A pie with potatoes and liver can be prepared on the usual yeast - sponge or non-puff - dough. It, in turn, can be kneaded at home or bought ready-made in the store.



Boil potatoes, add to it butter and prepare puree without diluting it with milk. The filling for the pie must be dry. Boil the liver, pass it through a meat grinder, fry with onions in a pan and mix with mashed potatoes. The minced meat for the pie should be uniform and well molded.



Place the dough on a greased baking sheet, rolling it into a thin layer in the shape of a circle. Form a small cake from the filling and put it in the middle, and put the minced meat rolled into a sausage around the diameter.



Cover the filling with a second layer of dough, separate the central part with a bowl or saucer, and cut the edges into separate petals. Rotate each petal 90 degrees so that the filling is on top.



Let the cake rest for 30 minutes. When the dough has risen, brush the pie with egg yolk beaten with milk, and sprinkle the middle of the “flower” with cumin or sesame seeds. Bake until nice golden brown for 20-30 minutes.

Ingredients:

  • wheat flour - 3 tbsp.
  • vegetable oil - 125 ml
  • kefir - 1 tbsp.
  • fresh yeast - 25g
  • sugar - 1 tsp. l.
  • salt - a pinch
  • purple onion - 1 pc.
  • chicken liver - 250-270 g
  • boiled potatoes - 3 pcs.
  • dill - 15-20 g
  • spices to taste.

Cooking process


  1. Chicken liver, if it is frozen, completely defrost. Throw it on a sieve, let the excess liquid drain, then rinse it several times under a stream of cool water. Putting it in a saucepan, send it to the upper fire to cook until tender. Season the liver with salt and pepper. Boil for about 7-10 minutes after boiling water, be sure to remove the resulting foam.
  2. While the liver is cooking, prepare the dough. Pour the yeast into a clean, dry bowl, add granulated sugar. After rubbing the components together a little, let them play, five minutes will be enough.

  3. Well, at this time, in a ladle, combine a pinch of salt with butter and kefir. Warm up the liquid components to a temperature of 37-38 degrees.

  4. The yeast mixture has started to play, now you can continue the process.

  5. Pour the butter-kefir mixture into the bowl with the yeast.

  6. Sift the wheat flour there through a sieve.

  7. First with a spoon, then with your hands knead soft tender dough. Cover it with a clean kitchen towel and leave it warm for twenty minutes.

  8. While the dough is resting, mix boiled potatoes and liver twisted in a meat grinder for the filling. Throw in finely chopped dill. Peel the purple onion, wash it, grate half of the onion on a fine grater, finely chop the other half. Season everything with salt and ground hot black pepper. Mix everything.

  9. After the time has elapsed, the dough has increased several times, it's time to form future baking.

  10. Make two or three oblong sausages from the dough, dividing each into small pieces. Place a generous amount of filling in the center of each.

  11. Pinch the edges of the dough to form a ball. Do this for all tests.

  12. Transfer the blanks to an oiled form, cover them again with a kitchen towel, leave for 25-30 minutes. Brush with beaten egg yolk if desired and sprinkle with flax or sesame seeds. Bake the pies at 180 degrees for 25-30 minutes until the tops of the pies are a nice golden color.

  2. Peel and cut the onion into equal medium cubes, quickly fry for 1 tbsp. l. butter until half cooked.
  3. Put the liver in cold water, turn on the fire and cook until tender.
  4. Peel the potatoes, put them in salted bubbling water and cook until they begin to boil.
  5. Pass the finished liver and potatoes through the fine grates of a meat grinder, gently mix with onions, bring to taste with salt and pepper.

  3. Peel potatoes, boil in water with salt and mash into a smooth puree.
  4. Fry grated carrots, small onion cubes and pieces of liver in a small amount of refined sunflower oil. grind ready mix using a blender.
  5. Mix mashed potatoes, liver mass and grated cucumbers on a coarse grater.

Starting the process

  2. Take a saucepan and pour into it vegetable oil and kefir. We also add salt and send it to the fire to heat up to 37 degrees. Then pour this mixture into the yeast and mix.
  3. Then sift the flour in parts here and knead the dough. We put it in a separate container, pre-lubricated with oil and cover with cling film. We place in a warm place for 40 minutes.
