There is a dish that is strongly associated with the New Year Holidays. I'm sure you know him well. It's hard to imagine a good festive table without a herring familiar from childhood under a fur coat!

This delicious salad appeared at a time when the most simple products it was very difficult to get, but Soviet housewives knew how to set masterpiece tables, having only potatoes, beets and carrots in stock.

Shuba is a very simple dish. It does not have a strict number of components. In my recipe, the amount of ingredients is enough for 7-8 servings.

Since the advent of the original Soviet recipe“fur coats” there are many more options for this hearty salad. What then, what now, all the housewives prepared it at least a little differently. I myself experiment all the time with the amount of ingredients and the recipe, although most of all I like the classic herring under a fur coat, the recipe of which appeared in our house from my grandmother.

The classic “fur coat” is an easy-to-cook dish that novice housewives and teenagers can handle. So there is nothing to be afraid of.

Remember one thing: in order for the herring to turn out “correct” and tasty, you need to make the dish in advance and leave it to infuse in the refrigerator. In 3-4 hours it becomes even tastier (and simply delicious overnight), all layers are saturated and you have the very taste of childhood on the table.

For a salad, it is important to choose fresh oily fish and cut it well. Divide the fish into two fillets and remove the bones.

What to do with vegetables? Potatoes, beets and carrots can be boiled or baked. As a rule, I bake potatoes, but I boil carrots and beets. At the same time, I boil the eggs, cool them in cold water, then peel them.

The apple (or apples) must also be peeled. I advise you to grate all the ingredients, and not cut. Grated vegetables, eggs and apples in a salad feel more tender.

It is most delicious to make herring under a fur coat according to a recipe with “sweet” onions - for example, with white salad.

Now it's time to lay out the ingredients. Place them one by one on a plate.


What is good about a herring salad under a fur coat: its taste does not bother you for a long time and you can eat it for a long time, since the “real” fur coat is even tastier than fresh.

Herring under a fur coat according to any recipe is very convenient to prepare: you can fill it as a whole dish, or place it in portioned rosettes.

Tip: Serve the "fur coat" with fresh hot bread. Eating it with him is amazing!

Boil potatoes, carrots, beets and eggs.

Herring MUST be taken whole (from a can or from a barrel, in no case in oil). We clean the herring, remove it from the ridge, tear out all the ribs ... cut the fillet into cubes (about 0.7-1 cm each) ... ALWAYS tear out all the protruding small bones.

We set aside the herring. We take a large, necessarily FLAT plate (so the layers will be smoother):
1st layer - grate the potatoes - 1cm thick
Lubricate thoroughly with mayonnaise (preferably mayonnaise from a bag, make a hole so that the mayonnaise flows in a thin stream).
2nd layer - herring (for 1 large plate 1.5 herrings...
maybe 1) mayonnaise
3rd layer - finely chopped onion - a thin layer of mayonnaise
4- layer - rub the eggs - 0.5 cm ... (so that the previous layers are not visible) mayonnaise
5th layer - grate the carrots - 0.5 cm (so that the previous layers are not visible) mayonnaise
6th layer - beets - 1 cm (so that the previous layers are not visible) Pour the beets with plenty of mayonnaise and smear them well.
Garnished with finely chopped green onions and roses from the remaining beets and carrots. Practice shows that the more mayonnaise in the COAT, the better.

If you buy preserves for salad, then remember that herring is stored only in oil, it should not be in vinegar filling. If this is on the shelves of the store, perhaps they are trying to hide something from you. It is better to choose in oil with herbs.

Ingredients:

  • 2 herrings
  • 2 carrots
  • 2 beets
  • 2 potatoes
  • Mayonnaise

We clean and chop the herring.

Boil vegetables in advance until tender.

We will cook without onions, because the salad can stand in the refrigerator for a while, and the onions will quickly begin to deteriorate.

It is better to grate the vegetables, rather than cut them, so the salad will turn out more uniform and tender.

Now we start laying out the layers in order, they may vary a little, but usually they do as it is written below.

1 row (layer): Herring.

By the way, you can not pickle the onion, but simply scald it with boiling water. But in the classic recipe, according to which our family cooks, there is no place for onions in this salad.

But various modernizations of this salad have already gone, for example, with the addition of eggs. We take five of them, but only three go to the salad, the remaining two are used as decoration.

Take small vegetables, it's easier to adjust to the proportions. By the way, you may be lucky and know where herring fillets are sold near you! Then you will reduce the cooking time of the salad.

Ingredients:

  • Boiled beets - 2 pcs.
  • Boiled carrots - 1 pc.
  • Boiled potatoes - 1 pc.
  • Eggs - 5 pcs.
  • Onion - 2 heads
  • Herring - 1 pc.
  • Mayonnaise

We clean the herring and cut it. Try to remove all bones.

All other boiled products must be grated and put in different containers.

Lubricate the plate on which you plan to spread the salad with mayonnaise.

The first row or layer is pickled onions. It was cut in advance and poured with 1 tbsp of vinegar and 1 tbsp. Sahara. After half an hour, the onion is ready, drain the liquid.

In the second layer we will lay herring pieces.

  • 1 sour apple

  • 3 eggs

  • Lemon juice

Boil vegetables or bake in the oven in foil.

Potatoes come first.

To make the salad not very greasy, we will lubricate it through the layer.

I often see this salad as an appetizer. Then a piece of herring is laid out on top. But you need to cook it before serving so that the pita bread does not get wet from juices and mayonnaise. Ingredients:

  • 1 large boiled beetroot

In order not to paint the entire kitchen in beetroot color, we will use cling film. Lavash cut into 2 parts. If you have a large one, then you can divide it into four.

Here we have no carrots, no onions, no eggs. We make a simpler variation of the salad. But it still turns out very nutritious and tender.
Each product can be mixed separately in bowls with mayonnaise or sour cream to make it easier to lay out and spread over the surface.

Ingredients:

  • 1-2 small boiled beets
  • 2 middle boiled potatoes
  • 1 herring
  • Mayonnaise
  • 150 gr cheese

First, mix the grated beets with mayonnaise.

Second row: grated cheese and mayonnaise.

Third row: herring cubes with mayonnaise.

Onion pieces pour boiling water to completely cover them and add a spoonful of vinegar 9% and a spoonful of sugar.

The first row is laid with potatoes.

Mix pickled onions without liquid with herring cubes and mayonnaise. It is laid out in the second layer.

Third row: egg whites and grated carrots.

Fourth row: beets with mayonnaise.

Unusual royal recipe "Herring under a fur coat" with gelatin (in the form of a cake)

And just one ingredient allows you to make a masterpiece out of a salad, for example, form it in the shape of a cake or a regular circle. And all this without fear that the salad will fall apart. The whole point is in the addition of gelatin. The downside is that the finished salad must stand in the refrigerator for half a day for the gelatin to harden. Not everyone wants to wait.

So, to the diluted gelatin, you need to introduce all the mayonnaise that you plan to spend on the salad. And then add a few tablespoons of this gelatin mixture to each crushed product.

Ingredients:

  • 20 gr gelatin
  • 1 herring
  • 300 gr boiled carrots
  • 300 gr medium potatoes
  • 300 gr boiled beets
  • Mayonnaise
  • 1 onion
  • 1 tbsp vinegar
  • 1 st. l. Sahara

Pour gelatin with half a glass of cold water to swell.

In advance, pickle the onion in a solution of water with 1 tablespoon of vinegar and 1 tablespoon of sugar.

Chop or chop all boiled vegetables.

Finely chop the herring fillet and mix with pickled onion pieces.

We cover the form with cling film.

Dilute gelatin using water bath or microwave. Remember that we do not bring it to a boil!

Mix 350 g of mayonnaise with gelatin and mix. Mix all vegetables with 4 tablespoons of mayonnaise with gelatin.

Ingredients

  • 1 beet;
  • 3 potatoes;
  • salt - to taste;

  • ½ onion;

Cooking

Boil beets and potatoes until tender. Grate the beets on a fine grater and squeeze. boiled potatoes dry a little and turn into a puree. Mix and salt the vegetables.

Cut the herring and onion into small cubes and mix with chopped dill. Make out vegetable puree small cakes. Put the fish mixture in the middle of each and form strawberries by connecting the edges.

Ingredients

  • 1-2 carrots;
  • 3-4 beets;
  • 150 g cream cheese;
  • salt - to taste;
  • 9 rectangular pieces of black bread;

Cooking

Ingredients

  • 3-4 potatoes;
  • 2-3 carrots;
  • 2 beets;
  • 400 g of seaweed;
  • salt - to taste;

  • 200 g of Adyghe cheese;
  • a few tablespoons of mayonnaise (if you do not eat eggs, use lean mayonnaise).

Cooking

Boil potatoes, carrots and beets. Cool the vegetables, peel and grate on a coarse grater. To each vegetable, as well as seaweed, add salt, pepper, oil and mix. Grate Adyghe cheese on a large grater.

Put the potatoes in the first layer. Lubricate it with mayonnaise. Then distribute sea ​​kale, cheese, mayonnaise, carrots and mayonnaise again. Put the beetroot on top and also cover it with mayonnaise.

Put the finished salad in the refrigerator for a couple of hours.

Festive classic salad from herring under a vegetable coat.

  • 2 small herrings (or 1 large)
  • 500 g potatoes
  • 500 g carrots
  • 500 g beets
  • 100 g onion
  • 4 eggs
  • 250 g mayonnaise
  • salt

From this list of ingredients, you get a large dish of herring under a fur coat, just right for a holiday in the company. If you cook on weekdays, you can reduce the amount of ingredients by half.
Herring for the recipe, it is advisable to take the usual barrel (from saline). If you use ready-made herring fillets in oil, then, in my opinion, the taste ready meal due to oil and spices, it worsens significantly.
In many regions of the post-Soviet space, a fur coat is prepared not with eggs, but with apples. I still prefer a fur coat with eggs, in my opinion, it tastes more tender. If you decide to cook with apples, simply replace the layer of eggs with a layer of grated apples.

Cooking:

Boil the beets in a saucepan for 1-2 hours (depending on the variety and size of the beets). Cool down.

Boil potatoes and carrots in salted water for 30-40 minutes (the knife should easily pierce vegetables). Cool down.

Boil the eggs for 10 minutes from the moment of boiling. Cool by pouring cold water.

We split the herring.
Cut off the head of the herring, cut along the belly, clean out the insides.
Rinse the herring thoroughly inside and out.
Next, make a cut on the back, cutting out the upper fin at the same time.
Next, evenly grabbing the skin from the head, gently pull and remove the skin like a glove up to the tail (as in the photo). Then do the same on the other side.
Then cut out all the fins and tail.

Carefully inspect and remove any remaining costal bones (as pictured), as well as any bones you can find.

Cut the herring fillet into small pieces.

Peel potatoes, grate on a medium grater.

Peel the eggs, grate on a medium grater.

Peel the carrots, grate on a medium grater.

Peel the beets, grate on a medium grater.

Peel the onion, finely chop, put in a bowl.
Pour boiling water over, drain the water after a couple of minutes (this is done so that the onion does not become bitter and becomes less spicy).
