Freeze

By freezing cherries correctly, you can preserve all the vitamins and minerals contained in this delicious berry for a long time. First you need to decide in what form you will eat cherries in winter - with or without seeds. With bones, it is perfect for compotes and other drinks, and without - for filling in pies or dumplings.

If you decide to freeze in its pure form, then the first step is to select high-quality fruits - damaged or overripe ones will not work for storage in the freezer. The selected sweet cherry is well washed, all the stalks and leaves are removed. Before sending it to the freezer, it should dry well. Place the washed, dried berries on a wide dish, it is desirable that the berries do not touch each other. Freezing is enough for 3-4 hours in the freezer. After complete freezing, the berries can be packaged in a container convenient for you and sent to the freezer until the onset of cold weather.

Important! In order for frozen berries to retain their aroma and taste for a long time, follow the rules for storing them in freezers: store in sealed packaging, store meat and fish products away from berries, try not to re-freeze already thawed foods.

First of all, the berries need preliminary preparation - to speed up the drying process, they are poured over with boiling water and the skin is slightly cut in several places. Then they are placed in an electric dryer or oven. The temperature at which the process will proceed should not exceed 70-75 °C. If you are drying in the oven, then the door must be open. The drying time is 16-18 hours. It is very easy to check the readiness of the fruit - the finished drying has a burgundy, almost black color, does not release juice when pressed, and it does not stick to hands at all.

Cherry jam is one of the most popular winter treats. There are a huge number of ways to cook it: with or without bones. We will tell you an easy recipe for making very tasty stoned cherry jam. Of the ingredients you will need:

  • berries - 1 kg;
  • sugar - 1-1.2 kg;
  • vanillin - a pinch.
Ripe berries are selected in the jam, spoiled and rotten ones are removed. Berries are transferred to the pan, covered with sugar on top and gently mixed. In order for the sweet cherry to release juice and be saturated with sugar, add vanillin and let it lie down for 2-3 hours. After that, the pan is put on a small fire and, stirring occasionally, boil. During the cooking process, sweet foam will appear - it must be removed. The jam is boiled for another 2 hours, but the fire must be slightly increased. It is easy to check the readiness - in the finished form, the consistency of the syrup should be obtained. The cooked jam is poured into sterilized jars and put away in a warm place for storage.

Compote

Lovers of delicious drinks will love our cherry compote recipe for the winter. In order for the compote to be enough for everyone, the proportions are calculated for three-liter jars:

  • sweet cherry - 5 glasses;
  • sugar - 1.5-2 cups;
  • water - 3 liters.
The cherries are washed, spoiled fruits are selected, the stalks are removed. Berries are poured into a pre-sterilized jar and poured with boiling water on top. A jar of berries is left to infuse for 15-20 minutes. Next, the water is poured into a separate pan, covered with sugar on top and put on fire - this is how cherry syrup will be cooked. The syrup will be ready when the sugar is completely dissolved. Ready syrup is again poured into the berries in a jar and screwed on top with a lid. Until the compote is completely cooled, the jars are placed with the lids up.

Important! If the technology for preparing your blanks involves sterilizing the jars in a large saucepan, then in order to prevent them from cracking during the cooking process, cover the bottom of the saucepan with a thick towel.


In own juice

There are two options for canning cherries in their own juice - with and without pre-sterilization. We will tell you about both. Recipe in own juice with pre-sterilization (per 1 liter jar):

  • sweet cherry - 700-800 g;
  • sugar - 100-150 g;
  • water - 500 ml.
The berries are carefully sorted and washed under running water, the stalks are removed. Berries and sugar are poured into a sterilized jar, boiled water is poured on top. Next, jars with cherries must be sterilized. Prepared jars are placed in a large saucepan at the bottom, pour water on top and boil for 15-20 minutes. After sterilization, the sweet cherry will release its juice and it can be hermetically sealed with a lid. Until completely cooled, the jars are turned upside down. Recipe in own juice without sterilization:
  • cherries - 2 cups;
  • sugar - 1 glass;
  • citric acid - 1 teaspoon.
Selected and washed berries are poured into sterilized jars, covered with sugar and citric acid. Boiling water is poured from above almost to the neck of the jar. As soon as boiling water is poured - immediately close the airtight lid. This recipe is very simple, even a beginner can handle it.

Jam

Jam is perfect for filling pies and buns. We suggest you cook jam according to the following recipe:

  • berries - 2 kg;
  • sugar - 1 kg.
To prepare jam, you can take slightly overripe fruits, they are washed and the bones are removed. Pour the ingredients into the pan and add a little water. We begin to cook jam - first on a small fire, gradually increase it. The main thing is not to forget to stir. Jam is considered ready when in the process of stirring a spoon leaves a mark on the bottom of the pan. The finished delicacy is poured into jars and closed with a lid on top. It is best to store jam in the refrigerator.

Jam

If in your garden this summer a large crop of sweet cherries has disfigured, then we suggest you prepare fruits in the form of jam for the winter. To prepare it you will need:

  • sweet cherry - 1 kg;
  • sugar - 500 g;
  • zest of half a lemon.
The fruits are covered with sugar and left for half an hour. During this time, the sugar will melt, and the cherries will release their juice. Next, put the pan on the fire and bring to a boil. While the jam is boiling, you stir it. Boiled fruits are cooled and ground. You can grind both with a blender and manually - using a strainer. Pureed with sugar

This is the simplest type of winter preparation - in our recipe, only berries and sugar are ingredients. The fruits are washed, the bones and stalks are removed. The proportions for 500 ml of such “cold” jam are 2 cups of sugar and 2 cups of cherries. The technology of preparation is very simple - berries and sugar are ground with a blender into a homogeneous mass. The finished product is poured into a convenient container and left to be stored in the refrigerator until winter.

Dried

The technology for preparing dried cherries is in many ways similar to preparing dried cherries. But in this recipe, the berries will be dried in the fresh air, without the use of an electric dryer or oven. First of all, the sweet cherry must be prepared - thoroughly rinse the selected berries. It is best to use running water. Remove leaves, stems and seeds. Prepared berries are covered with sugar, approximate proportions are 1 kg of sugar per 2 kg of cherries. Cherry with sugar should stand for a day in a cool place - this is done so that excess juice comes out, and the berry itself is saturated with sweetness.

The next step is to prepare the sugar syrup. Stir sugar in water (for 2 kg of cherries, the approximate amount of ingredients is 600 g of sugar and 600 ml of water) and put on fire. Our berries should boil in boiling syrup for 6-8 minutes. Be sure to let the fruits drain the excess juice - this will significantly speed up the drying process, and then spread it on a baking sheet or tray in one layer. In this form, it will be necessary to leave the berries for several days, after 3-4 days, carefully turn each berry on the other side and let them dry for 7-10 days. Berries should be dried in a dry and well ventilated place. Such a delicacy is stored in exactly the same way as dried cherries - in glass jars and in a cool place.

Marinated

Cherries, closed for the winter in a pickled form, will definitely surprise your household with an original spicy taste. In this form, it perfectly emphasizes the taste of meat dishes, and is also an unusual snack for the festive table. Preparing pickled cherries is very simple, now you will see for yourself. For convenience, the calculation of spices and marinade for harvesting is designed for a jar with a volume of 500 to 700 ml, choose for yourself which one will be convenient for you:

  1. To prepare a mixture of spices: cloves, white pepper and allspice - 3 pcs each, bay leaf - 1 pc, currant or cherry leaves - 1 pc each, white grain mustard - 0.5 teaspoon;
  2. To prepare the marinade: boiled water - 1 l, table vinegar - 250 ml, sugar - 100 g.
As in previous recipes, the preparation of cherries begins with its preparation: the berries are washed, sorted, you can leave the stalks on half of the berries - this will give the treat a decorative look.

Let's start by preparing the marinade for the blanks. Water, vinegar and sugar are mixed in a saucepan, which is placed on the stove. Until the marinade boils, stir it occasionally. Cherry is placed in a jar and covered with a mixture of spices. Try to fill the jar tightly with berries, but make sure that they do not start to choke or burst. Fill jars with berries with boiled marinade to the very top, the main thing is that each berry is immersed in spicy water.

Many housewives advise pasteurizing blanks after closing. This process is recommended for berries and fruits, which are characterized by high acidity. Pasteurization will take 15-20 extra minutes, but you will have peace of mind that your preservation will last until the end of winter or even longer. Take a large saucepan and place a jar of pickled cherries on the bottom. Fill with water almost to the lid and put on fire. After the water boils in the pan, let the jars “boil” for 15-20 minutes. After carefully remove the blanks and place the lids down.

Cherries- one of the first summer berries. Cherry fruits can be red, yellow and pink. Cherries contain vitamins B1, B2, C and P, as well as provitamin A, or carotene. Like any other fruit and berry, it is preferable to eat it raw, especially considering that the cherry season is short. However, if you like to experiment, take note of what can be prepared from cherries.

Sweet cherries are good as a dessert, as well as decorating cakes, adding to ice cream, and baking. Late cherries are dried, frozen, compotes, preserves, jams, aromatic liqueurs are prepared from berries.

1. Cherry and orange soup
Delicious refreshing dessert: easy to prepare, quick to eat.


Ingredients: orange - 2 pieces, cherry - 450 g, cinnamon - to taste, sugar - 100 g, white wine - 300 ml, starch - 1.5 tsp, champagne - 300 ml, cherry tincture - 2 tbsp, leaves mints and edible flowers for decoration;

Remove the zest from the oranges and cut into thin strips. Peel the fruit from the skin and membranes. Cut oranges into slices. Remove pits from cherries. Mix citrus fruits and berries.

While stirring, bring to a boil in a saucepan 175 ml of water with cinnamon and sugar. Cook until sugar dissolves. Pour in the wine and add the zest. Dilute starch in 2 tbsp. water. Remove the pan from the heat and pour in the starch. Return to heat and bring to a boil, stirring. Cool down.

Puree 1/3 mixture of oranges and cherries in a blender. Pour the puree into a saucepan and add the rest of the mixture. Put in refrigerator. Before serving, pour champagne and cherry tincture into fruit soup. Mix. Garnish with edible flowers and fresh mint leaves when serving.

2. Pie with cherries
Recipe for a sweet berry pie with fresh cherries.


Ingredients:
For the dough: flour - 350 g, salt - a pinch, butter - 175 g, ice water - 4-5 tablespoons;
For the filling: cherries - 1 kg, sugar - 150 g, corn flour - 30 g, salt - a pinch, sugar for sprinkling 1 tbsp, milk for lubrication - 1 tbsp.

1. Sift flour and salt into a large bowl. Butter cut into cubes and grind with flour to the state of large crumbs. Pour in a few tablespoons of ice water, each time kneading the dough. Make 2 balls out of the dough, one slightly larger than the other. Wrap each in cling film and refrigerate for half an hour.

2. Wash the cherries and remove the pits.

3. Combine sugar, cornmeal and salt in a bowl. Add cherries and stir.

4. Preheat the oven to 180°C. Grease a baking dish with oil. On a floured surface, roll out a large ball of dough into a thin layer. Lay out in a mold so that the bottom and sides are closed. Cut off the protruding edges with a knife.

5. Evenly spread the berry mixture on the dough.

6. Roll out the remaining dough into a thin layer. Cut out strips 2 cm wide from it and put them on the cake in the form of a lattice. Cut off the excess dough and pinch the edges. Brush the top of the dough with milk and sprinkle with fine sugar. Bake for 50 minutes, then cover with foil and return to the oven for another half an hour.

3. Mini clafoutis with cherries
Express clafoutis recipe. No scrambled taste, no fussing with the dough: the base is cooked on the bread crumb. Fast, easy, convenient and very tasty!

Ingredients: cherries - 500 g, eggs - 3 pcs., milk - 160 ml, bread crumb - 160 g, ground almonds - 80 g, melted butter - 80 g, sugar - 100 g;

Soak breadcrumbs in milk. You can use buns, toast bread, or a baguette. In a blender, mix the crumb, almonds, yolks, sugar and butter until smooth.

Beat egg whites well and carefully add them to the rest of the ingredients. Preheat oven to 180 degrees. Put 4 cherries into each mold, pour 2-3 tablespoons of dough and put 2-3 more berries on top.

Bake for 20 minutes, sprinkle with powdered sugar before serving.

4. Cherry flip
There is no cherry juice on sale, so the cherry season is the only time when you can make fresh juice from these berries and enjoy such a healthy and tasty cocktail.

Ingredients: egg yolk - 1 pc., powdered sugar - 20 g, milk - 100 ml, cherry juice - 50 ml, cherry berries - for decoration;

Mix all ingredients in a blender until smooth. Pour into a chilled tall glass and garnish with a cherry.

5. Cherry jam
You can add vanilla sugar or a few drops of almond essence to cherry jam for flavor.

Ingredients: sweet cherry - 1 kg, sugar - 2-3 cups, lemon juice - 2 tablespoons;

1. Rinse the cherries, dry and remove the seeds.

2. Grind the cherries with a blender, add sugar. Let stand for it to dissolve.

3. Cook jam in small portions in a saucepan with a wide bottom. Bring the mixture to a boil and cook, stirring, until the jam thickens. Shortly before cooking, add lemon juice. A drop of ready-made jam that falls on a chilled saucer does not spread.

4. Pour hot jam into prepared jars (washed with soda or detergent and sterilized). The level of jam is almost to the top. Close with sterilized lids.

5. Turn closed jars of jam upside down and cool.

Berries of northern cherries in fresh form can be enjoyed no more than 10-12 days, and even then if they are stored in the refrigerator.
Therefore, the bulk of the crop must be processed. Sweet cherries are good in fruit salads, various pastries, cocktails. For the future, compotes, juice, syrup, confiture and other sweet preparations are prepared from berries.

Cherry berries in their own juice.

Arrange the washed dried cherries in dry glass jars as tightly as possible and put in water for pasteurization. As the level of berries decreases, add them until the moment when the juice reaches the neck.
Pasteurize half-liter jars for 10-15 minutes, 15-20 liter jars. Roll up with lids and refrigerate. In the same way, you can cook pitted cherries.

Cherry berry juice.

Wash the ripe cherries, dry and mash. Let the resulting porridge-like mass stand for 4-5 hours to extract the aroma from the seeds and the coloring matter from the skin. Then squeeze the juice, filter, pour into bottles, hermetically seal and pasteurize for 10 minutes after boiling water. Cool in air.
You can make juice in another way. Bring to a boil in a saucepan and bottle hot. Seal them tightly and cool by turning them upside down. Store in a dark cool place.

Compote of cherries.

Products for 10 half-liter jars: 4.5 kg of red or yellow cherries, 5 g of citric acid, for syrup - 750 g of granulated sugar, 1 liter of water.
Only berries of the same variety and color are placed in one jar. Canned with bones, removing only the stalks. Fill tightly filled jars with boiling syrup and add citric acid. Cover with lids and pasteurize in boiling water for 15 minutes. Banks roll up the lids.

Cherry confiture.

Products: 2.5 kg of sweet cherry, 1 kg of granulated sugar, 1 glass of dry white wine, 5 g of citric acid.
Wash the cherries, remove the pits, cover with sugar and pour white wine. After 7-8 hours, put on fire. First on a weak one, then on a strong one, so that the berries are boiled to a density. A few minutes before the confiture is ready, add citric acid. Pour hot into jars, roll up the lids and cool, turning upside down.

Cherry jam.

Products: 1.2 kg of pink or red cherries, 5 g of citric acid, for syrup - 1 kg of granulated sugar, 300 ml of water. Dip the pitted cherries into the boiling syrup, boil for 5-10 minutes, then remove from heat. After 4-5 hours, put the jam back on the fire and boil.
A few minutes before readiness, put citric acid.

Cherry salad with apples.

Products: 4 cups of cherries, 4 large apples, 200 g of sour cream, 3 tbsp. spoons of granulated sugar, 1 teaspoon of vanilla sugar.
Remove the pits from the cherries, peel the apples, remove the core and cut into strips. Mix cherries and apples. Cool the sour cream and beat into a thick foam along with granulated sugar and vanilla. Pour the fruit with whipped sour cream and garnish with cherry berries.

Cherry fruit salad.

Products: a handful of pitted cherries, 1 orange (or tangerine), banana, apple and pear, 2 kiwi, 2 tbsp. spoons of canned pineapple, 1 fruit yogurt.
Peel the fruit, cut into cubes, slices and pieces. Mix everything and pour fruit yogurt. Decorate with cherries.

Cherry berry pudding.

Ingredients: 200 g cherries, 200 g stale rolls, 60 g butter, 2 tbsp. spoons of granulated sugar, 3 eggs, 1 glass of milk, half a glass of crushed crackers, lemon zest to taste. Remove pits from cherries. Soak the roll for 15 minutes in milk, squeeze and rub through a sieve.
Beat butter with sugar until creamy. Add cherries, yolks, mashed bun, squeezed milk, grated lemon zest and whipped egg whites, mix everything. Put the resulting mass in a form, greased with oil and sprinkled with breadcrumbs. Bake in a hot oven.

Cherry mousse.

Products: 200 g of cherries and pitted cherries, 2 tbsp. spoons of liquid honey, 100 g of walnut kernels. Whip cherries in a mixer with a spoonful of honey and put in a salad bowl with a ring.

Jellied pie with cherries

Ingredients for the dough: 1.5-2 cups of flour, 3 tbsp. l. milk and vegetable oil, 2 tbsp. l. sugar, 1 egg, 100 gr. curd cheese, 10 gr. baking powder.

For pouring: 3 eggs, 200 gr. cottage cheese or low-fat cottage cheese, 3 tbsp. l. sugar, 100 ml. heavy cream, 1 tbsp. l. semolina, a pinch of cinnamon.

For the filling: 1.5 - 2 cups of pitted cherries.

How to cook. For the dough, rub the curd cheese with the egg and sugar. Pour in milk and butter, mix and add 1.5 cups of flour mixed with baking powder. You should get a soft, tender dough. If it sticks to your hands, add more flour. Spread the dough over the bottom and sides of the form, put the cherry on it.

For pouring with a mixer, mix all the ingredients and pour over the cake. Put it in an oven preheated to 180 degrees, bake for 45-50 minutes. The middle may be watery - it's not scary. The cake must cool completely and then it will acquire the desired density. It's best to cut it cold.

cherry pie

Ingredients: 500 gr. cherries, 5 tbsp. l. flour (with a slide), 2 eggs, 200 ml. low-fat kefir, 3 tbsp. l. sugar, a bag of baking powder, a pinch of salt.

How to cook. Remove the stones from the cherries, put the berries in a colander so that excess juice drains. Beat eggs with sugar and salt, pour in kefir. Add flour with baking powder and immediately knead the dough. By consistency, it will turn out like a pancake, but do not add more flour. Put the cherries into the dough, mix and pour into a greased form. Put in the oven, bake for half an hour at a temperature of 200 degrees.

Pie with cherries and sour cream

For the test you will need: 200 gr. margarine, sour cream and sugar, 2.5 cups flour, 2 eggs, a pinch of soda.

For the filling: 700-800 gr. cherries, 400 gr. sour cream, 1 tbsp. l. starch, sugar to taste.

How to cook. Mix margarine at room temperature with sugar and beat with a mixer until fluffy. Mix flour with soda. Add eggs and sour cream to the butter cream, stir, gradually add flour. The dough will be soft, sticky, it is better to knead it with a spatula. Put on a baking sheet, moisten your hands with cold water and smooth the dough, make sides. Put cherries on the dough (do not forget to remove the seeds!) And pour sour cream. For cream, beat sour cream with starch and sugar. The cake is baked for 40-45 minutes, temp. oven 180 degrees.

Curd cream with cherries

Ingredients: 500 gr. cottage cheese and cherries, 200 ml. cream or sour cream, 5 tbsp. l. powdered sugar.

How to cook. Rub the cottage cheese through a sieve to become homogeneous, without lumps. Add cherries. Separately, beat cream or sour cream with powdered sugar. Add 2/3 of sour cream to the curd mass and spread in bowls. Decorate with the remaining cream and berries. Refrigerate for at least 2 hours and serve chilled.

Clafoutis with cherries

Ingredients: 180 ml. milk and heavy cream (30-35%), 2 eggs, 1 yolk, 100 gr. sugar, 50 gr. flour, a pinch of salt, 400 gr. cherries.

How to cook. Mix the egg, yolk and flour into a homogeneous mass. Pour milk and cream, add sugar and salt. We beat with a whisk. Lubricate the molds with oil, lay out the pitted cherries in them and pour the egg-cream mixture. We send it to the oven preheated to 180 degrees, bake for 30-35 minutes. The filling should “grab” and brown on the edge. Let the clafoutis cool, sprinkle with powdered sugar.

Sour cream jelly with cherries

Ingredients: 400 gr. not very fat sour cream, 3 - 4 tbsp. l. sugar, 10 gr. gelatin, pitted cherries.

How to cook. Mix sour cream with sugar, beat lightly. Pour gelatin with water according to the instructions on the package (be sure to follow it, for different gelatin you need a different amount of liquid). We put the gelatin in a water bath and heat until it is completely dissolved. Pour in sour cream, mix. We lay out the sweet cherry in molds, fill it with cream and put it in the refrigerator for 2-3 hours.

  • Decide why you are buying berries. So, if your main task is preservation, then either dark, or yellow or white cherries are best suited for these purposes. It is these varieties that are distinguished by juiciness and sweetness. Red cherries are drier and denser, so they are suitable for fresh consumption, as well as for preparing various desserts. But it is believed that the darker the cherry, the more useful substances it contains.
  • Examine the stems. First, they must be present, as experienced gardeners pick the berries with them. If there is no stalk, then bacteria can easily penetrate into the berry through the hole. Secondly, the stalk should be elastic and green.
  • Evaluate the appearance of the berries. They should be shiny, free of stains and damage.
  • Feel one berry. It should be elastic and fairly dense, but not too hard. Soft fruits are most likely overripe.
  • If good and ripe cherries are stored together with spoiled ones, you should not buy them.
  • Rate the smell. It should be pleasant and berry-like, not putrid.
  • Do not buy cherries in spontaneous markets. And it is better to purchase it from a familiar gardener, if possible.

What to cook?

Many delicious dishes can be prepared from cherries. We offer several recipes.

Recipe #1

How to make cherry jam? To make it, prepare the following ingredients:

  • 1 kg of cherries;
  • 300 ml of water;
  • 1 kg of granulated sugar;
  • 1 teaspoon citric acid or 2-3 tablespoons lemon juice.

Cooking method:

  1. First prepare the cherry. It needs to be free of bones. Also, if desired, the berries can be divided into halves.
  2. Now prepare the syrup. To do this, mix sugar with water and bring to a boil.
  3. Put the prepared berries into the syrup. Boil the mixture for about 20 minutes, then remove from heat, cover with a lid or cling film and leave for 5-7 hours so that the cherries give juice.
  4. Put the pan back on the fire and cook for about half an hour more so that it becomes thick. Five minutes before cooking, add citric acid.

Recipe #2

You can cook healthy and dietary jam without sugar. All you need is cherries.

Cooking method:

  1. This jam is best prepared from ripe, dark and very juicy cherries. It contains fructose, which is a natural sugar substitute. Berries should be washed well. Remove bones. To speed up the process, divide the fruit into halves.
  2. Prepare a water bath. To do this, you will need two containers, one of which must fit into the other. Put the berries in a smaller container, and fill the larger one with water and put on fire.
  3. When the water boils, put a bowl of cherries in a water bath and keep it there for about 1.5-2 hours. The berries should release the juice and be completely covered with it.
  4. Leave the cherries for a few hours to extract the juice, then remember a little with a fork and hold for about half an hour in a water bath.
  5. If the finished jam seems to you not sweet enough, then you can add honey to it.

Recipe #3

Prepare a delicious confiture with an unusual and slightly spicy taste. You will need:

  • 2.5-3 kilograms of cherries (be sure to choose ripe and juicy ones);
  • 1 glass of wine (it is better to use white dry);
  • 1 kg of sugar;
  • 3 tablespoons of lemon juice.

Cooking method:

  1. Sort the cherries, wash and dry. Remove the seeds and cut each berry in half.
  2. Place the cherries in a deep bowl, sprinkle with sugar, mix well and remember slightly, and then pour over the wine. Leave the berries in this state overnight, they will give juice and absorb the aroma of wine.
  3. Transfer the composition to a saucepan, put on fire, bring to a boil and cook for about an hour or an hour and a half, so that all excess liquid evaporates and the mixture thickens.
  4. Add lemon juice, stir the jam, keep on fire for another five minutes and turn off the stove.

Recipe #4

Prepare a healthy and sweet compote. Ingredients:

  • 1 kg of cherries;
  • 1 liter of water;
  • 8 tablespoons of sugar.

Cooking method:

  1. Wash and dry the cherry. Bones may not be removed.
  2. Prepare the syrup. Pour water into a saucepan, add sugar. Bring the mixture to a boil. Sugar should be completely dissolved.
  3. Place berries in a bowl.
  4. Once the mixture comes to a boil, turn off the heat and cover the pot with a lid.
  5. Leave the compote overnight, bring it to a boil again and roll it into jars.

Recipe number 5

Syrup can be made from cherries. Here's what you'll need:

  • 2 kg of cherries;
  • 1 kg of sugar;
  • 4-5 tablespoons of lemon juice or 1-2 teaspoons of citric acid.

Cooking method:

  1. First of all, you need to squeeze the juice from the berries. To do this, wash the cherries, remove all the seeds and divide each fruit into two parts.
  2. Place the berries in a bowl or saucepan and start mashing them vigorously so that they release all their juice.
  3. Drain the juice, and squeeze the pulp through a cloth or gauze folded several times.
  4. Pour the juice into a saucepan, put it on the fire and immediately add the sugar.
  5. When the liquid boils, reduce the heat and simmer until the syrup thickens. At the very end, add citric acid or juice.

Recipe #6

With cherry. List of ingredients:

  • 600-700 grams of cherries;
  • 3 eggs;
  • 100 grams of sugar;
  • 100 grams of flour;
  • 200 ml of milk;
  • 1 sachet of vanilla.

Cooking method:

  1. Cherry can be either red or white or yellow. In addition, you can mix several varieties, so the cake will look original. Wash all the berries, remove the seeds.
  2. Lubricate the baking dish generously with butter, lay the cherries on its bottom.
  3. Now start preparing the dough. First, beat the eggs well with the sugar. Then add milk and whisk again. While continuing to beat, slowly add the flour. Add vanilla. The dough should be liquid.
  4. Carefully pour the batter into the mold over the cherries.
  5. Bake the cake for about 40-50 minutes at a temperature of 160-170 degrees.
  6. Ready!
