Until recently, I was very critical of muffins - they seemed to me boring and very primitive in taste, but now, during the marathon, which I am running on the basis of our Facebook page, I kind of tasted them and even fell in love. It turns out that such pastries can be interesting, bright, unusual and very appetizing! Moreover, it can be very, very diverse - let's say: a week ago, I didn’t even think that it might occur to me to bake such a thing, and today I’m already thinking how to diversify it - whether to add smoked cheese? or broccoli? maybe olives? or pepperoni? or some chilli? Moreover, the ham and cheese muffins turned out so delicious that my husband, my indifferent to food husband, for whom the most ordinary sandwich seems to be the ultimate dream, asked me to "repeat this recipe sometime." Here it is, my personal culinary Olympus!

Have you ever thought about why some cheeses melt perfectly, while others give only a hint of melting? When the cheese ripens, there is quite a lot of dicalcium paracasein in its composition - it holds back the rest of the ingredients and does not allow the cheese to melt. Over time and with the accumulation of lactic acid, dicalcium paracasein splits and gives way to monocalcium paracasein - but it is responsible for the fact that when heated, the cheese stretches and melts beautifully into threads.

These snack pieces turned out to be a real lifesaver: they are convenient (in transportation - that’s for sure: they don’t break, don’t spread, don’t smear all textbooks with oil), they are easy to eat (and then you don’t have to wash your hands from smoked sausage), well, and they are delicious (there are few children who refuse ham, and even in the form of muffins). In general, the pros - the sea, no cons. So - try it!


Ingredients:

1/2 tsp soda;

1/2 tsp salt;

300 g flour;

50 g of hard cheese;

150 g of ham;

250 g sour cream;

60 g melted butter.


We measure the required amount of flour. You can and should sift if you doubt the quality. If the flour is proven and good, there is no point in playing with a sieve. We also add salt and soda there - this is the dry part of the muffins. If you want to add your favorite dry herbs or seasonings to the dough, you can do it now.

We mix flour, soda, salt - carefully and with inspiration: given that the dough for muffins must be prepared quickly and without diligence, you have only one chance to carefully distribute salt and soda over pastries, and that chance is right now.


We cut the ham into beautiful cubes.


Grind the cheese in the same pieces as the ham.


Add the diced ham and diced cheese to the flour mixture. We mix.


We take another bowl-saucepan, melt butter.


Add sour cream (I have quite thick homemade).


We beat the egg. We mix.


We combine the liquid and dry parts, quickly mix with a fork.


We spread the dough into molds (fill 2/3 of the volume).


Bake at 200 degrees for about 20 minutes.


Delicious both warm and cold.

Good afternoon friends! Today we will prepare cupcakes, but not sweet ones, to which we are all accustomed, but snack bars with ham and cheese.

And to prepare the dough, we need: 200 g of flour, 1.5 teaspoons of baking powder, 100 g of butter, 120 ml of milk, 2 eggs (we take butter, milk and eggs room temperature), 1 teaspoon of sugar, 1/3 of a teaspoon of salt, 1/3 of a teaspoon of freshly ground black pepper, you can also add any other spices to your taste, 50 g of finely chopped or grated cheese and 100 g of any other filler (it can be sausage, ham, smoked brisket, fried mushrooms, olives, sun-dried tomatoes).

And we will start cooking, as for classic cupcakes, by whipping soft butter. Add sugar, salt, spices to the butter and beat at high speed until bright and fluffy. There is not a lot of oil, so it will scatter along the walls of the bowl, periodically remove it with a spatula and continue to beat.

When we have achieved a very lush, light state, we introduce eggs one at a time, each time beating for 1-2 minutes at high speed. The mass may exfoliate a little, don't let that scare you, it's okay.

Next, we need to mix the flour with the baking powder and sift about 1/3 to the beaten butter with eggs, mix at the minimum speed of the mixer until smooth. Next, pour in half the milk, mix again at a low mixer speed, sift the flour, then pour in the milk again and sift the remaining 1/3 of the flour. Thus, alternating each other, we add dry and liquid products, each time mixing the mass until smooth. The result should be a very fluffy and airy dough.

For flavor, I decided to add a little dried garlic with dried herbs and now you can add filler. Finely cut into cubes and mix the dough with a spatula. Cake dough is ready. You can bake them like silicone molds, and in paper capsules for cupcakes. In large capsules, 9 muffins are obtained, in ordinary standard small ones 3.5 cm high, about 12 muffins are obtained.

We bake cupcakes in an oven preheated to 180 degrees for about 25 minutes, top / bottom mode without convection. Be sure to check the readiness with a toothpick inserted in the middle, it should come out dry and clean.

Transfer the cupcakes to a wire rack and let them cool. Cupcakes can be served warm or cold. You can pre-remove the paper capsule, you can serve directly with it.

I propose to arrange cupcakes as an appetizer for the festive table - to make a hat of cream. For the cream, take 250 g of cream cheese, 80 g of heavy cream with a fat content of 30%, 2-3 cloves of garlic, passed through a press, and I will add a little finely chopped dill (any greens can be used). For the cream, we only need to combine all the products together, the cream and cheese must be very cold. I use salty cheese, so I don't add any extra salt. First, beat the whole mass at the minimum speed of the mixer until smooth, and then increase the speed to medium and beat the cream into a fluffy mass.

Next, we transfer the finished cream to a pastry bag with a beautiful nozzle and place caps on our cupcakes. This amount of cream is enough for 9 cupcakes, for hats not too large. And then we decorate our cupcakes and we can serve such a beautiful and unusual snack that will surely surprise your guests)

    Beat the egg with a fork and pour into warm kefir (room temperature).

    Add melted butter to it.

    Sift the flour, pour into the kefir mixture. Don't forget to add baking powder (it can be mixed with flour).

    Stir the dough. While it has not yet become homogeneous and dense, add spices and spices to it to your liking. Knead the dough until all ingredients are combined.

    Grate cheese or cut into pieces.

    Cut the ham into very small cubes. If you cut it large, it will be difficult for the dough to rise, and the muffins will turn out dense.

    Mix cheese and ham with dough.

    The dough will be denser than for sweet muffins, it will fall off the spoon in a lump, and not pour out.
