Fritters with cherries are much more interesting and tastier than without filling: juicy, truly summer. Whole berries in pancakes - a real surprise for the taster!

You can also make such pancakes with apples, apricot slices, peaches, raspberries, blueberries!

Ingredients:

  • 3 eggs;
  • 4 - 5 tablespoons of sugar;
  • half a liter of kefir (sour milk);
  • 1 teaspoon baking soda;
  • 1 ¼ - 1.5 cups flour;
  • a handful of pitted cherries.

How to bake:

Cooking universal dough for pancakes on kefir. In short - mix eggs with sugar; pour in kefir, pour in soda and then, after mixing the dough, add flour. But we do not pour out all the flour, but 2/3.

After we mix the dough well, pour the remaining flour and put the cherries into it.

Mix again - carefully so that the cherries do not let the juice out too much.

You need to fry pancakes in a well-heated pan, over high heat and a rather large amount of sunflower oil. Then they turn out lush, ruddy, tender!

Pour the dough with a tablespoon into a hot frying pan with oil and wait until the pancakes are fried on one side.

You will see that it is time to flip when bubbles appear on the pancakes - this means that they are baked and fit well.

Turn over with a spatula to the other side and fry a little more from the second side. It will be faster than the first one, since the pancakes are almost ready.

Remove them with a spatula to a plate.

If you can’t wait to try it as soon as possible - which is right, the freshest pancakes are the most appetizing - pour them with cool sour cream to cool down quickly!

400 g flour, 200 g pitted cherries, 2 tbsp. spoons of granulated sugar, 2 eggs, 250 ml of milk, 1/2 teaspoon of soda, salt to taste.

Mix flour with sugar, soda, then add eggs and milk. The dough should come out like thick sour cream. We adjust the sweetness, "fatness", the degree of pomp and the amount of cherry "filler" in these odadushkas to taste: if we want more lush - add a little more flour, we do the same with the amount of sugar, if we cook with sour cream, it can be diluted with water, etc. d.

1 . Wash the cherries, remove the seeds from them.

2 . Mix eggs with a whisk with sugar, add kefir ( spoiled milk, fermented baked milk, sour cream or curdled milk), mix.

In several steps, add the sifted flour, salt, soda to the dough, mix.

The dough turns out like thick sour cream
(for lush pancakes for half a liter of kefir we take 1.5 cups of flour).

3 . Drain the juice from the cherries, add them to the dough and mix gently.

4 . Heat up the pan.
Important: if the pan was wet, be sure to wait until all drops of water have completely evaporated.

5 . Pour 1-2 tablespoons of vegetable oil into a dry hot frying pan, wait a bit until it warms up.

6 . We spread the dough for pancakes on a well-heated pan with oil, in small portions, a tablespoon, at a sufficient distance from each other.
After we put the dough into the pan, reduce the heat to medium.

7 . Fry the fritters on both sides until a nice golden color.
You can fry the first side under the lid, it's faster.

We turn over to the other side as soon as our pancakes "grab" from below and onto batter bubbles will appear.

8. Put the fried pancakes on a plate and serve immediately, as they are best served hot.


If you want to reduce the amount of fat a little, hot pancakes can be laid out on a paper towel immediately after baking, but, unfortunately, this will not help much.
To make fluffy pancakes absolutely non-greasy, they need to be baked in the oven or fried in a "dry" frying pan under the lid: cm.

How to make pancakes with cherries on kefir

Starting cooking, take egg and beat it with salt and sugar.

Then, add kefir preheated in the microwave to the egg. We mix. Next, add soda. Kefir is acidic, so there is no need to extinguish it.

Add flour (preferably sifted) and vanillin to the resulting mixture.

Mix well the dough for pancakes. We make sure that there are no lumps.

Wash fresh cherries. Free from bones. Put in a colander to let the juice drain.

Add cherry berries to the dough.

Once again, gently mix the dough.

We bake pancakes in a pan with the addition of vegetable oil. We use medium fire when baking. As you can see, cooking seasonal yummy does not take much time.

We spread the pancakes with cherries on a flat plate, placing napkins to remove excess fat. Unusual and delicious dessert ready!
