A recipe for chicken with prunes and pumpkin a few years ago I came across in a culinary magazine, I was surprised by the unusual composition and ease of preparation. Since then, it has been one of our favorite autumn dishes, great for dinner. Be sure to try cooking it. I, as always, offer a detailed photo recipe for preparing this dish.

  • half a chicken carcass, or 2 legs, or, like mine, 4 thighs
  • 400-500 g pumpkin
  • 100 g pitted prunes
  • 1 medium onion, preferably elongated, it is convenient to cut it into thin rings
  • 1-2 garlic cloves
  • 1/3 tsp ground cinnamon
  • salt, pepper to taste
  • vegetable oil for frying
  • a little parsley for serving

Cooking:

Wash the chicken, pat dry with paper towels and cut into portions. I didn’t have to cut into portions, I just peeled the skin off the thighs. I advise you, if possible, to cook less chicken with skin, unless, of course, it is homemade.

Salt the prepared pieces, pepper on both sides and fry in vegetable oil in a deep frying pan until light golden brown.

Cover the pan with a lid and simmer over low heat until the pumpkin is soft. This may take 5 or 15 minutes, depending on the type of pumpkin.

My prunes, dry with a napkin, add to the pan and simmer under the lid for another 5 minutes until the prunes are soft.

Put the finished chicken with prunes and pumpkin on plates and serve on the table, sprinkling parsley on top.
