The laziest kurnik: a step-by-step cooking process

  1. We start cooking the pie with the filling. We wash the potato tubers, peel and rub on a coarse grater.

  3. Peel the onion heads, wash and cut into small cubes or medium-sized pieces.
  4. Put all prepared ingredients in a bowl, salt and pepper to taste. Stir thoroughly until smooth - and the filling is ready.
  5. Make the dough even faster. In a deep bowl we drive fresh chicken eggs, lightly shake them with a whisk or fork.

  7. Advice. If desired, you can replace mayonnaise with sour cream. But mayonnaise dough is much tastier.
  8. Mix wheat flour with baking powder, sift through a sieve and add to the mayonnaise-egg mass. Mix with a whisk the dough.
  9. Ready dough should be the consistency of pancakes, homogeneous and without lumps of flour.
  10. Cover the bottom of the mold with baking paper, grease vegetable oil bottom and sides.
  11. Pour one third of the dough into the mold. We level it along the bottom: the thickness of the dough should be about 0.5 centimeters.

There are two versions of where this cake got such an unusual name from. Some believe that its name is due to the fact that the filling is based on chicken meat. Others argue that the Cossacks came up with this name, because outwardly the cake reminded them of their housing - a large round chicken.     Step 3: Add Purified Water to Egg Mix

    Next, according to the recipe, pour a glass of purified water at room temperature into the mixture. Mix all the ingredients again with a whisk to make the mixture homogeneous.


    Step 4: Add the sifted wheat flour and salt to the mixture

    Next, add the sifted wheat flour of the highest grade to the mixture. We will do this in several steps to avoid the appearance of lumps. After adding some of the flour, mix the mixture thoroughly until smooth. Then we introduce the next part of the flour. In this way, add all the flour to the dough. To make it fresh, add a little fine salt and mix.


    The finished dough for the kurnik should be homogeneous and thick enough, like on pancakes.


    Step 5: Cut the Onion for the Stuffing

    Peel two heads of onions. It is better to use sweet lettuce without bitterness. Cut the onion into thin rings, as indicated in the recipe.


    Step 6: Chop the Mushrooms

    Wash and clean the mushrooms. If desired, other mushrooms, such as oyster mushrooms or chanterelles, can be used for this recipe. Cut the mushrooms into slices of medium thickness so that they are felt in the filling of the pie.


    Step 7: Preparing Chicken Meat for Chicken Stuffing

    For this dish, it is better to use chilled meat, rather than defrosted. Fresh fillets are juicier and more tender. Wash and dry the chicken fillet from excess moisture. We clean the meat from films and fat. Cut the chicken fillet into small square pieces, as required by the recipe.


    Transfer the chopped meat to a deep plate or bowl. Sprinkle the fillets with salt, pepper and chicken seasonings. I used curry, you can take ready mix spices for chicken or add your favorite spices: turmeric, dry garlic, ground ginger, basil, oregano. Mix the chicken fillet with spices and salt.


    Step 8: Trem raw potatoes on a large grater

    For the filling for this recipe, we will use raw ingredients that have not passed the preliminary heat treatment. Wash large potatoes and peel them. Grind it on a grater with large holes. This step is best done last so that the potatoes do not darken when exposed to air.


    Step 9: Preparing the Cake Mold

    If you are using a silicone mold, then it does not need to be pre-prepared. The metal form must be greased with odorless vegetable oil and covered with parchment paper. To make it more convenient to get the chicken out of the mold, it is better to use a detachable mold.

    Pour half of the batter into the bottom of the prepared pan. Using a silicone spatula, spread it evenly over the shape.

    Reduce the heat in the oven to 180 degrees. Carefully put the form with the pie on a baking sheet and send it to the oven. We will bake the dish according to the recipe for 45-60 minutes until golden brown on top. Check readiness with a wooden skewer or toothpick. Let's stick it in the pie for a few seconds. If it is dry, without traces of dough, the kurnik is ready. Carefully remove the finished product from the oven. Let the cake cool down a bit room temperature. Carefully remove it from the mold and cut into portioned pieces.


    Step 12: Serve the dish

    Serve the finished kurnik warm, garnished with fresh herbs. The dish goes well with fresh or pickled vegetables. Such a simple cake is convenient to take with you to work or to nature.

3 eggs put in a small saucepan and completely fill with ordinary cold water. We put the container on a large fire and wait for the liquid to boil. Immediately after this, slightly screw the burner and boil the hard-boiled eggs for 10 minutes. Step 2: prepare the chicken fillet.


Thoroughly wash the chicken fillet and put it on a cutting board. With the help of a knife, we clean the meat from veins, cartilage, films and excess fat. Next, cut the component into small pieces and transfer to a clean plate.

Step 3: prepare the onion.


With a knife, peel the onion from the husk and rinse thoroughly under running water. Then we spread the component on a cutting board and finely chop into cubes. Pour the chopped onion into a clean plate.

Step 4: prepare the filling for the chicken coop.


Pour a small amount of vegetable oil into a frying pan and place over medium heat. When the contents of the container warm up well, put the pieces of chicken fillet here. From time to time, stirring with a wooden spatula, fry the meat until most of the liquid has evaporated. Then pour the chopped onion into the pan and continue to cook the filling. At the end, when the components acquire a golden crust, add curry, freshly ground black pepper, and salt to taste. Once again, mix everything thoroughly with improvised equipment, fry for a couple of minutes and turn off the burner.

Fresh herbs can be added to the filling if desired. To do this, we wash a couple of sprigs of dill and parsley under running warm water, shake off excess liquid and put it on a cutting board. Finely chop the ingredients with a knife and pour into a common frying pan.

Next, wash green onion and cut it in the same way. Pour this component into the same container and immediately after that add chopped boiled eggs.
Using a tablespoon, mix everything thoroughly until smooth. Everything, the filling for the chicken is ready! I admit, I very rarely add fresh herbs to such a pie. The only thing when summer comes, I can add a couple of sprigs of parsley and one onion feather to the filling. And then see how you taste better.

Step 5: prepare the dough.


Using a knife, break the shells of the remaining eggs, and pour the yolks with proteins into a deep bowl. Here we add kefir and mayonnaise. Using a hand whisk, beat everything thoroughly until we get a homogeneous mass.

Now, in small portions, pour the flour into a sieve and sift it over a common container. Attention: in parallel with this, we continue to beat everything with improvised equipment so that lumps do not form. We should get the dough a little thicker than like pancakes.

Step 6: Cooking a Lazy Kurnik.
