Today I will tell you about my recipe for baked pies in the oven with blueberries. The test recipe is universal. That is, pies can be made with any filling. Only if done with salty filling, for example with fried cabbage, then you need to put two tablespoons less sugar. So, let's begin. First you need to heat up some milk. Wish it was just warm. Not hot, otherwise the yeast will steam...


Next, add two tablespoons of sugar and salt and yeast to the milk. You can take two packs of 7 grams of dry yeast or one 45 grams of live yeast. Mix well and leave to wander.


At this time, you need to melt the butter or margarine and cool slightly. And add it to the yeast bowl. Mix everything well and add more sugar and eggs. It's good to stir again.


Now add flour and mix well. I last used 700 grams of flour.


It turns out this is not a tight dough. Top with vegetable oil. And put in a warm place to rise. Approximately 2 hours. If it is very hot, then the dough will rise in an hour.


This is how the dough has risen. I hugged him and let him rise again.


Now grease your hands vegetable oil and divide the dough into balls. Approximately 25 pieces should be obtained.


We knead each ball with our hands into a donut and put blueberries and a bit of sugar there (this sugar is not in the ingredients :)


I don't grease the top with anything. The oil makes them so beautiful. Bake at 200 degrees for 25-30 minutes.
  1. Grind yeast with 2 tbsp. sugar, pour in about 150-200 ml of warm milk and grind with a fork until smooth. Leave the yeast mixture in a warm place (ideally 30C) for 15-20 minutes until a foamy “cap” forms on the surface.
  2. Sift flour through a sieve into a large bowl, add salt and stir. Remove the butter from the refrigerator, cut into pieces and leave for 15-20 minutes in a warm place so that it melts and becomes very soft. Remove the eggs from the refrigerator and leave for the same time in room temperature.
  3. After 15-20 minutes, beat the eggs into a separate bowl and beat with a mixer at high speed until foam forms. Without ceasing to beat, pour in the remaining sugar for the dough in a thin stream and beat for about 5 more minutes (you should get a light and lush creamy mass).
  4. While stirring the flour mixture, pour in the egg cream, then pour in a thin stream of warm milk at about 40C. At the end, pour in the yeast mixture and knead almost until smooth. At the end of the batch, add a little butter knead with your hands to a soft and pliable dough.
  5. cover yeast dough cling film or a slightly damp kitchen towel and leave in a warm place for about 2 hours. During this time, the dough should rise by yeast 2 times.
  6. In the meantime, sort the blueberries, clean them of debris and rinse, let the berries dry. Mix the rest of the filling ingredients in one bowl.
  7. Knead the dough with your hands and divide into balls of equal size and weight according to the number of pies (about 30 pieces). Punch down each piece of dough and roll out a little with a rolling pin.
  8. Put some berries in the center of the circle and sprinkle them with 1 tbsp. sugar mixture with starch and flour. Connect the edges of the dough over the filling and pinch the seam with a pigtail or in any other way convenient for you. Thus, mold the pies from the remaining dough and filling.
  9. Transfer the blinded pies to a baking sheet, after greasing it with vegetable oil (or covering it with parchment paper). Leave them to rise for 20 minutes in a warm place. Preheat oven to 200C.
  10. Crack the egg into a small bowl, pour in the milk and beat the mixture a little with a fork. Lubricate the surface of the pies with the egg-milk mixture and send to the preheated oven.
  11. Bake blueberry pies until golden brown, about 20 minutes. Remove the baking sheet, cover with a light towel and leave for 15 minutes. Ready pies with blueberry filling are delicious both warm and cold.
  12. If desired, you can cook the same pies in a pan: heat about 100 ml of vegetable oil in it and put the pies that have come up (risen). Fry them over medium heat until golden brown on both sides. Transfer the pies to a paper towel to remove excess fat. Happy tea!
