Bagels, dryers and bagels are old Russian pastries from the same family, which are still very popular today.

Traditionally, all these delicacies were prepared from choux pastry, so they were also called scallops. Their difference is that the dryers are smaller and drier, the bagels are a little looser, but the bagels are the largest, thickest and loosest.

Ingredients

Traditionally, bagels are baked from yeast dough, for which you will need:

  • The third part of a glass of slightly warmed water.
  • Half tbsp. granulated sugar.
  • 1 tsp yeast.
  • 2 cups wheat flour.
  • Half tbsp. vegetable oils.
  • A little salt.

Making bagels

In the above recipe for bagels at home, an original Russian recipe is recreated, including the process of brewing dough. Mix the yeast with sugar and warm water, beat the mass well and let it stand for about 15 minutes so that the yeast starts to work. Then add flour, salt and oil to the yeast and knead the dough with your hands. It should become very elastic. If kneading is difficult, you can add a little more warm water. Set aside the kneaded dough for half an hour and let it rise.

Sprinkle the table with flour and roll out the dough, then divide it into pieces, from which the bagels will be fashioned. Roll each piece of dough into a sausage and roll it into a bagel. Leave all bagels on a floured table for another 20 minutes.

When this time passes, you will notice that the bagels have risen noticeably. After that, you can begin the process of brewing them, because you can cook a bagel at home exactly as it was done traditionally. Boil 6 cups of water in a saucepan and dip the bagels in boiling water for 2 minutes - one minute on each side.

It is better to brew 2-3 bagels at a time so that they do not stick together. Put the boiled bagels on a napkin so that it absorbs moisture. When all the bagels have gone through the brewing process, put them on a baking sheet and bake at 220 degrees, first 10 minutes on one side, then another 8 on the other.

Since homemade bagels have a very simple recipe, you can bake them for family tea parties and breakfasts. Bagels can be served hot, or they can be eaten cold. They can be cut in half and smeared with jam, condensed milk, chocolate, or eat them straight without additives.

To knead the dough, first mix the sifted flour with salt, sugar and dry yeast.
Then add warm water (about 37 degrees). And knead the dough. At the beginning it will be quite tight and naughty - do not be alarmed, continue kneading until a homogeneous state is obtained.


Next, add softened room temperature oil and continue mixing. You will notice that the dough becomes softer and more pliable, but quite elastic and not too sticky to the hands and the surface.
Put it in a large bowl to rise. Be sure to cover from winding and drafts.


In a warm place, the dough will rise (will double in volume) in 45-50 minutes.


We spread the dough for bagels with poppy seeds on our work surface and divide into 8 equal pieces. And you don’t need more, otherwise it will no longer be bagels, but bagels ...
From each piece, first roll up the ball, then make a hole in the center and begin to stretch it a little, giving it the shape of a donut. We put the formed bagels aside, covering from drying out, for ten to fifteen minutes.


In the meantime, put a pot of water on the fire and wait for it to boil. We fall asleep salt and soda.
We lower the bagels one by one into boiling water. First, for 30 seconds with a beautiful, outer side, and then turn over and scald the other side for 30 seconds. And then - carefully remove the bagels with a slotted spoon.


Shaking off excess water, spread on a baking sheet with baking paper. Again - don't be put off by their unattractive, shriveled appearance, the bagels will flatten out and become pretty as they bake.

Why do you need such an incomprehensible action as scalding? And it is needed in order to stop the rise of the dough during baking - the shape of the bagel is preserved, and does not turn into the usual lush pastries. With all this, the middle is soft and airy, and the crust remains crispy.

Many people have a special weakness for products made from rich yeast dough, I am also among the fans of baking. Sometimes, nothing can replace it. I especially love to bake when close people are going to visit me. Just tonight, my girlfriends should come to me for tea, on this pleasant occasion, I baked homemade bagels, the recipe of which I share with you. The dough itself for bagels is unsweetened, but I smeared them with an egg and sugar. The products turned out to be very tasty, reminiscent of Turkish simita bagels. Instead of sesame seeds, you can use poppy seeds - everything is optional here.

Ingredients:

  • 170 ml milk
  • 2.5 cups white flour
  • 30 g butter,
  • 1 teaspoon yeast
  • a pinch of salt,
  • 1 tablespoon sugar
  • 1 egg
  • 2 teaspoons of sugar
  • sesame.

Cooking process:

We heat a lot of 30 ml of milk, add sugar and yeast to it, mix well and let it brew until a cap forms.


In another bowl, heat half of the remaining milk, add the butter to melt it. Pour this mixture into a separate bowl and add the remaining cold milk and salt to it. Let's mix.


Pour the milk mixture into a bowl with yeast, add flour and knead elastic dough.


We leave yeast dough for 2 hours, covering it with a clean towel. Make sure the room is warm and free of drafts. When the dough for bagels is suitable, divide it into 6 equal parts.


From each part we roll up a sausage, from which we will then make a flagellum. We pinch the edges at the flagellum, we get a bagel, as in the photo. Do the same with the remaining five parts of the dough.


We spread the bagels on a baking sheet covered with parchment paper, which we greased with vegetable oil. Let's go for another 15 minutes. Gently grease the approached blanks with a beaten egg and sugar, sprinkle with sesame seeds.


We bake bagels in the oven at 180 degrees for 20 minutes, preheating it in advance. If you have the same problematic oven as mine, you can put a frying pan or other suitable container with water in the bottom of the oven to make soft bagels.

Products for dough: 200 g water (40 °C), 300 g wheat flour, 0.5 tsp (2 g) dry yeast (pre-soak in water) or 15 g pressed.

Products for the test: 270 g water (35 °C), 700 g flour, 80 g melted margarine, 15 g salt, 120 g sugar.

Cooking:

Prepare a dough from the ingredients and put it for 5 hours (during this time the dough will increase by 4-5 times) at a temperature of about 30 ° C. Cover the container with the dough with cling film (it is important to maintain humidity). After the dough is ready to replace the dough. First pour in water and mix everything well, then add sugar, margarine, salt and wheat flour. Knead the dough for 15-20 minutes. It should be pretty cool. After that, leave it under a towel for 20 minutes. Roll out the prepared dough into a layer, then fold it in three and, after 20 minutes of resting, form pieces of about 120 g. Roll the bundles from the pieces and form bagels (diameter 10 cm). Then proofing again ( milestone dough preparation!) at 40 °C for 15-20 minutes. Humidity should be high. To do this, you can warm up the oven a little, then turn it off, place the dishes down with hot water. Bagels should be wet.

Boil water and scald (do not boil!) bagels in a container of water for 5-15 seconds (water temperature should be 95 ° C). Then dry and sprinkle with poppy seeds.

Grease a baking sheet with oil, put the bagels. Place a container of water at the bottom of the oven and bake the bagels for 10-20 minutes at a temperature of 200-220 ° C.

  4. 100 g sesame seeds.

  6. A tablespoon of molasses.
  7. 2 tsp sugar sand.
  8. A small amount of turmeric.
  9. 50 g butter.
  10. A small spoonful of table salt.
  11. 7 grams dry yeast

Cover the baking sheet with a layer of butter. in the oven, according to a recipe of this kind, it is necessary to cook in an oven for about 15 minutes. After that, a slice of cheese is placed on their surface.

Baking with cottage cheese

Confectionery can be filled with any filler. Then they will taste even better. For example, bagels with minced meat according to the recipe discussed in the previous section. Some chefs add additional ingredients to this baking. The composition of the dish curd dough includes:

  1. A large spoonful of sugar sand.
  2. Egg.
  3. Table salt (1 pinch).
  4. About 200 grams of cottage cheese.
  5. 4 large spoons of wheat flour.
  6. Powder sugar.

Cottage cheese is combined with eggs. The mixture is lightly salted. It also needs to be sprinkled with sugar. Then wheat flour is added to the components. Baking with condensed milk

The dish consists of the following components:

  3. Packing of condensed milk.
  4. Salt.
  5. Three glasses of wheat flour.
  6. A few poppy seeds.
