Preparations for the winter from chokeberry

Preparation for the winterberries in nature

  1. During collection, you need to cut off the shields (brushes) with scissors, folding them into shallow pallets. In order to always have a fresh berry at hand all winter, the twigs can be hung in a cold place where there is no access to sunlight, for example, in a basement, cellar, underground, in the attic of a country house or in a closet on the balcony of a city apartment. The optimum temperature for such blanks is about +5 degrees.
  2. In order to get dried chokeberry, the berries are separated from the stalks and laid out in one layer on paper, periodically stirring it up. This should be done in a well-ventilated area at a temperature not exceeding +50 degrees. That is, using ovens in this case is not cost-effective - beneficial features berries are lost.
  3. A convenient way for those who use freezers or have a large freezer in the refrigerator is quick freezing. Then all year round chokeberry will delight family members! Preparation for the winter useful berry in this case, there will be no cost. Just make sure that the berries separated from the stalks and quickly frozen in the freezer are portioned. You should not defrost the entire volume of fruits once again in order to cook, for example, compote or bake a pie.

How to cook chokeberry jam?

The most common chokeberry preparations, the recipes of which are most in demand among housewives, are, of course, jam.

The preparatory stage before cooking jam is the heat treatment of chokeberry berries.

Aronia berries differ from all others in some dryness. Therefore, before cooking jam, they should be “softened”. To do this, the fruits are dipped for several minutes (from 3 to 5) in boiling water, and then in cold water. And only after this procedure they are already thrown into a colander and transferred to a container for cooking jam.

By the way, the decoction obtained by scalding berries with boiling water should not be poured out - a certain amount of useful substances has passed into it. Therefore, it is best to cook Assorted jelly from it, adding syrups of other berries and fruits, sugar and starch.

Recipe for chokeberry jam without sugar

The benefits of these berries for people with diabetes have already been discussed above. Therefore, care should be taken to ensure that for these patients is provided here chokeberry jam recipe but no sugar.

Making such a blank is a little more difficult than with sugar, but it's worth it, believe me! We only need a voluminous pot of water, in which jars of berries will be installed. Place a rag on the bottom of the pot.

We bring the water in a saucepan to a boil, put the berries treated with boiling water to the brim in jars (it is best to use half-liter ones) and put them in a saucepan. Boiling water should reach the shoulders of the jars, but not be poured into them, so the fire should be kept small, only to maintain a boil.

During the boiling of water, the berries will “settle” a little, so more berries should be added to the vacant place. This process must be continued for 20-40 minutes. Then the jars are taken out of boiling water one at a time and rolled up hermetically with metal lids.

Recipe for chokeberry jam with sugar

The most common option for harvesting chokeberry is berry jam with sugar. For cooking, the hostess will need a container of the appropriate size, a stove and the necessary components that make up:

berries (1 kg), sugar (1.5 kg) and water (half a liter). The quantity can be reduced or increased while maintaining the indicated proportions.

You should not use a slow cooker, as it is not cost-effective: the berries are too hard, so the process will simply stretch for a very long time.

From half a kilo of sugar and half a liter of water (you can use part of the water in which the berry was blanched), a syrup is prepared, with which a kilogram of chokeberry fruits is poured (weight is determined up to heat treatment boiling water), with which the prepared berry is poured. After boiling the mass, it is kept on fire for another 5 minutes, constantly stirring the jam. Then the container is removed, and the brewed berries are left to soak in syrup for 8-10 hours.

The last step is to make the jam. The container is put on fire again, a kilogram of sugar is added and boiled until tender, while the syrup retains its shape when dripping onto the plane, and does not spill.

You can put the finished jam in jars both under metal lids and under plastic ones. You can even cover with clean pieces of plastic wrap, wrapping them with a string moistened with water from below. After drying, the string decreases in size, tightly tightens the piece covering the neck of the jar, which creates tightness.

Recipe for chokeberry and apple jam

To prepare this wonderful jam, you need to replace half of the berries with apples, which, before cooking, are also blanched for 3 minutes in boiling water left after scalding the chokeberry.

Sugar syrup is prepared on the basis of the water remaining after blanching, pouring sugar into it, after dissolving which the syrup is removed from the heat. Then apples and berries are laid there and left for 3-4 hours. After boiling the mass for 5 minutes, again let the jam brew for 3 hours. This procedure can be repeated several times until the chokeberry becomes juicy and soft. After that, the jam is laid out in jars and closed with either nylon lids or metal ones.

Often, citrus fruits are used to make blackberry jam. Prepare this dessert regular recipe, only before the last stage of cooking, they put citrus fruits twisted in a meat grinder together with the peel into a container with a mass.

  • For a kilogram of berries, it is recommended to take a couple of oranges and one lemon.

You can also add apple slices to the assorted. This is usually done after the first brew of jam.

After laying them and adding the remaining sugar to the mass, the jam is infused for 3 hours, boiled for 10 minutes and infused again for the remaining 5 hours (when preparing ordinary jam, the infusion process is carried out once for 8 hours).

Blackberry compote

It is very nice to get a jar of compote in winter and treat yourself. There are several recipes for making this drink.

Chokeberry compote - the first recipe

The simplest of them is a one-time filling of berries with hot syrup.

Chokeberry is thoroughly cleaned and washed before falling asleep in a container.

Berries are poured into sterile jars for one third of the volume.

To prepare such winter harvest it is required to take sugar and water in a ratio of 1 to 2. This mixture is brought to a boil and boiled for five to ten minutes. Then, immediately after removing from the heat, the syrup is poured into the chokeberry in a jar.

Immediately close the containers with compote with metal lids. The jars turned upside down are wrapped warmly and left to cool completely. Then you can go down to the cellar.

Compote from chokeberry - the second recipe

Sometimes housewives do this: berries, poured into a jar, are poured with boiling water, measuring its volume. Then all the contents are poured into a saucepan - along with the berries and boiled until the berries burst. At this time, the right amount of sugar is poured into the contents of the pan and boiled for ten minutes. I think in this case a lot of useful substances and vitamins are lost ...

This mixture is then poured into jars, laying boiled chokeberry in the same place, and rolled up with lids.

Chokeberry compote - recipe with citrus fruits

A wonderful drink is obtained from several components - assorted compote. It is prepared in the same way as described in the second recipe, only before pouring the hot mixture of berries and syrup into jars, add slices of peeled orange and half a lemon.

I make this recipe a little differently:

  • In already prepared jars, I fill one-third with berries, then I put slices of orange and lemon.
  • I fill jars with boiling water. I leave it to stand for 5 minutes, drain the water from the cans into a separate pan, pour sugar (1.5-2 cups per jar), bring to a boil. And again I fill them with banks. I roll it up with metal lids.

I turn it upside down for the night. In the morning or the next day I go down to the cellar.

Chokeberry compote - recipe with sea buckthorn

For cooking, take berries and chokeberries in a ratio of 2: 1. All berries are washed, cleaned, dried on a clean towel.

Banks are steam sterilized.

Syrup is brewed at the rate of 130 grams of sugar per 3 liters of water. Berries are placed in jars (the proportions are indicated above) so that a third of the container is filled, and they are poured with hot syrup to the neck (just above the "shoulders").

Then jars with compote are sterilized in boiling water. For 3-liter containers, it will take half an hour of this procedure, for 2-liter containers - 20 minutes, for liter containers, respectively, 10 minutes will be enough.

After the jar is taken out of the water, it should be “rolled up” with a metal lid, again sterilized in boiling water. The corked jar must be placed on the lid upside down, wrapped and kept for a couple of days.

Dishes and drinks from chokeberry for the holidays

It is interesting that even such dishes and drinks can be made from this wonderful berry that will decorate festive table and can even become the highlight of the feast.

Recipe for chokeberry liqueur

Making this wonderful and quite healthy alcoholic drink is quite simple.

  • Enough in three-liter jar pour washed chokeberry to the “shoulders” (it will be about one and a half kilograms of berries), pour about half a kilogram of sugar there and pour it all with vodka, without adding 2 centimeters to the edge of the neck. Usually 1-1.5 liters of alcohol is enough if a 3-liter can is chosen as a container for liquor.

The liquor is corked with a triple layer of parchment paper or a polyethylene lid, then placed in a refrigerator or cellar for two months. After this period, the liquor is poured into bottles, tightly corked again and stored until consumed in a cool place.

Cake "Skorospelochka"

So that the berries from the liqueur are not wasted, they can be used for the cake. This dessert is quite suitable as a breakfast biscuit, if it is not decorated with cream. If you bake a few biscuits, make a cream layer and decorate it on top, then this can become a fairly simple and cheap, but amazingly tasty cake.

  • For a couple of glasses of flour, you need a glass of kefir or yogurt. Actually, fermented baked milk or another thick dairy product is also suitable. There you need to pour a glass of sugar and a glass of chokeberry jam, add half a glass of berries from the liqueur and break a couple of eggs. Now, after mixing, you need to pour half a teaspoon of tea soda, mix again and leave to rise for five minutes.

The dough is laid out in a form greased with any fat and baked for half an hour in the oven at +180 degrees.

Aronia wine

Wonderful wine from chokeberry is not only beautiful, tasty, but also healthy. It is only important to remember that the abuse of even the most useful product may lead to negative results. But 200 grams per day of this divine drink - a real pantry of vitamins and minerals - will help normalize blood pressure, have a beneficial effect on vision, improve sleep and bowel function.

They make wine like this:

  • In a 10-liter bottle, pour 2 kg of chokeberry chopped in a meat grinder and pour 1.5 kg of sugar. If you want to make the wine richer and tastier, then add 5-6 kg of berries. You can add a handful of raisins and a handful of gray rice for more active wine yeast production. Then they put on a medical glove with a pierced middle finger on the neck and put it in a warm place. The bottle does not need to be opened once again, but you should not forget to shake it well every day.

First option: After 3 days, a glass of sugar and 2 liters of cooled boiled water are added to the container. Put on the glove again and continue to shake the contents of the bottle daily.

Second option: Maybe in 10 days. Yeast is just beginning to form from the berries. Raisins and rice speed up this process, but if they are not added, then after 2 days no yeast will form. Unlike the first option, the wine will not be ready in 33 days, but in 40.

Another 10 days pass, and the home winemaker repeats the procedure again - he adds a glass of sugar and 2 liters of water to the container.

After another 10 days, the procedure is repeated again. And now 10 days have passed again, and a total of 33 days have passed from the touch of the wine. It's time to pour the wine! But if the glove “sends” you greetings by this time, sticks out to the top, inflated with gases, then it’s worth waiting a bit - a day or two.

The drained wine is left to settle. After a couple of days, it is carefully poured into another bottle, trying not to stir up the sediment from the bottom. This procedure also needs to be done three times, every 2-3 days until the wine becomes clean and transparent. Then it is considered ready for use. You can store wine in a cool place with a closed lid. If this is a jar, then a plastic lid will be quite suitable.

You can replace some of the berries with others or even use fruits, such as apples, pears, grapes, currants or cherries. Ingredients can be either frozen or dried. The taste of assorted wine will be more interesting and subtle.

With this, dear friends, I end the article, but it would be interesting to know if you are preparing any recipes for dishes and preparations for the winter from chokeberry? Please share in the comments to this article.

chokeberry for the winter - a preparation that is very useful for the body. Previously, berries were widely used. They were used as medicine, as food, and as decoration. Today, the fruits of chokeberry are not so popular, but the blanks do not lose their relevance.

Known as chokeberry, the tree produces sweet and sour black berries that are tart in taste. Often the harvest is ready for harvest from mid-September to October. The fruits contain vitamins of groups C, E, B and A. Berries are rich in fluorine, iron, iodine and magnesium. Chokeberry does not belong to high-calorie foods.

Now let's talk about what to make from chokeberry for the winter. Housewives prepare various blanks from chokeberry - it can be liquor, jam, candied fruits, wine, jam or tincture. Berries are also dried and frozen. In any case, the finished product will be tasty, fragrant and healing. It has already been mentioned above at what time you can harvest. But in order for the berries to gain the maximum amount of vitamins and taste, it is recommended to wait for the first frost.

Due to the unique chemical composition it is important to pay attention to the following features of the preparation of chokeberry:

  1. Taste features. The vitamin composition and the amount of sugar in the berries is determined by the abundance of the sun and the fertility of the soil. Even with the most ideal conditions cultivation is recommended to enrich the taste of future harvesting. Citric acid, which is added in a minimal amount, will help. The substance will make the taste lighter, and remove the viscosity.
  2. Best before date. Due to the minimum content of yeast bacteria, rowan blanks are stored for a long time even without sterilization. The juice will not ferment, but the wine still needs to be stored in accordance with the specified requirements.
  3. Color. The dark, almost black juice of the berries will stain any surface it hits. It is important to remember that juice stains are difficult to remove from hands, furniture, fabrics and enamelware.
  4. Compatibility with other products. Berries have a mild aroma and taste, chokeberry goes well with the leaves of fruit trees, fruits, berries and citrus fruits. As a rule, spices are not added to the blanks.

with lemons

Chokeberry (chokeberry) is one of the favorite plants of summer residents. It does not require special care, it blooms beautifully, gives a good harvest, and the berries themselves are very useful. For lovers of preparing alcoholic beverages, I suggest making chokeberry tincture at home according to the best recipes that have been repeatedly tested in practice. We will use only cheap and available ingredients.

Homemade blackberry tinctures are best cooked on large juicy berries harvested after the first frost. Dried fruits are also suitable. In this case, in the proposed recipes, it is enough to reduce the proportions of berries by half. Before cooking, the mountain ash should be carefully sorted out, removing small (they are very bitter) and spoiled berries.

As an alcohol base, you can use vodka, alcohol diluted to 40-45 degrees, purified moonshine or cognac. There is no fundamental difference.

Classic blackberry tincture

The simplest, but at the same time very delicious option a drink that has nothing in common.

Ingredients:

  • black rowan berries - 1 kg;
  • vodka (alcohol, moonshine) - 1 liter;
  • sugar - to taste (optional)

Personally, I don’t add sugar, but I still advise lovers of sweet alcohol to add 300-500 grams.

1. Pour the sorted and washed mountain ash into a jar.

2. Add vodka so that it covers a layer of berries by 2-3 cm. Add sugar (optional) and mix well.

3. Close the jar with a lid and put it in a dark place at room temperature for 60-70 days. Shake the contents of the jar every 4-5 days.

4. Strain the finished tincture through gauze, pour into bottles and close tightly with corks. In a dark place at room temperature, its shelf life is practically unlimited.

The result is a delicious homemade chokeberry tincture that has the color of wood furniture and the characteristic smell of forest ash. Drinks easily and pleasantly.

Attention! Berries can be reused, it is enough to fill them with the same amount of alcohol base. Both tinctures almost do not differ in taste, the second one is even a little softer.
