Like all the recipes in this collection, our banana pancakes are cooked on kefir, which makes them very fluffy. And for me this is a very important criterion, because I do not like thin pancakes. For me, they are all the more good, the more airy and softer the dough and crispy. These pancakes are perfect.

  1. It is better to sift the flour for the dough beforehand. Then the pancakes will be more magnificent.
  2. Whichever dough you choose, the method of frying will not change.
  3. Before frying the fritters, heat the oil well in a frying pan. You can use vegetable or cream.
  4. Spoon 1-2 tablespoons of batter into the pan. The fritters shouldn't touch each other, so cook them in batches.
  5. Fry over medium heat for 2-3 minutes on each side, until the surface is browned.
  6. If you want to remove excess oil from the finished pancakes, place them on a paper towel. It will absorb fat.

To make the pancakes lush and airy, the dough on them must be kneaded in a special way, deleting a couple of ingredients from the traditional recipe.


Fritters cooked in this way do not burn in a pan and do not settle. On the contrary, the dough actively rises, frying them is a pleasure. And the whole preparation will not take more than half an hour.



To prepare a serving of fritters, you will need the following ingredients:

1 glass of kefir
a pinch of salt
1 cup flour
1/3 teaspoon baking soda

As you may have guessed, this recipe no eggs and no sugar.

The whole trick is to knead the dough properly. First, pour kefir into a deep bowl, add salt and pour flour into it. Mix the flour with kefir thoroughly, the dough should turn out to be thick in consistency. Remember that you cannot change the sequence of adding ingredients to the dough, otherwise the chemical reaction will be disrupted.


Soda is added last to the dough. It is not necessary to extinguish it, just pour a third of a teaspoon into a bowl. Remember that soda will make the dough more liquid, so do not be stingy when adding flour. Let it be better that the dough turns out to be too thick, this is acceptable.

Sugar is not specially placed in the dough so that the pancakes do not burn during frying. By adding toppings, you will achieve the desired level of sweetness, or you can sprinkle ready-made pancakes with powdered sugar to taste (or pour sugar syrup over).


Let the dough stand for literally 5-7 minutes, during which time air bubbles will begin to appear on the surface. This means that the reaction is proceeding correctly. Now you can heat the pan with vegetable oil and start frying the pancakes.


It is best to spread pancakes in a pan with a teaspoon or dessert spoon. Keep in mind that they will expand a lot when frying, so put the dough away from each other.
