So the vacation is over, and workdays have come.
The birthday of my dear husband was approaching, and I kept wondering what kind of cake to bake for him, I wanted something that had not yet been tried. I found this in my bookmarks. wonderful cake"Nochenka", chocolate cakes with custard.
The cake turned out quite tasty, and on the second day it was much tastier than on the first.
To prepare the chocolate cake "Nochenka" we need:
for chocolate cakes
- 500 grams of kefir,
- 2 teaspoons of soda
- 300 grams of sugar
- 350 grams of flour
- 2 eggs,
- 6 tablespoons cocoa
for custard
- 500 grams of milk
- 200 grams of sugar
- 2 eggs,
- 60 grams of flour
- 50-100 grams of butter (I put 70),
- 1 tablespoon vanilla powder, or to taste.
Recipe for making chocolate cake "Nochenka" on kefir.
Let's cook chocolate cakes . To do this, stir soda in kefir and let stand for 3-4 minutes. Then add eggs and sugar, mix with a mixer.
Add the flour and cocoa sifted through a sieve, mix everything well again so that there are no lumps.
We heat the oven to 180 degrees.
Grease the baking dish vegetable oil(so that it probably doesn’t stick, you can still sprinkle with semolina or breadcrumbs, but just butter was enough for me). Pour a little dough into the mold and evenly distribute it over the surface. The thickness of the cake depends on your preferences. Since my form was quite large in diameter (about 30 cm), I tried to pour the cakes as thin as possible.
Bake the cakes in a preheated oven for about 15 minutes. Readiness is checked with a toothpick. I ended up with 5 cakes.
While the cakes are cooling, prepare custard. It can be cooked on yolks, a recipe, or you can cook a simpler version.
In a saucepan, mix egg milk, sugar, vanilla powder, sifted flour. Whisk until the lumps disappear. Place the saucepan over medium heat and cook until the cream thickens, stirring constantly.
Remove thickened cream from heat, add butter. Mix well and leave to cool.
Now let's coat the chocolate cakes with custard, decorate the cake to taste. I used raisins, dried cherries for decoration, walnuts, banana, coconut flakes, pieces of dried mango. Put the cake in the refrigerator to soak for at least 4 hours, and preferably at night.

Ingredients

- Sugar - 200 g
- Eggs - 2 pcs
- Flour - 50 g
- Butter - 100 g
- Vanillin or vanilla sugar - to taste
Step by step cooking process at home
- Prepare everything necessary products for chocolate cakes.
- Kefir warm up a little, add soda, stir and let stand for 3-4 minutes.
- Beat eggs and sugar lightly.
- Then mix these two masses.
- Add sifted flour and cocoa.
- Once again, mix everything well so that there are no lumps.
- Grease a round baking dish with a diameter of 25 cm with any oil, sprinkle with semolina or breadcrumbs.
- Divide the dough into 2 parts and pour one portion into the mold, evenly distributing it.
- Preheat the oven to 180 degrees and bake the cakes in turn for about 25-30 minutes each.
- Readiness of baking can be checked with a toothpick.
- Gather all the ingredients for the custard.
- Whisk 2 eggs.
- Add a couple of tablespoons of sugar, flour and milk to the eggs and mix thoroughly.
- Heat the main mass of milk with sugar to a boil.
- Whisking constantly, pour the egg-flour mixture into the boiling milk in a thin stream.
- Without removing from the heat, stir the mixture continuously until the mass thickens - this takes about 5 minutes.
- Add vanillin to the thickened custard mass and cool it.
- Take butter room temperature and beat it with a mixer.
- Continuing to beat, gradually add the custard mass to it.
- You will get a homogeneous thick and lush creamy mass.
- Let's start assembling the cake. Let the cakes cool and cut each lengthwise into two parts.
- Lubricate all the cakes in turn with the resulting custard.
- Fold the cakes smeared with cream on top of each other.
- At the end, coat the cake with cream completely (or only on the sides) and leave it to soak for at least 4 hours.
- You can additionally decorate the cake to your liking, as an option - sprinkle coconut flakes. finished cake Place in the refrigerator overnight to soak better.
- Cut the Nochenka cake into segments and serve with morning coffee, afternoon tea and evening milk!
