I made this simple and delicious soda bread following a classic Irish Soda Bread recipe. I just ran out of all the bread and there was nothing to make a sandwich with and just have a bite to eat with something tasty. I decided to bake Irish bread again.

Of course, quick soda bread is not at all like frivolous purchased baguettes, rolls and loaves. It is noticeably heavy, full of life and excellent taste. One piece of it weighs significantly more than the same slice from an industrial loaf.

Today's recipe differs from traditional soda bread with just the addition of prunes and a small amount of rolled oats and sugar. But you can do without them, although the rolled oats add a stunning embossed texture to homemade bread. Therefore, if there is a house oat flakes be sure to put it in. Very tasty.

I made soda bread with 2 types of flour: wheat and rye. It turned out homemade brown bread. But if you have only ordinary flour (wheat) at home, then you can bake bread only with it.

Bread on soda is very fast, it takes less than an hour to cook. It takes 5 minutes for the dough, another 45 for baking.

Composition of soda bread

for 2 round loaves

  • Wheat flour - 3 cups;
  • Rye flour - 3 cups;
  • Hercules (oatmeal) - 0.5 cups;
  • Sour-milk drink (the Irish have buttermilk, I took kefir) - 2 cups (500 ml in total);
  • Soda - 2 teaspoons;
  • Salt - 2 teaspoons;
  • Sugar - 4 teaspoons;
  • Prunes (you can raisins or dried apricots, nuts) - a large handful.

1 glass = 250 ml. But if you have glasses of a different volume (200 or 300 ml), just count as glasses (and kefir, and flour, and oatmeal), the proportions will be preserved. Salt-sugar-soda take, as in the recipe. Flour can be taken only wheat, if there is no rye (6 glasses).

How to bake soda bread

1. Preheat the oven to 220 degrees C

2. Knead the dough on soda for bread

  • Mix all types of flour and oatmeal.
  • Mix kefir (you can take yogurt, buttermilk or other unsweetened fermented milk drink) with salt and sugar. Add soda. Mix and quickly combine with flour.
  • Add prunes (but not required). Knead the dough so that it becomes homogeneous, not sticky to your hands.

3. Form bread for baking

  • Divide the dough into 2 parts, roll them into balls. If the prunes stick out, then push them into the dough (it must be inside so that it does not burn when baking bread).

This time I baked homemade bread on a silicone mat (greased vegetable oil) - very comfortably.

4. Bake soda bread

  • Put the koloboks on a baking sheet (dust with flour, or line with baking paper, or use a silicone mat). Cut across. Bake bread on the shelf of the oven, which is above average, the temperature is the first 30 minutes = 220 C, Then 15 minutes = 180 C.

Soda bread is very easy to prepare - no bread machine is needed! A simple oven is enough.

How to cool and store soda bread

  • Immediately cut and eat the finished bread, putting butter on the slices (you can add jam, in general - super!). Hot soda bread is the best. But if you store it, cool it under a towel, then store it in a tightly closed plastic bag (so as not to get stale).

And this is bread on soda, cooked by Katerina Davydova from home rye flour with the addition of seeds. She says that the liquid, in this case, was not enough, she added another 0.5 cups of warm water. Indeed, different flour has different properties, therefore, you can add water (but it is better to add yogurt, kefir or sour cream, or milk), making up for the lack of liquid. The dough turns out to be quite thick and plastic, suitable for making bread out of it.

Lubricate the multicooker bowl butter. The dough is distributed in an even layer in the bowl, cuts can be made on top of the bread. The slow cooker is set to the “Baking” mode and bread is baked for 35 minutes.

At the end of the process, the bread is pulled out, the crust is smeared with butter and wrapped in a towel. Once the bread has cooled, it can be eaten.

Irish soda bread with currants


Another interesting recipe cooking soda bread - with currants. Would need:

  • flour - 3 cups;
  • kefir - 1 ¾ cups;
  • sugar - 2/3 cup;
  • butter - 2 tablespoons;
  • baking powder - 3 teaspoons;
  • currant - ¾ cup;
  • salt - 1 teaspoon without a slide;
  • soda - 1 teaspoon (without a slide);
  • egg - 2 pcs.

Sift flour through a sieve, add baking powder, salt, sugar, soda to it; add currants. Melt the butter, beat the eggs and add to the flour. Then pour in kefir. Knead the dough. The consistency of the dough should resemble biscuit.

Lubricate the form with butter and distribute the finished dough in it. Heat the oven to 180°C and bake bread in it for an hour. You do not need to immediately remove the finished bread from the mold, it is necessary that it cools completely.

Darina Allen offered her own version soda bread recipe which is quite simple. To prepare it you need:

  • whole grain flour - 1 1/3 cups;
  • plain flour - 2/3 cup;
  • salt - 1 teaspoon, without a slide;
  • baking soda - 1 teaspoon, without a slide;
  • egg - 1 pc.;
  • vegetable oil (sunflower or other) - 1 tablespoon;
  • honey, molasses or brown sugar - 1 tablespoon;
  • buttermilk - 1 2/3 cups, add as needed;
  • sunflower seeds, sesame seeds - optional.

First you need to preheat the oven to 200°C.

Sift flour, add salt and soda to it. Beat the egg lightly and mix with flour. Then the rest of the ingredients are mixed in - honey, buttermilk, oil. Knead the dough thoroughly. If the dough is tough, add more buttermilk until the dough is soft. Ready dough slightly sticky to hands.

The mold is greased with oil, the dough is distributed in it. Sprinkle the top of the bread with sesame seeds or sesame seeds. Bake for 45-60 minutes, the readiness of the bread can be checked with a toothpick. Before serving, the bread is cooled to room temperature on the grid.

I bake this white soda bread when I really need bread at home, but there is absolutely no time for yeast bread. It is done very quickly, but it turns out very tasty, crispy and fragrant. Soda bread is popular among many nations, but I took the Irish recipe as a basis. The flour in this recipe can be whole grain, which makes the bread coarser but healthier, but it's also a traditional variation on soda bread. An important point in this recipe is to choose a baking dish, it can be a saucepan, a deep frying pan or a stewpan, the main thing is that it can be closed with a lid and put in the oven.

Ingredients:

  • 450 g baking wheat flour
  • 300 ml buttermilk (liquid yogurt, kefir, curdled milk or any other fermented milk product)
  • 0.5 tsp salt
  • 0.5 tsp soda

Bread making


  1. Turn on the oven and preheat it to 200 degrees. While the oven is preheating, make the dough. To do this, sift the flour into a large bowl and mix with baking soda and salt.

  2. Make a well in the center of the flour and add the buttermilk.
  3. Knead the dough with a mixer or by hand. The dough is quite soft and easy to knead. However, the dough should not be too soft, so add a little more flour if necessary.

  4. Sprinkle a board with flour, put the dough on it and form a ball with your hands. Flatten the ball a little, to a thickness of about 4 cm, so that you get such a plump circle.

  5. With a very sharp knife, and preferably with a blade, make cuts crosswise, to a depth of about one centimeter. The cuts should be deep, then they will open well and beautifully.

  6. For baking, you need a heat-resistant pan with a lid with a diameter of about 20 cm, no less, and a height of 7-8 centimeters. I use a heat-resistant glass pan, it can withstand temperatures up to 230 degrees well. The main thing: do not expose glassware to temperature shock. While the oven is preheating, the pan is on the stove and warms up a little, so the bread turns out best. Sprinkle the bottom of the pan with flour and put the dough blank into it. Cover the pot with a lid.

  7. Place the pot in the oven and bake on medium for about 45-50 minutes, until the soda bread has risen and is a nice golden color. Remove the pan from the oven and let stand for five minutes, then open the lid, remove the bread and cool it on a wire rack. If you leave the bread in the pan, it will become damp, and there will be no crispy crust.
  8. White soda bread turns out dense, with a small porosity, with a soft crumb and a delicious crispy crust.
