Merchant buckwheat with chicken in a slow cooker turns out crumbly, fragrant and very tasty without any effort. You can use any part of the chicken carcass, not necessarily a clean fillet, drumsticks, wings, legs, etc. will do. Before adding cereals, meat must be fried together with vegetables and tomato paste- then it will be covered with light golden brown and retain the juice. I like to cook cereals in a slow cooker - they do not turn into "porridge", the dish does not stick to the bottom, and the porridge is saturated with vegetable and meat flavors.

I recommend frying the grits for a short amount of time along with vegetables and meat before adding boiling water so that it acquires a light fried flavor. You can safely replace tomato paste with tomato juice or chopped fresh tomatoes, pre-washed, scalded in boiling water and peeled.

So let's get everything ready. necessary ingredients for cooking merchant buckwheat with chicken in a slow cooker and start cooking!

Rinse the chicken meat in water, cut off the films. Cut into medium cubes. Turn on the multicooker, pour into the bowl vegetable oil and activate the "Frying" mode for 10 minutes. Put the cuttings in the bowl chicken meat and fry for about 5-6 minutes, salt, pepper and add bay leaves.

At this time, peel the vegetables, rinse and cut into small cubes. Add to the bowl along with the tomato paste, fry for about 2-3 minutes.

Pour the washed buckwheat and fry again for about 1-2 minutes.

Pour in boiling water, activate the “Porridge” or “Cooking” mode on the equipment display for 20 minutes and close the multicooker lid. Now you can do other things for 20 minutes - the technique will do everything for you!

As soon as the multicooker beeps, the merchant's buckwheat with chicken will be ready! The groats are not boiled, grain to grain. Remove the bay leaves - they start to taste bitter after cooking.

Food preparation

Buckwheat "in a merchant's way" got its name in the old days. It was considered a delicacy that could only be found on the tables of wealthy landowners and townspeople. In principle, any meat (pork, beef, turkey) can be added to cereals. But we will give recipes for a slow cooker using chicken meat.

As the name implies, the recipe for such a dish includes the main ingredients - buckwheat and meat.

The meat should be washed thoroughly. Preferably under running water. Then it is necessary to remove all layers and veins.

If there is a skin on a piece of meat, it must be cut off. After the done manipulations, the meat must be dried by blotting with paper towels.

Regarding buckwheat, any recipe says that it needs to be washed well. If the cereal is not very “clean”, then first sort it out and get rid of excess particles. Then rinse. Water after such procedures should remain clear and without sediment.

How to cook a dish

Recipe #1

Grains and meat should be taken in equal parts. Water - 1.5 parts. To cook buckwheat in a slow cooker of any manufacturer (Redmond, Polaris), you should use special containers that complement the appliance kit. This recipe also includes the following ingredients:

  • 2 small carrots;
  • 1 onion;
  • 2-3 tbsp. tablespoons of vegetable oil;
  • salt;
  • tomato paste (optional)
  • seasoning: black ground pepper, paprika, basil.

The first stage involves cutting the meat into small pieces and smearing them with seasonings. If desired, you can marinate the chicken in them and put them in a dense closed vessel in the refrigerator for half an hour or an hour. The next step is chopping the onion and carrot. For the first ingredient, these are half rings. Carrots are rubbed on a coarse grater.

They begin to prepare a dish of buckwheat with chicken in a multicooker "in a merchant's way" with the fact that the container of the device is lubricated with the above amount of vegetable oil. After that, in the “Frying” mode (it is available in almost all multicookers, including Redmond), meat and onions are sautéed in oil for 10 minutes. After that, carrots are immersed in a multi-capacity. After mixing the components, continue to fry them for the same period of time.

Then, switching to the “Extinguishing” mode, it is necessary to fill the bowl with cereals and pour everything with water. If you use tomato paste, it should be diluted in advance with the amount of water required by the recipe. Then everything is added to taste. Now you can close the lid and turn on the miracle pot. As a rule, when setting the time, you should focus on the model and power of your device. For example, for multicookers Redmond is 20 minutes.

The electronic pan will inform you about the end of cooking with a specific sound signal. Now your dish is ready. The original recipe also contains another ingredient - dill. Having decorated such a dish with several sprigs of fresh dill, it can be served at the table.

Recipe #2

Buckwheat with chicken in a slow cooker, which has an extraordinary name "in a merchant's way", can also be cooked with mushrooms. This recipe is slightly different from the previous one. To prepare such a dish with mushrooms, you will need the following products:

  • 2 tbsp. buckwheat;
  • 300-400 gr. chicken fillet;
  • 200 gr. champignons;
  • 1 medium onion;
  • 1 medium carrot;
  • 3 art. l. vegetable oil;
  • 3 cloves of garlic;
  • ground black pepper;
  • salt to taste.

After careful processing, the meat must be cut into small pieces. Grate the carrots on a coarse grater, cut the onion into half rings, mushrooms - in half and slices of medium thickness. Now you can start cooking.

Pour vegetable oil into the bottom of the miracle pot and, turning on the “Multi-cook” or “Frying” mode (in Redmond multi-cookers), fry the meat on it for 20-30 minutes at a temperature of 160 degrees. Then, in turn, place the onions and carrots. And after changing the color of carrots - mushrooms. In the same mode, we continue frying until a golden crust appears on the products, after which we salt and pepper everything.

Buckwheat should be washed by that time so that it can be immediately put on meat with vegetables. Pour the whole mixture gently with water and add a little salt to taste. After such manipulations, you can close the lid of the kitchen appliance and start it. To cook “merchant-style buckwheat” with chicken and mushrooms in a slow cooker, you need to select the “Pilaf” (or “Express cooking”) mode. You need to install it for half an hour. It is recommended to add garlic to buckwheat 5 minutes before the end of the regimen, finely chopped.

We all know what easier dish the faster it cooks and the tastier it is. For this reason alone, buckwheat with juicy multicooker chicken is on our menu today.

We will cook buckwheat in a slow cooker with chicken. In my opinion, it does not matter at all which parts of the chicken you take for this dish. When cutting a chicken, I usually immediately cut everything into portioned pieces, and then I use them for frying, baking, etc. It was these pieces of chicken that I took for our “pilaf with buckwheat”. To make the dish not banal, I propose to cook it with large pieces of chicken.

Pour vegetable oil into the bowl of the multicooker, immediately put the pieces of chicken. We select the mode suitable for frying, I have this mode called "Frying", I set the time - 10 minutes. More than enough for pre-roasting chicken meat. During the frying process, I turn the meat once.

While the chicken is roasting, prepare the vegetables. You can expand the set of vegetables, but I took the most common ones for pilaf - carrots and onions. I cut the onion into fairly large cubes, and the carrot into cubes. To make buckwheat more saturated and juicy, it seems to me that you need to take more vegetables - 2 large onions and carrots each, and if desired, three each!

Add vegetables to chicken. And then there are options for their cooking - you can stew, or you can fry. For example, I immediately set the “Pilaf” mode, only reduced the time to 10 minutes. From time to time she came up, opened the lid of the multicooker, stirred and watched whether it was enough or to add more time.

During the preliminary quenching, prepare the grits. It must be washed in several waters, put in a colander or just carefully drain the water. Now spread the buckwheat to the meat with vegetables. It was at this stage that I added spices: salted (about 1 dessert spoon salt), peppered. If you wish, you can add your favorite spices, I was careful not to experiment, in my opinion, buckwheat is not “friendly” with all spices (but this, I repeat, is only my opinion).

Now mix all the contents of the bowl. It needs to be filled with boiling water. How much to take? Eternal question. Usually buckwheat is boiled at the rate of 1 part of buckwheat - 1.5 parts of water. However, we already have vegetables, vegetable oil, and meat in the slow cooker. I never measure the amount of water in such cases, but I do what Boris Burda advised 15 years ago in one of the culinary programs.

It is necessary to pour so much water that it covers the cereal with two fingers (this, by the way, also applies to pilaf). You can say that these very “two fingers” are difficult to measure. Nothing like this! This is about half a vertically standing tablespoon. Therefore, I simply boiled water in a kettle, poured boiling water into a slow cooker, tried to lower a tablespoon, measuring the level of water above the cereal with it. About half a spoon? Fits! Water is sufficient.

It is only necessary to set the “Pilaf” mode to the full time interval, which is laid down in this program. After about 30 minutes, I opened the lid of the multicooker and stuck a whole unpeeled head of garlic into the buckwheat (just like in pilaf). After that, buckwheat with chicken continued to cook on its own.
