    Cream for our cake we will whip out coconut milk. Therefore, we place the jars with this product in advance in the refrigerator (for about 6 hours, you can overnight). During this time, the milk and fat in it will separate. Therefore, carefully drain the coconut milk, and send the remaining oil to a separate container.

    TO coconut oil add some honey and vanilla extract. Then we begin to beat it with a mixer: first at medium speed, and then at high speed. The cream should be airy.

    Roast the almonds. To do this, heat the pan well and pour chopped nuts into it. Fry until lightly browned. Pour the almonds from the pan into a dry bowl.

    Now it's time for the watermelon. It should be washed thoroughly in running water.

    With a knife, carefully cut off the peel from the part of the watermelon that we will use to make the cake.

    We managed to make two such “cakes” from one watermelon.

    Watermelon cakes must be blotted with a clean towel or napkins (this is necessary so that the cream does not “slip off” in the future). And now we install a smaller workpiece on a large one and coat them with previously prepared whipped cream.

    Sprinkle the watermelon cake with toasted almonds and decorate with any fruit of your choice.

Cut a small watermelon into 3 cm cubes (you should get about 40 pieces), remove the seeds. Cut 450 g of feta cheese into 0.7 cm slices, then divide the slices into 3 cm squares. We will need:

  • 4 eggs;
  • 1.5 st. l. cocoa;
  • 370 g of kefir;
  • 450 g flour;
  • 400 ml vegetable oil(refined);
  • 400 g sugar;
  • 1/4 tsp salt (fine);
  • 1.3 tsp baking soda;
  • 2.5 tsp baking powder for the dough;
  • 2-3 tsp food coloring of red color.

Beat eggs with sugar until thick, dissolve soda in kefir. We combine the butter with the sour-milk base and add the dye. If the color does not seem bright enough to you, add dye to make the shade as similar to watermelon as possible. The cake will be even prettier.

It's time for the bulk ingredients. Sift flour, add sugar, salt, cocoa, baking powder. Gradually introduce the mixture into the egg mass, beat thoroughly. At the end, add tinted kefir. The dough is ready. If you plan to bake it in a regular round pan, line the bottom with parchment paper and lightly oil the edges. The indicated amount of products will allow you to cook 2 round cakes with a diameter of 22-23 cm. In a preheated oven, each of them will cook for about an hour.

This recipe gained huge popularity a few years ago. Its wide distribution is not surprising, because thanks to simple recipe everyone could feel like a virtuoso confectionery art. If you want to make a watermelon cake from fondant, you will need a pack of marshmallows and some powdered sugar.

Not everyone loves. Some experts advise not to eat them at all, but to use them only for decorative purposes. If you suspect that mastic elements will still be used, add a little condensed milk to the mass during cooking - it will be softer and tastier.

Transfer the marshmallows to a bowl (about 400 g), put in the microwave for 2-3 minutes. You can also heat marshmallows in a water bath. When the mass becomes soft, add a handful of powdered sugar. Compound:

Biscuit:

  • 300 ml low fat sour cream
  • 0.5 cup vegetable oil (or melted butter)
  • 1.5 cups flour
  • 100 ml sugar
  • 0.5 teaspoon of soda
  • 1/2 teaspoon vanilla sugar
  • 2 tbsp. spoons of lemon juice

Interlayer:

  • 200 ml whipping cream (at least 30%)
  • 1 pack (200 g) fresh cheese Philadelphia (or Mascarpone)
  • 100 g sugar
  • a pinch of vanillin
  • 3 jars baby mango puree

Jelly:

  • 600 ml of water (some will go to the layer)
  • 2 teaspoons of agar-agar (soluble)
  • sugar to taste (I have about 5 tablespoons)
  • a small amount of red berry juice, preferably natural concentrated (for color and taste)

Decoration:

  • 1-2 kiwi
  • 1/4 cup water
  • watermelon bones (if there are no seeds now, but you really want to make a cake, I think you can try replacing them with frozen blueberries)

How to make a watermelon cake - recipe:

  1. Cooking biscuit. Mix sour cream with soda, add oil and lemon juice. Pour sugar, vanilla, mix everything with a whisk.

  4. We put the form with the dough in the oven preheated to 200 degrees in the middle and bake for about 15-20 minutes. The biscuit should rise and brown.

  5. We transfer the finished biscuit to cool on the balcony. Then cut it with a long sharp knife into three parts. To do this, remove the sides of the mold, leave the biscuit on a round base, stick the knife parallel to the table, retreating 1 cm from the top, and, rotating the biscuit, cut off the first upper cake, gradually deepening the knife. Then carefully remove the top cake and cut off the bottom one using the same system.

  6. Now let's make the jelly. Pour cold water into the ladle, dissolve agar-agar in it, and, stirring, bring to a boil. As soon as it boils, remove from heat. Pour off half a glass and set aside, add sugar to the rest (its amount depends on the sweetness of the juice, in my case the juice was sour). Let cool until warm.

    Attention! Agar-agar freezes even when room temperature, so you need to be very careful and do everything on time.

  7. Preparing the layer for the cake. Whip the cream in a separate bowl.

  8. In another bowl, beat cheese with sugar and add mango puree.

  9. Add whipped cream to the resulting mixture and stir quickly and thoroughly (but not for long so that the cream does not fall off).
  10. Then carefully, in a thin stream, pour in the remaining half a glass of cooled (but not thickened) syrup with agar-agar, mix everything quickly.

  11. We form the cake "Watermelon". While the agar-agar has not thickened, we proceed immediately to the collection of the cake. Everything is very simple: we put the first cake on the dish.

    Advice: I will share a little trick: in order to fix a beautiful cake napkin on a dish, sprinkle the dish with water from a spray bottle.

  15. We decorate the cake in the form of a watermelon. To the cooled, but not thickened (if thickened - warm up) syrup with agar-agar, add juice (I used homemade juice from berries, cooked by my mother-in-law, it is sugar-free and has a very rich color). In principle, it can be added immediately with sugar, but I did not want to heat it in order to preserve the vitamins. Mix until smooth.

  16. Gently, evenly apply a thin layer of liquid jelly to the cream (preferably with a large spoon).

  17. Place the cake in the fridge for a few minutes to set quickly.

  19. Pour half of the remaining part of the syrup with juice and agar-agar and remove the Watermelon cake in the cold.
  20. Now finishing touch! You can leave the cake as it is, pouring all over the pink syrup, or you can add a green “rind” of watermelon. To do this, dissolve in 1/4 cup cold water 2 teaspoons of agar-agar and bring this mixture to a boil. Grind peeled kiwifruit in a blender and pour agar-agar into them, stirring quickly. Add sugar to taste.

    I did not quite right: I dissolved agar-agar in boiling water and mixed with kiwi, but the mixture almost did not thicken, because I did not keep the proportions: I had too much water and not enough agar. Therefore, I had to bring the mixture with kiwi to a boil - this made the color dimmer. The photo shows that not boiled kiwi is much brighter

  21. With a thin knife, carefully cut off the edge of the frozen pink jelly in a circle, making room for the green one.
  22. Gently pour the mixture of kiwi with agar into the vacant place around the circumference with a tablespoon or from a container with a spout.
