I will continue the topic of salads, although this one will not be so rosy in terms of calories. Unfortunately, the husband and son are not very satisfied diet food, and they require a hearty meal, every day. So you have to go on about the strong half of humanity.

As you may have noticed, I often come up with rice-based salads. They are both tasty and filling. Now is the time to pickle the cucumbers (I will talk about them soon), and these are the ones I will add to the rice. They harmonize perfectly with each other in taste. Ingredients:

100 g of rice;

3 salted cucumbers;

1 tomato;

1 carrot;

1 head of onion;

Vegetable oil.

First I boil the rice. I immediately add it, but not very much (cucumbers will do their job). By the way, you can safely use yesterday's rice porridge if it turned out crumbly and not very oily.

While the rice is cooling, prepare the vegetables for frying. Onion is sent to the pan with heated oil first. I took the sweet purple one.

While it is being browned, I quickly peel and rub carrots on a coarse grater. You can, of course, cut it into strips, but on a grater it turns out faster. In addition, grated carrots will fry faster.

Next in line is the tomato. You must first "scalp" from it, that is, the skin. To do this, ruthlessly pour boiling water over the tomato. After such a barbarous procedure, the skin can be easily pry off with a knife and pulled off like tape from glass. After that, I cut the tomato into cubes and send it to the pan with carrots and onions.

I also add a pinch of salt to this. I cover the pan with a lid so that the tomato starts up the juice, and the vegetables are stewed a little in it.

In the meantime, I cut cucumbers. The shape of the cut is arbitrary. You can even grate it like a carrot, but I already washed the grater, so I cut it.

Waiting for the fried vegetables to cool down a bit. Then I combine all the ingredients in one container.

I mix them and after 15 minutes I serve them on the table.

Lightly salted cucumbers - 2 pieces, onion - 1 piece, vegetable oil - 1 tablespoon, chopped dill - 2 tablespoons.

Somehow, in a very special way, I love simple and classic dishes including salads. It would seem that the recipe is extremely simple, but every housewife always turns out perfectly different dishes from the same products, that's the mystery! As for the Vinaigrette salad, it is a frequent guest on our table, especially during the season of fresh vegetables!

Many make vinaigrette with pickles, with sauerkraut, herring, green peas, onions, etc. I love all these variants of vinaigrette, but I especially like the Vinaigrette salad made from young vegetables and lightly salted cucumbers. seasoned with fragrant sunflower oil.

Today I want to treat you to this particular salad, try it!

To prepare the Vinaigrette salad with lightly salted cucumbers, you will need (for 2 servings):

1 large boiled beet;

1 large boiled carrot;

2 medium boiled potatoes in their skins;

2 small salted cucumbers;

1-2 tbsp. l. unrefined sunflower oil;

a pinch of salt (optional)

Clean the beets and cut into small cubes.

Add oil* to chopped beets and stir.

* - you can season the salad at the very end, but I really like it when the vegetables in the vinaigrette do not stain much from the beets, and the salad itself turns out to be gently pink, for this you need to add oil at this stage of the salad preparation.

Peel the carrots, cut into small cubes and add to the beets.

Peel potatoes, cut into small cubes, add to vegetables.

Dry the salted cucumbers, cut into small cubes and add to the salad. Mix the vinaigrette thoroughly, add oil and / or salt if necessary.

This recipe has been in my notebook for a very long time. In fact, it goes like a blank for the future.

I used to make it for the winter, but then, apparently, they were full - the jars remained, and I stopped closing it. But in the summer, during the cucumber season, I make this salad once or twice as “to eat like that”.

For Salted Cucumber Salad you will need:

4 kg of cucumbers;
- 0.5 kg of onions;
- 1.5 heads of garlic;
- 4 tbsp. l. salt;
- 6 tbsp. l. Sahara;
- 100 g of 9% vinegar;
- 300 g of vegetable oil.

I made a salad of 4 cucumbers, which is about 8 times less than in the recipe layout. Accordingly, I reduced the amount of other ingredients.

Complexity: below average.

Cooking time: depends on the number of ingredients, but it will definitely take 3 hours to pickle cucumbers. If done for the winter, it will take about 5 hours.

If like fresh salad, then 3 hours 20 minutes.

Rub the garlic into a large grater. I had 2 teeth.

I didn’t have a ready-made 9% vinegar, and I diluted 1 tablespoon of the essence in 8 tablespoons of water. I put about 1 tablespoon of diluted vinegar on my 4 cucumbers.

I dressed the salad with salt (0.5 tsp), sugar (1 tsp) and vegetable oil (2 tbsp).
