This jam pie was supposed to bear the proud name of Gagarin's Pie. Should have, but didn't. Pie recipe, which caught my eye under this name, turned out to be not at all the pie for which he pretended to be. And I had to change the recipe a little during the baking process.

Pie Ingredients:

Jam (thick), marmalade, jam or confiture - for filling (it is better to take with sourness)

Potato starch- for sprinkling jam filling

A pinch of salt - for the meringue

Pinch citric acid- for meringue

For sand dough:

Flour - 2.5 cups (a glass of 200 grams, which includes 140-150 grams of sifted flour)

A pinch of salt

1 teaspoon baking soda (no top)

200 gr. butter or margarine (chilled)

Eggs - 4 pieces (whites for filling, yolks - for dough)

Milk - 0.5 cup (approximate amount) Note: a small amount of milk may be needed if the dough is hard and will not mix into a lump

Sugar - 1 cup (half a cup - for the dough (mixed with yolks), the other half of the cup - for the filling (meringue)

Cocoa powder - 1.5-2 tablespoons (in the dough)

Grated pie - recipe for pie with jam (jam):

Sift flour along with baking soda.

Here we rub on a grater butter, add salt

And rub the mass with your hands to get a small crumb.

In another cup, mix the yolks with half a glass of sugar and grind well, preferably to such a state that there are no sugar grains left.

We combine both masses, mix.

If the dough cannot be gathered into a lump, pour milk in small portions until the dough can be mixed, but at the same time so that it does not turn out to be too soft.

We divide the dough into three unequal parts: two identical - smaller and one larger (this part will be the basis for the pie). Mix one of the small parts with cocoa.

The finished dough does not mix well with cocoa, and uneven coloring may result. Do not worry, this will not affect the taste of the pie and do not knead this piece for a long time so as not to disturb the structure of the shortcrust pastry.

We put the largest piece in the refrigerator, wrap the smaller pieces, each separately, in polyethylene, and put them in the freezer (for about 1 hour).

While the dough is freezing, make meringue for pie.

Start beating the egg whites with a mixer at a low speed, gradually moving to a higher speed. While beating, add a pinch of salt. When the proteins increase in volume, gradually add sugar and beat until we get meringue. At the end of whipping, add a pinch of citric acid. Meringue should be whipped until stable, as in the photo. Look, such an interesting figure turned out when I shook the meringue from the mixer blades into the total mass. As you can see, the meringue perfectly “holds its shape”.

Grease a baking dish with oil. We take out the largest piece from the refrigerator and rub it directly into the mold on the largest grater, evenly distributing it over the entire surface and making small sides. Then you can lightly press down and distribute this layer with your hands.

Spread it with jam.

Sprinkle the surface of the jam with starch. Next, rub the second piece of dough with cocoa on top of the jam.

Winter is knocking on the window. And, as you know, winter is the time of citrus fruits, which filled the counters of shops and fruit shops in large quantities and variety. And why not bake a pie from tender soft dough, in which the filling is dressed with a light sweetish aroma of citrus, and melting in the mouth, covered, like snow, with a delicate protein cream.   • wheat flour premium- 200 grams
  • baking powder for dough - ½ teaspoon
  • butter - 100 grams
  • granulated sugar - 40 grams
  • yolk - 2 pieces
  • finely grated lemon zest - 1 tablespoon

For filling:

  • lemon - 1 piece (about 150 grams)
  • orange - 2 pieces (about 300 grams)
  • chicken egg - 4 pieces
  • sugar - sand - 150 grams
  • wheat flour of the highest grade - 60 grams

for protein cream:

  • protein - 2 pieces
  • salt - a pinch
  • sugar - sand - 4 tablespoons

as well as:

  • baking dish with a diameter of 24 - 26 cm.

Cooking

  1. Sift flour into a deep cup, add baking powder for dough, sugar - sand and finely grated lemon zest, mix well.
  2. Add the butter, cut into small pieces, into the flour mixture. Grind the butter with the flour mass with your hands until a “wet” crumb is formed.
  3. Add the yolks to the butter-flour mass and knead a soft, elastic dough.
  4. Wrap the prepared shortbread dough in cling film and place in the refrigerator for 20-30 minutes.
  5. Wash lemons and oranges well with hot water, you can even use a brush to wash off the chemicals that are often sprayed on them before transport.
  6. Remove the zest from the lemon using a fine grater.
  7. Pour the required amount of sugar into a deep cup, add finely grated lemon zest, mix and leave for 10 minutes.
  8. Pour flour into sugar mixture and mix well.
  9. Squeeze juice from oranges and lemons with a citrus juicer. It turns out about 250 milliliters of juice.
  10. Pour the lemon juice into the sugar mixture and mix well.
  11. Then beat the eggs into the sugar mixture, with lemon and orange juice added to it, mix well until smooth and leave for 20 minutes, stirring from time to time.
  12. Remove the dough from the refrigerator, roll out into a round layer about 2 millimeters thick. Place the rolled out dough in a mold greased with vegetable oil or lined with parchment paper.
  13. Pour the filling onto the cake, which is pre-mixed well.
  14. Bake the citrus pie in an oven preheated to 180 degrees for about 40 minutes, the filling of the pie should become dense.
  15. While the cake is baking, prepare protein cream. To do this, first beat the proteins with salt with a mixer, and then add the required amount of sugar - sand and continue to beat until stable peaks.
  16. Remove the citrus tart from the oven, let it cool slightly, and then decorate with protein cream using a pastry syringe or simply by spreading the cream with a teaspoon.
  17. Return the citrus cake topped with protein cream to the oven. Continue baking at 160 degrees for 15 minutes.
  18. Remove the finished citrus tart from the oven, cool completely and cut into portions.

Note to the owner:

  • citrus pie can not be decorated with protein cream, but simply sprinkle plentifully of citrus filling with powdered sugar;
  • you can, for example, use only lemon juice or orange juice for the filling.

To obtain a lush foam, the proteins must be well chilled, you need to beat in a clean, dry enameled or ceramic bowl. Carefully separate the yolks from the proteins, otherwise if a little yolk gets into the proteins, then there is a chance that they will not whip. For the cream, I use powdered sugar instead of sugar - it is easy to whip and due to the fact that the grains of sugar do not need to dissolve, the foam is lush and strong.


Add a pinch of salt and a couple of drops of lemon juice to the proteins. Beat with a whisk until airy foam is obtained. If you are using a mixer, beat at the lowest speed first.


Next, add powdered sugar, 1-2 tbsp. until a thick foam is obtained. Cream of whipped proteins is ready.


Peel the apples from the skin and cut them into slices, slices or slices (as you like)


Take the dough out of the refrigerator. Spread 1/3 of the dough all over a baking sheet lined with parchment paper.
