1. For the dough, beat softened butter with sugar (by hand or in a food processor) until the mixture turns white. Add the egg and beat for a few more minutes. Reduce beating speed and add flour. Stir until a homogeneous mass is obtained. Wrap the dough in cling film and refrigerate for 1 hour.

2. Peel and core apples, cut into pieces. Put in a baking dish, sprinkle with sugar and put the cloves.

3. Roll out the dough into a 3 mm thick layer and cut out several strips from it to glue them tightly to the sides of the form previously moistened with water. Cut out a circle from the dough with a diameter slightly larger than the form, moisten the edges of the circle with water and cover the form. Press firmly to the sides. Trim off the excess dough and press the dough in a circle with a fork.

4. Lubricate the surface of the dough with egg white. Make decorations from the rest of the dough and arrange on the surface of the cake. Cut a small hole in the center. Brush the surface again with protein.

5. Bake the cake for 30 minutes in an oven preheated to 180 ° C.

6. For cream, mix sugar with an egg in a jug, add cream and vanilla. Pour the cream into the hole in the cake and bake for another 25-30 minutes until the cream has set.

7. Sprinkle the slightly cooled cake with powdered sugar.

Charlotte with apple and cinnamon in a mug

For this dessert, you can use the most different fruits, but we chose a classic pair: apples and cinnamon. Caramel sauce wouldn't hurt either.


Ingredients

  • 2 tbsp. l. soft butter, plus more for greasing
  • 3 thin red apple slices
  • 1 medium egg
  • 1 tsp vanilla extract
  • 3 art. l. light brown sugar
  • 4 tbsp. l. flour with baking powder
  • 1 tsp ground cinnamon
  • 3 art. l. grated apple

For decoration

  • 1 st. l. caramel sauce
  • ¼ tsp dark brown cane sugar
  • ice cream (optional)

1. Grease a 350 ml mug with oil, then spread the apple slices on the bottom.

2. Put the rest of the oil in another mug and heat in microwave oven 10-20 seconds until melted. Add egg, milk and vanilla, beat thoroughly with a fork or whisk.

3. Pour sugar, flour, salt and ground cinnamon into the mixture, beat again with a fork until smooth. Stir the grated apple into the batter and carefully pour into the mug with the apple slices.

4. Microwave for 2 minutes. 20 sec. at a power of 600 W, 2 min. at 800 W or 1 min. 40 sec. at 1000 watts. Let the cake cool down a bit.

5. Carefully place the charlotte on a dish. Drizzle with caramel sauce and sprinkle with cane sugar on top. Can be served with ice cream.

Lemon pie


Ingredients

  • Flour - 130 g
  • Sugar - 120 g
  • Butter - 150 g
  • Zest of 1 lemon
  • Juice of 2 lemons
  • Eggs - 3 pcs.
  • Powdered sugar

1. Cut the zest into chips, put in a small saucepan and cover with 3-4 cm of water. Cook over medium heat until all the liquid has evaporated. Cool down.

2. Rub sugar with softened butter until the mass turns white. Add flour, stir.

3. Separate the whites from the yolks. Stir in all the yolks one at a time, mixing well each time. Pour in the juice of 1 lemon, stir. Add zest.

4. Beat the whites with a mixer and gently mix with the dough.

5. Lubricate a 20 cm diameter mold with butter and fill with dough. Bake for 40 minutes in an oven preheated to 175°C. Cool slightly.

6. Rub 5-6 tbsp. l. powdered sugar with lemon juice until you get a frosting of a consistency that can be spread on the cake.

7. Lubricate the pie with icing and cool until it completely hardens.

plum cake

For this Tuscan pie, in addition to blue plums, red and yellow summer plums ripening in our middle lane are very suitable.


Ingredients

  • Wheat flour - 300 g
  • Blue plums - 500 g
  • Sugar - 100 g
  • Butter - 100 g
  • Baking powder for dough - 1 tsp.
  • Juice and zest of ½ lemon
  • Savoiardi cookies or any biscuit - 4 pcs.
  • Powdered sugar

1. Mix flour with baking powder, 50 g sugar and a pinch of salt in a bowl. Add the chilled butter, cut into cubes, and rub the mixture with your hands until the consistency of breadcrumbs. Add about 100 g cold water and knead the dough. Shape it into a ball, wrap in cling film and refrigerate for 30 minutes.

2. Cut the plums into halves, remove the seeds. Mix in the remaining sugar, lemon juice and zest.

3. Grease a mold (10x24 cm) with butter and put ⅔ of the dough into it, lifting it up on the sides. Break the cookies into pieces and put them on the bottom (it will absorb the juice from the plums and prevent the dough from getting wet), put the plums with syrup on top. Cover the filling with the remaining dough, carefully bringing the edges together. Make several parallel cuts on the dough. Bake the cake for about 40 minutes in an oven preheated to 180°C. Let the cake cool slightly without removing it from the mold, and then remove and sprinkle with powdered sugar.

Apple cake in ring shape


Ingredients

  • 6 cups chopped apples (5 medium apples)
  • 1½ cups sugar
  • 1 st. l. cinnamon
  • ½ tsp nutmeg, grated
  • 1 cup applesauce with cinnamon
  • ¾ cup butter, melted and cooled, plus more for greasing the pan
  • 2 tsp vanilla sugar
  • 3 eggs
  • 1½ cups whole wheat flour
  • 1½ cups all-purpose flour, plus more for dusting the pan
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • Powdered sugar or caramel sauce (optional)

1. Preheat the oven to 180°C. Butter and flour two ring molds (about 20 cm in diameter and 6 cups capacity).

2. In a large bowl, combine apples, sugar, cinnamon and nutmeg. Add applesauce, butter, vanilla sugar and eggs and mix well. Add flour, baking powder, baking soda and salt and mix, but not very intensively.

3. Pour the dough into the prepared molds and bake for 40-45 minutes or until cooked (check with a toothpick: stick in the center, remove immediately, there should be no traces of dough on it).

4. Let the cupcakes cool for 10 minutes, then transfer to a wire rack. Sprinkle with powdered sugar or drizzle with caramel sauce (optional). The cake is best served warm with a scoop of vanilla ice cream.

German apple pancakes


Ingredients

  • 2 large eggs
  • ¾ cup milk-cream mixture (cream 10-12% fat)
  • 1 tsp vanilla sugar
  • ½ tsp salt
  • 1 st. l. Sahara
  • ½ cup all-purpose flour
  • 6 art. l. butter
  • 3 firm and sour green apples, peeled and thinly sliced
  • ¼ cup light brown sugar

For filing

  • powdered sugar
  • maple syrup
  • lemon slices

1. Preheat the oven to 220°C.

2. Combine the first five ingredients in a blender and blend. Add flour and mix again. Leave for a while.

3. Melt 2 tbsp. l. butter in a heavy bottomed skillet over medium heat. Add apples and brown sugar and cook, covered, for about 10 minutes or until apples soften and hold their shape. Stir about every minute.

4. Put the remaining 4 tbsp. l. butter in one large (25-30 cm diameter) or two small (15 cm) thick-walled ovenproof pans and place in a preheated oven.

5. When the butter is melted and simmering but not yet brown, remove the pans and add the prepared apples. Quickly fill with dough and place in the oven. Cook until pancakes are fluffy and golden (about 10 minutes).

6. Carefully tip the pancakes onto a serving plate. Sprinkle with powdered sugar and cut into quarters. Serve warm with maple syrup and freshly squeezed lemon juice.

Pear pie with frangipane

Pear pie, like any pastry, is especially good piping hot. But even if the guests didn’t finish the cake, don’t be discouraged - the next day it will also be very tasty, just thanks to the frangipane.



Ingredients

For the test

  • Wheat flour - 250 g
  • Butter - 125 g
  • Sugar - 50 g
  • Salt - 1 pinch
  • Ground cinnamon - 1 pinch

For filling

  • Pears - 4 pcs.
  • Brown sugar - 3 tbsp. l.
  • Butter - 50 g
  • Almond shavings - 1 tbsp. l.

For frangipane:

  • Butter - 75 g
  • Sugar - 75 g
  • Egg - 1 pc.
  • Wheat flour - 20 g
  • Ground almonds 75 g
  • vanilla extract

1. For the dough, mix flour with cold butter cut into pieces in a bowl, grind the mixture with your hands (you can also use food processor) to the consistency of breadcrumbs. Add sugar, salt and cinnamon. Pour in a little (about 50 ml) of water and knead the dough.

2. Make a ball out of the dough, wrap in cling film and refrigerate for 30 minutes.

3. For the filling, cut the unpeeled pears into quarters, remove the seeds, cut each quarter in half. Heat in a skillet 2 tbsp. l. sugar with butter, when the mass begins to bubble, add the pears. Cook for a few minutes over medium heat until the pears are soft and the sauce has thickened slightly.

4. Remove the pears and put the sauce in the refrigerator.

5. For the frangipane, beat the softened butter and sugar until fluffy, add the lightly beaten egg, flour, almonds and vanilla. Whisk well again.

6. Grease a baking sheet with butter or cover with a cooking mat (you can use baking paper).

7. Roll out the dough into a layer no thicker than 4 mm and place on a baking sheet. Spread the frangipane over the dough, leaving 2 cm from the edges. Lay out the pears and sprinkle with the remaining brown sugar and flaked almonds. Bake for 20 minutes in an oven heated to 200 ° C until the edges of the dough are browned.

8. Let the cake cool for 10-15 minutes. Serve the pie with chilled sauce. You can add a scoop of ice cream.

Cupcake with chocolate, ginger and pear


Ingredients

  • 20 g dark chocolate, broken into pieces

  • a pinch of cocoa powder

1. Put the butter and chocolate into a 350 ml mug and heat in the microwave for 10-20 seconds until melted. Add egg and milk to the mixture, beat with a fork or whisk until smooth.

2. Add sugar, flour, ground ginger and salt, beat well again. Stir in chopped ginger. Cut off the bottom of the pear so that the pear fits into the mug, and carefully place it on top of the dough.

3. Microwave for 2 minutes. 10 sec. at a power of 600 W, 1 min. 50 sec. at 800 W or 1 min. 30 sec. at 1000 watts.

4. Ready cupcake cool.

5. Drizzle with ginger syrup, lightly sprinkle with cocoa powder and serve.
