Over the centuries, people who strictly adhere to religious rules and traditions have come up with many hearty and delicious meals which helped them to fully eat during long fasts.

Lenten honey gingerbread is one of the many old Russian dishes that is allowed for use in Lent, when the table is rather monotonous and meager. This is a real delicacy that allows working people, without violating the strict rules for eating products in fasting, to maintain and quickly restore their strength.

Many recipes for lean honey gingerbread are known. We offer only some of them, which will not cause difficulties even for novice cooks.

The main difference between lean gingerbread and regular gingerbread is that it is prepared without the use of animal fats, milk and eggs.

To get a delicious lean gingerbread, you will need the following products:

  • warm water - 250 ml
  • sugar - 1 cup
  • honey (preferably not candied, fresh) - 2 tbsp. l.
  • ground coffee or cocoa - 2 tbsp. l.
  • walnuts and large raisins (pitted) - each ½ cup
  • soda -1 tsp (or baking powder)
  • flour - 1 cup
  • vegetable oil (refined) - ½ cup
  • a pinch of ground cinnamon (if desired).

We add cinnamon and cocoa to the dough to give the baking aroma and color, and nuts, raisins and dried fruits to enrich the taste.

The recipe for lean gingerbread with honey involves several preparatory steps:

  1. Preparing the liquid base. Dissolve sugar and honey in boiled warm water. Add oil and mix.
  2. We process the rest of the ingredients. In another bowl, mix coffee (or cocoa) with spices, flour and soda (baking powder). You also need to add nuts and washed raisins there.
  3. We knead the dough. To make the lean honey cake tender and soft, you need to knead the dough correctly. To do this, we need a deep bowl, into which we first pour the previously prepared liquid base, and then add a mixture of bulk products. After thorough mixing, you should get a homogeneous mass (without lumps), thick, like sour cream.

Important: when kneading the dough, do not overdo it with flour. If you use it more than necessary, the dough will be more knocked down, dense and not loose enough.

  1. We bake. To bake a lean gingerbread, you will need an oven and any form that is suitable in size, on the bottom of which you need to put a piece of parchment paper or grease it with oil and sprinkle with flour. The oven must be preheated. We bake the cake for 45-60 minutes at a temperature of 200 degrees, checking its readiness with any wooden stick (if the cake is ready, it should be dry).

Important: the baking time in the recipes is recommended. In practice, it depends on the characteristics of your oven.

  1. We serve dessert to the table. Before offering a lean gingerbread with honey to guests or your household, you need to cool it, decorate it with powdered sugar, and cut it into equal pieces.
