Cooking method:

  1. Rinse vegetables in running water, place them in clean jars. Their skin should not be damaged.
  2. Peel the onions and carrots, rinse and chop, onions in half rings, and carrots in large cubes. Place the vegetables in the jars along with the celery stalks, filling in the gaps between the tomatoes. Coarsely chop the garlic cloves into jars.
  3. Boil water, pour it into jars of vegetables, pouring it over a knife or a tablespoon so that the glass does not crack from temperature changes. Cover the jars with clean lids and let the tomatoes warm in boiling water for 20-25 minutes.

  • 3 kg tomatoes
  • 500 g celery
  • 30 g mustard seeds
  • 6 tooth garlic
  • 4-6 dill umbrellas
  • 50 g salt
  • 55 g granulated sugar
  • 15 ml vinegar essence 80%
  • 2 liters of water
  • 20 g coriander seeds
  • 4 things. bay leaf

Cooking method:

  1. Sterilize all cylinders and caps in a convenient way for you
  2. It is necessary to dry the coriander and mustard seeds, heat them in a dry hot frying pan for several minutes, hold the bay leaf in boiling water for 60 seconds
  3. Next, put coriander and mustard grains on the bottom of the jars, add bay leaf, coarsely chopped garlic, dill umbrellas to the spices, but first they should be separated from the branches and poured over with boiling water
  4. Soak celery stalks and greens in cold water for 10-15 minutes, then dry, then chop the stalks into cubes, and leave the greens whole, place everything in glass bottles
  5. Rinse small tomatoes in cold water, remove the stalk, pierce each with a toothpick at the base, arrange tightly in jars, add dill umbrellas on top, a little green celery
  6. Pour blanks with vegetables first with boiling water for 20 minutes, then pour the water from the cylinders into a convenient saucepan, measure the volume, add water to 2 liters, dissolve sugar, salt according to the recipe

Pour the resulting mixture into a heat-resistant container, add sugar, salt and stir. Put on medium heat and heat the mass with constant stirring. If bubbles appear, reduce the intensity of heating and boil the adjika for 15 minutes.

First, we prepare adjika. Wash carrots and peel the skin. Rinse again and rub on a fine grater. Wash Bulgarian and hot peppers. We remove the stalks, and for bell pepper - and seeds. Cut both peppers very finely. Garlic is peeled, washed and pressed through a press.

We combine both types of peppers, garlic and carrots, mix thoroughly. Adjika is ready.

We put adjika at the bottom of the sterilized jars.

Place tomatoes tightly on top of adjika. Large tomatoes are cut into 2-3 parts, and small ones are left whole.

On top of the tomatoes we put 1 bay leaf and an umbrella of dill.

We are preparing the marinade. Pour water into a saucepan, bring to a boil. We put sugar and salt and boil, stirring, until the crystals are completely dissolved. Pour vinegar and turn off the fire. Immediately pour marinade jars with tomatoes. We cover the jars with lids.

We place the jars in a wide saucepan, the bottom of which is covered with a napkin, fill it with warm water, not reaching the shoulders of the jar a little, and put it on fire. After boiling water in a saucepan, we withstand liter and 1.5 liter jars on fire 20-25 minutes; 2 and 3 liter 30-35 minutes.

Add salt, sugar and bay leaf to the future brine. Other herbs and spices optional. The more leaves, the more flavorful the marinade, but don't overdo it. After adding, mix thoroughly and boil for 15-20 minutes. Then add acetic acid.


6. Fill the jars with hot brine to the very top so that when screwing the lids on, there is no air left. Cover with well-sterilized lids, roll up and put away in a dark room.

5. Cover and send the filled glass containers to be sterilized for water bath.


6. After 25 minutes of sterilization, roll up and place in a dark place, covered with a thick blanket.

5. After a few minutes, put the jars in a water bath. To stand longer, they need a similar sterilization (as in the recipe above).


6. After 10 minutes have passed - shoot. Your blanks are almost ready.

Pickled tomatoes with vinegar and aspirin - lick your fingers
