These meatballs with cabbage have been in our collection of family recipes for a long time, and it was like that. Once, many years ago, on a train, a fellow traveler shared what amazing cutlets she cooks with young cabbage. Her story was so emotional, tasty and colorful that upon arrival home we tried her recipe, and did not regret it, they turned out so tasty and juicy. Since then, cabbage cutlets have become frequent guests at our dinner table. And I cook them not only in spring and summer, when there is a lot of young cabbage, I cook all year round and put ordinary white cabbage. Be sure to try these meatballs.

Ingredients:

(4-6 servings)

  • 500 gr. minced meat
  • 200 gr. cabbage
  • 1 small onion
  • 1 egg
  • 80 gr. white bun
  • 100 ml. milk
  • 1 tsp salt
  • 1/3 tsp ground pepper
  • vegetable oil for frying
  • We take young cabbage, finely chop. Thin cabbage strips cut across. We salt the cabbage, and then rub it with our hands. After such a massage, the cabbage releases juice and becomes softer.
  • We combine cabbage with minced meat, knead well.
  • A small onion, about the size of an egg, finely chopped.
  • Soak the white roll in milk, remove the crust first.
  • Add the onion, the white bun soaked in milk and the egg to the minced meat.
  • I put salt and pepper. We knead the minced meat very well, then the cutlets turn out to be more tasty and beautiful, and do not fall apart when frying.
  • We form cutlets, roll each cutlet in flour.
  • Fry in a well-heated pan. First, we make the fire quite strong so that a crust forms faster, then we reduce the fire to medium.
  • We turn the browned cutlet onto another barrel, lightly fry.
  • Cover the pan with a lid and simmer the meatballs until tender.
  • Fragrant and very appetizing cutlets with white cabbage are served with a side dish or as an independent dish. By the way, cutlets can be cooked not only with cabbage, they are no less tasty and healthy.

I had one grandmother on my mother's side, I could not live with her, she was then 72 years old, she was very sick. I was placed in boarding school No. 10 in Minsk. At first I long could not get used to everything new: to everyday life, to the team, and especially to food, after my mother cooked at home, everything here seemed not tasty. But over time, I got used to everything.

Time passed, I grew up, I was 15 years old. It was from these years that I began to go on weekends to my grandmother in the village of Pleschanitsy. As I remember now, every Saturday I started by helping with the housework. She weeded the beds with cucumbers and tomatoes, and in the evening she met a cow from the pasture, heated the bathhouse, mainly for herself, since my grandmother did not go to it. On Sunday, things are also done, and just this day I remembered for the whole next week, I was looking forward to the end of the week. Before I left, my grandmother made cutlets for me.

At that time, I was not particularly interested, probably because I was small or just ate and enjoyed such yummy. I remember this taste for the rest of my life, I tried to cook the same ones for my classmates during the week, but nothing worked. When I brought cutlets from my grandmother, they all ate them, basically they didn’t leave me either, then they joked for a long time that they say don’t come back without grandmother’s cutlets.

My whole life in the boarding school flew by very quickly, so I graduated from it. At the age of 18 I entered the university, my grandmother was already gone by that moment. Accordingly, I had no one to go to the village. The first time I lived in a rented apartment with my friends. After 4 years I got married. My husband and I bought an apartment. I AM missed grandma's goodies for a very long time, and I miss her, she replaced my mom and dad, so what, that only on weekends, anyway, I felt the love of a loved one, which I didn’t feel while living in a boarding school.

On one of the warm July days, I suggested that my husband go to the village to throw out both the garbage and unnecessary things from my grandmother's house, in general, put things in order, and so that my betrothed could see where I spent the weekend of my childhood. We arrived there, he helped me in the attic, then I started throwing out the waste paper. It was then that I stumbled upon my grandmother's diary, in which the recipe for my childhood memories was written. It was called "Cutlets with Cabbage", turned out to be so simple that I myself was shocked. I want to tell you about it, I hope you will like it too!"

Wash the meat, pat dry and cut into small pieces. Skip the meat through a meat grinder. Wash the cabbage and cut into small pieces.

Peel onion and garlic.

Twist the cabbage, onion and garlic through a meat grinder and add to the minced meat. Soak white bread in water, then squeeze out excess liquid and pass through a meat grinder, add to minced meat.

Pepper and salt minced meat to taste.

Add a raw egg and semolina, knead the minced meat well. Then the minced meat should be beaten off so that during frying our minced meat patties with the addition of cabbage do not fall apart and keep their shape.

Form cutlets from the minced meat. Put them in a frying pan heated with vegetable oil. Vegetable oil should cover the bottom of the pan.

Fry cutlets with cabbage and minced meat on both sides over medium heat until golden brown (3-4 minutes on each side).

Delicious, juicy cutlets with cabbage and minced meat are ready. Serve hot.
