510 g minced meat;

1. Rinse rice groats until clear water. Put it in a saucepan, pour boiled water and boil over low heat until half cooked. We recline on a sieve and cool.

  • Carrots - 1 pc.;
  • Sour cream - a couple of tablespoons;
  • Tomato paste - a couple of tablespoons;
  • Cheese - 70-100 gr.;
  • Egg;
  • Salt and spices.

Cooking hedgehogs in the oven

As mentioned above, rice does not need to be boiled. Mix it in a cup with minced meat and finely chopped onion. Add one egg for viscosity. If the mass sticks to your hands, then moisten them with cold water. Don't forget to salt and pepper.

After obtaining a homogeneous mixture, we proceed to the formation of hedgehogs. Choose their size as you wish. Some people like large balls, and after eating one of these, you can already get enough. For some, small hedgehogs are preferred.

  • 3 tomatoes;
  • 1 medium carrot;
  • 1 tbsp flour;
  • salt, sugar, pepper, herbs.

Cooking steps:

  1. Boil rice until half cooked.
  2. To form “hedgehogs”, we take twisted meat, finely chopped onion, cooled rice, egg, add salt and pepper, mix thoroughly.
  3. We roll small koloboks from the resulting minced meat, which should be laid out on the bottom of a thick-walled stewpan or pan. There will be a lot of gravy, so whatever the chosen container, its sides should be high.   5. Fry the meatballs in oil on all sides. Our hedgehogs are ready! Sauce can be prepared upon request.
  6. Mixing sour cream, preferably homemade, tomato leaves, a little salt and hot water, mix.
  7. Pour the gravy to our "hedgehogs", simmer until the sauce thickens over low heat. Usually this action takes no more than half an hour.

Hedgehogs - cooking recipe in a saucepan

This recipe is dedicated to all connoisseurs of simple, but very tasty and satisfying dishes.

For its preparation it is necessary:

  • 0.9 kg of minced meat;
  • 100 g of rice;
  • 1 onion;
  • ½ st. homemade cream4
  • 2 tbsp. milk;
  • 100 g butter
  • 2 garlic cloves;
  • 2 yolks.

Cooking steps:

  1. We rub the peeled onion on a coarse grater or pass it through a blender.
  2. Mix the minced meat with rice and onions until smooth.
  3. From the rice-meat mass we form koloboks 5 cm in diameter.
  4. We put a small piece of butter on the bottom of a thick-walled pan, after it has dispersed, put the meat balls on top, fill them halfway with water, cover with a lid and bring to a boil. After that, the fire can be reduced to a minimum. The total quenching time is about 45 minutes, while the "hedgehogs" should be periodically turned.
  5. Cooking cream sauce in a small saucepan. At its bottom, melt 50 g of butter, fry chopped garlic on it, after a minute add cream, and after a couple more - milk. We do not bring the mixture to a boil, simmer over low heat for about 5 minutes.
  6. Beat the yolks thoroughly, pour in the sauces for the future, continue to simmer for another 10 minutes. The main thing is not to bring to a boil! We add to taste.
  7. Remove the prepared meat balls from the heat, pour the sauce and let it brew.

Hedgehogs in sour cream sauce

Required Ingredients:

  • 0.5 kg of minced meat:
  • 0.1 kg rice;
  • 1 egg;
  • 1 carrot;
  • 1 onion;
  • 100 g of oil;
  • greens, salt, pepper;
  • 50 ml of tomato sauce;
  • 200 g sour cream;
  • 0.5 l low-fat broth;
  • 1 tbsp in / with flour.

Stages of cooking "hedgehogs" in sour cream filling:

  1. We wash the rice to clean water, boil it, put it in a colander and rinse again, let the excess liquid drain.
  2. Peel and chop the onions and carrots by hand or in a blender, fry them in half the oil.
  3. We beat the egg.
  4. Finely chop the greens.
  5. Add the cooled rice, fried vegetables, tomato, egg, chopped greens to the minced meat, add salt, pepper and knead thoroughly by hand.
  6. We form koloboks from minced meat, fry them a little.
  7. Pour flour into a clean and dry hot frying pan, fry it until it acquires a golden hue, remove from heat, cool. Separately, mix sour cream with warm broth, pour the resulting mixture into flour, mix until smooth, add.
  8. We spread the "hedgehogs" in a deep form not close to each other, pour the sauce. Bake in the center hot oven about 45 minutes. Serve sprinkled with herbs, accompanied by vegetable salad.

Try to make your own minced meat. If you take a store-bought, give preference to a chilled product, and not from a deep freeze. We recommend that you pass the purchased minced meat through a meat grinder again, otherwise large pieces may come across.

If you moisten your hands in cool water before starting to form the "hedgehogs", then the minced meat will not stick to your palms.

Steamed hedgehogs are a dietary version of your favorite dish. After readiness, they can be poured with low-fat sour cream diluted in water and simmered for about 5 minutes.

An excellent side dish for "hedgehogs" will be crushed potatoes, vegetable salad, buckwheat porridge.

If the minced meat is passed through a meat grinder several times, it will become more tender. For one "hedgehog" is about 2 tbsp. tablespoons of minced meat, this volume allows it to be well stewed and keep its shape.

The secret of the “hedgehogs” is that this cereal is put in minced meat either undercooked or even raw.

Ingredients

  • For minced meat:
  • meat - 800 g;
  • rice - 1 cup;
  • medium-sized onion - 2 pcs.;
  • large carrots - 2 pcs.;
  • eggs - 1 pc.;
  • vegetable (or butter) oil - for frying;
  • flour - for breading (optional);
  • salt - to taste;
  • black ground pepper- taste;
  • greens (for serving).
  • For sauce:
  • water or broth - 3 cups;
  • sour cream - 6 tablespoons;
  • flour - 2 tablespoons;
  • salt, pepper - to taste.

Cooking

To cook meat “hedgehogs” with rice in a pan, first we wash the cereal in several waters: each subsequent portion of water should be warmer than the previous one, the last one should be almost hot. Then fill it with water two fingers above the cereal and leave to swell.


Meanwhile, peel and finely chop the onion. In order not to cry, you can slightly open your mouth and breathe through it, and not through your nose - it helps a lot! Lightly fry the onion in a pan vegetable oil.


We clean, wash and grate the carrots, put them in a frying pan and fry in vegetable (or butter) oil until half cooked.


We twist the meat in a meat grinder. Which meat is best? Better take a mix different types: pork, beef, poultry - it will turn out much tastier. The proportions are at the discretion of the hostess or according to what kind of meat was found in the refrigerator. If there is only one species, it does not matter either. Ready stuffing, bought in a store, is also recommended to pass through a meat grinder.
Combine minced meat, finely chopped onion, fried carrots in one bowl, add eggs, salt, pepper and mix thoroughly.


Mix ingredients for the sauce.


We form balls with a diameter of 5 centimeters. It will turn out better if you periodically moisten your hands in cold water.


We lightly fry our "hedgehogs" in a fairly well-heated pan in vegetable oil on all sides. If you want more diet dish, then hedgehogs can not be fried.


Pour the prepared sauce over the hedgehogs. Heat over high heat until boiling, then reduce the heat. You can add to the sauce fresh tomatoes or 2 tbsp. tomato paste.


Simmer the dish over low heat for about half an hour.


7-10 minutes before readiness, you can put finely chopped fresh onions, herbs, seasonings to taste in the gravy. You can put crushed garlic in the pan during stewing, which will give the dish a peculiar, very appetizing aroma. A few tablespoons will add piquancy to the gravy soy sauce.
We put the finished “hedgehogs” on a plate, pour the gravy in which they were stewed on top, sprinkle liberally with herbs (parsley, cilantro or any other) to taste. You can decorate the dish with slices of fresh bell pepper, tomatoes.


Hedgehogs with rice cooked in a pan are good on their own. But you can also submit them with mashed potatoes or pasta as a side dish.
As you can see, our little prickly meatballs turned out beautiful and fragrant so much that they themselves ask in the mouth.
