  4. We cut the fish into small pieces, the length and width of which will be no more than 1 cm. We mix all the products for the filling, add sour cream and spices, and then mix the mass thoroughly.
  5. We cut the dough into 4 squares, after which we stretch them slightly. We put the filling on each piece and blind the dough with an “envelope”. Fry pies with salmon for 20 minutes at a temperature of 200 degrees.

As they say, everything ingenious is simple - the recipe is really simple, and besides, the envelopes are so airy and the fish in them is so tasty that you can swallow your tongue :)
By the way, whoever masters the entire text and reaches the end, I have prepared for him as a reward delicious dessert. All you need for this dish is slightly salted salmon - 200g and puff yeast-free dough- 250 gr. A little flour for rolling out the dough, one egg for greasing, a couple of lemon wedges for accompaniment.


I have salmon steaks in the freezer - slightly defrost and make slightly salted salmon- easy peasy. During the night spent in the refrigerator, the salmon became a little softer in order to cut the steak into small fillets.


Divide the steak in two and sprinkle with a little coarse sea salt.


I wrapped it in tracing paper, put it in a container and again sent it to the refrigerator for the night - to salt out.


In the morning he removed the skin, removed the spinal bone and other smaller bones, and cut the fish into strips.


The puff pastry was slightly warmed up in microwaves and cut into 4 squares 5x5 cm. On a table sprinkled with flour, rolled them out to a size of 10x10 cm.


I laid strips of salmon along the diagonals of the squares and pinched two opposite corners.


For a beautiful color scheme, it would be nice to grease the envelopes with a beaten egg.

And actually, here is the result for you - beautiful, airy envelopes crispy in your mouth with excellent lightly salted salmon - I consider this one of the delicacies that you will not be ashamed to serve to your dearest guests - and because of the speed of preparation, you can serve it still warm, when their taste is most vivid and the tenderness of the test exceeds all reasonable limits :).

Now my comments on the merits.
I noticed that the envelopes do not brown at the same time: the top ones are on the grill, they become fried earlier than the bottom ones. There is a simple way out of this - as soon as the top envelopes are cooked, remove the grate and continue baking the remaining ones on the grid. This is a very simple procedure that practically does not delay the process.
Secondly, the number of fish inside each envelope can be doubled compared to that proposed in the recipe.
And finally, the third - it is quite possible to place not two, like mine, but 4 envelopes with fish on each surface - there is enough space for this - and you will get 8 awesome crispy patties with gourmet fish. Ready menu for a friendly party :)

And now the promised dessert - hungarian cheesecake with cottage cheese in puff pastry.

Now we collect our dish. We roll out the dough into a layer of such a width and length that it is possible to completely cover the fish fillet. Place one sheet of dough on a baking sheet moistened with cold water.

We lay one half of the fish on this layer of dough and cover the fish with the oil mixture. As it cooks, the butter will slowly melt, infusing the fish and dough with the flavors of the spices. Top with the second piece of fish and cover with dough. Press the edges well with a fork, cut off the excess dough.

And we make decorations from these scraps. Roll out the dough and cut out shapes with cookie cutters. I made Christmas trees and stars.

Lightly shake the raw egg yolk with a fork. With a brush, grease the entire surface of the dough with yolk, attach decorations and grease them too.

Put the baking sheet in the oven preheated to 150 degrees in advance, in the middle, for 30 minutes. Increase the temperature to 180 and let the cake brown.
