We present to your attention a recipe for very tender pies stuffed with dried apples.

My household loves pies with different fillings. And these are their favorites. They turn out ruddy, lush, very fragrant and incredibly tender. The filling will conquer everyone. It is very easy to cook them, so even a novice hostess can handle it. Save the recipe and delight your loved ones with such delicious pastries.

Required Ingredients

For the test

  • 300 gr wheat flour
  • 15 gr pressed yeast
  • 35 gr butter
  • 1 egg
  • 45 gr granulated sugar
  • 120 ml warm water
  • a pinch of salt

For filling

  • 200 gr dried apples
  • 70 gr granulated sugar
  • cinnamon to taste

For lubrication

  • 1 yolk
  • 2 teaspoons of milk

Starting the process

  1. First of all, we place yeast, granulated sugar and water in a separate container. Mix well and leave for 10 minutes in a warm place in this form. After the required time has elapsed, the dough should come up.
  2. Sift flour into a separate container, add salt and granulated sugar. Mix everything well and make a well in the center, into which we drive in the egg and pour in the activated yeast. Then gently mix and as a result we get a sticky dough.
  3. We melt butter and send it to the rest of the ingredients. We knead everything well and collect in a lump. The dough is smooth, soft and elastic. It shouldn't stick to your hands. Transfer it to an oiled bowl and cover with cling film. We send to a warm place for 30-40 minutes.
  4. Let's start preparing the filling. To do this, wash the dried apples with warm water and transfer them to a saucepan. Pour water here, put on fire and cook until soft. After the required time has elapsed, we throw them on a sieve and pass through a meat grinder with a fine grate. After that we send the ships granulated sugar and cinnamon. We mix everything well.
  5. We divide the prepared dough into 10 parts, each of them needs to be rounded. Then you need to cover them and leave for 10 minutes. After the required time has elapsed, sprinkle a little flour on the work surface and roll each ball one at a time into a small cake. On the sides, stepping back one centimeter, you need to make vertical cuts, and in the center - place the filling. Then you need to stretch one edge through the incision on the opposite side. Thus, we form all the pies and place them on a baking sheet, which we previously covered with baking paper. Then cover everything with a towel and send it to a warm place for 30 minutes.
  6. In a separate container, we combine milk and water, mix well and grease our products with the prepared mixture after the required time has elapsed. Then we send it to the oven, preheated to 180 degrees, for 20 minutes.

Cooking pies with dry apples

1. Dissolve yeast in warm milk with 1 tbsp. a spoonful of sugar and flour to the consistency of sour cream. Let the dough stand in a warm place for 40-50 minutes until active fermentation.

2. Add melted warm margarine, the rest of the sugar, vanilla sugar, salt, eggs to the dough. Stir the mixture.

3. Add a little flour and baking powder and knead the dough. It should be not too thick, slightly sticky.

4. Cover the dough and place near a heat source for 50-60 minutes to rise.

5. Punch down the doubled dough with greased hands. vegetable oil, knead and let the dough rise again in the heat (about 30 minutes).

6. For the filling, pour boiling water over the drying apples, sweeten the water and boil slightly until soft. Drain the water and pass the apples through a meat grinder. Add plum or any other jam, mix. The filling is ready.

7. Divide the dough into rollers, cut them into equal pieces from which roll out the cakes.

8. Put the filling in the middle of each cake, make two longitudinal cuts through the opposite edges.

9. Fold the edges of the slits over the filling one over the other to make open pies.

Grate the frozen butter, mix with flour, grinding in your hands, add eggs, slaked soda, sugar and salt, and knead a tight dough, which should be kept as little as possible in warm hands. Roll out thin two sausages and send to the freezer for 30-40 minutes. While the dough is cooling, twist the apples in a meat grinder and mix them with sugar and syrup.
Get the first piece of dough, you can initially make it a little more than the second half, and roll it into a low layer of the bottom layer of the pie, piercing it with a fork so that the dough rises evenly. These days, fresh apples can be bought at any time of the year, but, nevertheless, dried apple pie is one of the most popular desserts. The reason is simple - this pastry has a peculiar and very pleasant taste, of course, if it is cooked correctly.

The dough for such a pie may be different. You can knead fluffy yeast dough or buy a ready-made puff, but you will have to prepare the filling yourself. To make it tasty, you need to know a few secrets.

First of all, you need to choose high-quality dried fruits. It is good if they were completely de-seed before drying. Fruits dried in slices or halves without removing the pits are suitable for making compotes, but it is better not to use them in pies, since the hard plates of the testicles do not “give in” to the blender, and their presence will spoil the taste of the finished dessert.

Before preparing the filling, be sure to rinse the apples, and then pour a small amount of boiling water (the water should be flush with dried fruits). We put the pan on the stove and cook until the fruit is soft. Then put the apples in a colander.

Advice! In no case, do not leave boiled dried fruits to cool in water, otherwise they will lose their taste.

Punch soft apples with a blender or pass through a meat grinder. The base of the filling is ready, now you need to bring it to taste. Instead of sugar, it is better to add powdered sugar or honey. You can also add jam or jam. And if you use granulated sugar for sweetening, then diligently stir the puree so that all the grains dissolve. Yeast cake with dried apples

Everyone will like a delicious and soft yeast dough pie. Many people are afraid to cook yeast dough, although there is nothing particularly difficult to prepare. However, even if there is no desire to mess with yeast, you can always buy ready dough in the shop.

For the test you will need:

  • a bag of dry yeast (weight 11 gr.);
  • 0.5-0.6 kg of flour, the exact amount of this product cannot be determined, everything will depend on the properties of the flour;
  • 2 tablespoons of sugar;
  • 100 gr. butter (melted butter or vegetable);
  • 150 ml of milk (you can use the same amount of whey or kefir).

To prepare the filling, you need 300 gr. dried apples and sugar to taste. If desired, you can use honey or jam instead of sugar.

Let's start with the dough. We heat the milk to about 36-40 degrees, pour yeast and half a tablespoon of sugar into it. Mix well so that there are no lumps. Cover the dish with a lid or film and leave for 15-20 minutes.

Meanwhile, sift the flour through a sieve. Do not be lazy to do this procedure, this will allow you to get an easier and air dough. We collect the flour in the form of a slide, making a small depression at the top.

Pour the risen yeast into the recess in the flour, stir. Then pour in the oil. If we use melted butter, then make sure that it is not hot, otherwise the dough may not rise.

Knead the dough well with a spoon, and then spread it on a floured board and knead with your hands. Knead until it stops sticking to your hands. But do not overdo it with flour! The dough should be soft and not "clogged".

We roll the dough into a ball, put it in a bowl with high sides, cover with a clean towel and leave for an hour and a half. During this time, we will come up once and take the risen dough.

By the time the dough has risen a second time, the filling should be ready. To prepare it, boil dry apples, chop and season with sugar. Others are optional additions.

Now let's start forming the pie. There are options here. You can just roll the dough into a cake, lay out ready stuffing in the center, wrap and pinch the edges, giving the product a rectangular or oval shape.

Lay the pie seam side down on a greased sheet. To make the pastry look more beautiful, leave a piece of dough, roll it out and cut out flowers, leaves and other decorations. "Glue" the decor of the dough on the surface of the cake with a whipped yolk.

You can cook an open pie. To do this, the dough is divided into two parts. The first is rolled out to a thickness of 1.5 cm, spread on a greased baking sheet. Spread on a cake ready apples, slightly retreating from the edges. From part of the remaining dough, sides are formed. To do this, you can roll out three flagella from the dough and braid them into a pigtail. The center of the cake can be decorated with a lattice. To do this, the dough is rolled into thin flagella and spread first along and then across.

The formed cake is left in a warm place for proofing for 20-30 minutes. After that, grease the product with whipped yolk. Now you can put the cake in the oven. Approximate baking time - 30-35 minutes (at 180 degrees)

"Quick" kefir pie

If it is not possible to waste time preparing yeast dough, you can use quick recipe, having prepared the basis of the pie on kefir.

We will need:

  • 1 glass of kefir or any other fermented milk product;
  • 2 cups of flour;
  • 200 gr. quality margarine for baking;
  • 1 egg;
  • 200 gr. dried apples.

Let's start with the preparation of the filling. Pour dried fruits hot water for 10 minutes, then dry and cut. If the apples are overdried and not soft after soaking, then they are not suitable for this baking.

Boiled dry apples contain too much liquid, so they should not be added to the dough.

Now you can turn on the oven, as the dough cooks very quickly. Set the thermostat to 180 degrees and start kneading.

Cut margarine into pieces and melt it over low heat or in microwave oven. Pour the flour into the same bowl, add the baking powder and mix well. Beat the egg with the addition of granulated sugar, combine both mixtures. Sift flour into a bowl and knead a thin dough. Add chopped apples to it.

For baking, you need a form, it can be metal or silicone. The latter option is more convenient, since you do not need to use baking paper. We fill the form with dough and put it in the oven for 25-40 minutes. The time depends on the oven. Readiness of baking is easy to check with a toothpick. Stick a stick into the cake, if after removing it remains dry, then the dessert is baked.

Sand cake with sour cream

Prepare:

  • about 2 cups flour (may need more)
  • 200 gr. quality margarine or butter;
  • 1 egg;
  • 1.5 teaspoons of baking powder;

  • 300 gr. thick sour cream;
  • 2 tablespoons of starch;
  • 2 teaspoons vanilla sugar;
  • 200 grams of dried apples%
  • a few spoons apricot jam(or any pitted jam).

Boil apples, chop, mix with jam or jam. The amount of jam is determined by taste.

Preparing the sand layer: Sift flour, add baking powder and sugar. We put butter cut into small cubes in flour, rub with a fork until crumbs are obtained. Add the beaten egg and knead the lump of dough. Put the dough in a bag and place it in the refrigerator.

Roll out the chilled dough so that the layer is larger than the diameter of the mold. We put the dough into molds, forming sides. We prick the bottom with a fork and put in the oven for 15 minutes (heating 180 degrees).

While the base is baking, beat sour cream with granulated sugar and starch, add a little vanillin to the cream.

We take out the form, lay out the filling and pour the cream filling, set to bake for another half hour. Let cool and only then take it out of the mold and cut into portions.

Spiral puff pastry pie

An unusual pie can be made from puff pastry.

We will need:

  • ready-made dough (buy in the store) - 500 gr. (you can take yeast and yeast-free to your taste);
  • dry apples - 300 gr.;
  • sugar, jam or honey - to taste;
  • yolk for lubrication;
  • you can take poppy seeds for sprinkling.

Prepare the filling from dry apples - boil, chop and mix with sugar to taste. You can replace sugar with jam or honey. Defrost the dough, roll out, cut into long strips 5-6 cm wide.

In the center of each strip we lay out the filling in the form of a roller, pinch the edges in the form of a “sausage”.

It is convenient to bake this cake on a silicone mat, on which concentric circles are applied, but a round shape can also be used. We roll the first “sausage in a spiral, then attach a second strip to it and continue to lay it out in a spiral. Make sure that the seams on the sausages are directed towards the inside of the pie. Lubricate the surface with yolk, sprinkle with poppy seeds.

  • 2 liters of cold water;
  • 0.5 loaves of Borodino bread or 100 grams rye flour+ 100 grams of rye bread;
  • 4 tablespoons of granulated sugar;
  • 3 grams of yeast.
  • Cooking time - 5-6 days

How to put kvass:

  • Fry flour or slices of bread until it darkens (but does not char, it is sometimes difficult to understand with black bread: it is just fried or already burnt).
  • In slightly warm water, dilute the yeast and 1 tablespoon of granulated sugar.
  • After 10 minutes, add a third of the flour or breadcrumbs.
  • Drain almost all the water, add the same amount of fresh water, another spoonful of sugar and another third of crackers or flour with crackers.
    And once again insist a couple of days.
    Drain again, add the remaining crackers (or flour with crackers) and sugar. And refill with fresh water.
    During this time, the sourdough will lose its brazen yeasty taste and unpleasant bitterness, and it will be possible to put drinking kvass on it. To do this, once every 1.5-2 days, it will be necessary to add water, sugar to taste and a large handful of fresh rye crackers to a three-liter jar with prepared sourdough, before removing a little old soaked and sinking to the bottom.
