  • parsley (optional) - 5-6 sprigs;
  • dried dill (optional) - 1 tsp with a slide;
  • freshly ground black pepper - 1 tsp. without a slide;
  • vinegar 9% - 2 tbsp. l;
  • sugar - 1 tbsp. l;
  • salt - 0.5 tbsp. l;
  • sunflower oil- 2 tbsp. l.

How to cook zucchini like milk mushrooms for the winter

How crispy the “mushrooms” will turn out depends on the density of the zucchini. We need small, young, elastic, with a thin skin and without large seeds inside. Or bigger, “grown up”, but not sluggish and not soft. From such vegetables, you will have to cut out the part where there are seeds and remove a thin layer of peel. You need to weigh it after you clean it - there should be a pound of prepared zucchini. We cut them into circles of 2-2.5 cm thick and then cut into cubes or cubes.

Now let's prepare the fragrant mixture for the marinade. Finely chop dill with parsley (or without it). Grate garlic or sell it through a press, add black pepper, freshly ground and dried dill. If there is no dried one, we will do without it, although it will give the workpiece its own original taste and aroma.

In another bowl, mix salt, sugar and vinegar.

Bring to a boil, do not make the fire very strong, otherwise the glass may burst when heated. From the moment the water begins to boil and bubbles appear, we detect 15 minutes. This is the time for the 700 gram capacity. We sterilize half a liter for 10-12 minutes, a liter for 20 minutes.

The guarantee that the zucchini has steamed and become ready will be the changed color of the pieces: from greenish they will become olive or yellowish.

We carefully take out the jars, holding them under the bottom, and immediately twist the lids with which they were covered during sterilization.
