish.

The composition of the dough to create "paper" includes salt, water and flour. It is worth knowing that sometimes when preparing sheets, tapioca can be added to the dough. A mixture of ingredients is steamed using a special technology, and at home it will not work to make paper yourself. Ready-made paper is easier to buy - usually it is available on those shelves where there is "everything for making rolls." The shape of the sheets can be both round and square, there are also triangular sheets. Yes, and they are different in thickness, and some contain certain additives such as chili, bananas, etc.

Separately, it should be said about makisu. This is not an ingredient, but a device without which it is impossible to cook rolls. Makisu is a bamboo mat that allows you to form beautiful and neat rolls.. Moreover, most likely, he is already familiar to those who like to cook at home a couple of dishes of traditional familiar rolls. The rug is inexpensive and can also be found in departments that sell Asian ingredients. As an option - do it yourself, but it will take a long time to mess with makisu, because it's easiest to buy it.

How to use rice paper?

Rice paper purchased at the store is quite dry and brittle, and it’s just not possible to wrap the filling in it. In order to be able to use it for its intended purpose, it needs to be prepared. To do this, it is soaked in water and acquires the necessary elasticity, ceases to crumble.

The easiest way to soak the paper is by placing it in a deep plate with a sufficient diameter. Pour some warm water into the bowl. You can lay several sheets of rice paper at the bottom at once - it is only important to make sure that there is a small layer of water between them, otherwise they will stick together. You only need to hold the sheets in water for a minute.

Soaked paper will be quite unpleasant and slippery to the touch. It is important to carefully fish it out of the water and lightly blot it with paper towels. Now it is ready to use - you can wrap rolls. Pancakes dry quickly, so it’s not worth catching all the paper from the water at once.

Advice! You can soften the sheets without dipping in water. It is enough to put the paper on the makisa and moisten with water using a culinary brush.

Can rice paper be substituted?

Ideally, rice paper is prepared by hand, that is, rice dough is kneaded, then dried in a special way, and sometimes right on the roof (this is in Vietnam). In factories, paper is produced using a special technology and, of course, no one dries it on the roof like that. But it turns out a little rougher and denser, and, nevertheless, it is quite suitable for making spring rolls.

However, rice paper can also be replaced with another ingredient, which is especially important for those who live in Russia and cannot find it in the store. Pancakes can also be made from wheat flour . True, in this case, spring rolls are usually fried after cooking.

Wheat dough makes it possible to make enough thin pancakes, which are quite suitable for making rolls. By the way, it is also made in Asian countries, but still they traditionally try to use rice paper.
