If you are a lover delicious pastries, a variety of desserts - use buckwheat and flax flour more often. Perhaps this is the most easy way maintain your figure in perfect condition, while not denying yourself sweet pleasures. When baking, it is recommended to replace a third of the volume of flour used with flour from flax seeds, buckwheat. They contain vegetable proteins that perfectly saturate our body, while being easily digested. I want to note that flax seeds are rich in polyunsaturated fatty acids omega-3, omega-6 - excellent antioxidants, regulators of fat metabolism.

I present to your attention my premiere - mini buns. I make them at once, so the ratio of products in the recipe is minimal. You can increase the proportions, make the buns bigger.
I can say with confidence that such pastries are good for the body, especially for the stomach and intestines.

For cooking you will need the following ingredients:

  • Kefir 1% - 100 ml.
  • Premium wheat flour - 8 tbsp.
  • Flax flour - 2 tbsp.
  • Buckwheat flour - 2 tbsp
  • Flax seeds - 1 tsp
  • Sugar - 1 tsp
  • Soda - ¼ tsp
  • Raisins, dried apricots, roasted peanuts- 30-40 g. (to taste)
  • Vegetable oil (for lubrication)

Cooking:

Prepare the flour mixture: mix flaxseed, buckwheat, wheat flour top grade. Add flaxseeds.


Let's take kefir room temperature, add sugar, soda. Put in a warm place - let the mixture foam.



Pour the kefir mixture into the flour mixture.
Knead the dough a little weaker than for dumplings. We carefully monitor the state of the dough (it should be slightly sticky to your hands).

Add raisins, chopped dried apricots and peanuts. You can choose any other fillers: prunes, dates, almonds.

I cooked and baked these buns in one go. Light ones (see photo) are mainly on flour, and dark ones are on bran.

Bran I advise you to make unsweetened. They are perfect for making burgers or sandwiches. And I made the light ones sweet. They are a bit like cheesecakes and go well with jam or chocolate and nut butters. In any case, such rolls are a good breakfast base.

Ingredients

On a note! The recipe for bran buns uses not very common green buckwheat and red rice flour. In their absence, you can use any other useful flour. But still, I advise you to buy buckwheat flour (green) - it is very healthy, less high-calorie and has excellent binding properties - it is required less.

Cooking

These recipes are incredibly simple and take very little time to prepare. In short, we work on the principle of "mixed - rolled - put in the oven."

For cottage cheese and rice buns (sweet)

For bran buns (unsweetened)

1. Mix the cottage cheese with the egg. The drier the cottage cheese, the better.

2. Mix dry ingredients in a separate bowl.

3. If sakhzam is liquid, then we mix it into the curd mixture, if it is powder, then into dry.

4. Combine both mixtures and knead a thick dough.

1. We breed yeast in warm milk. Leave until completely dissolved.

2. Mix the cottage cheese with the egg. Add milk with yeast, psyllium. Leave for 15 minutes to thicken.

3. Grind bran in a coffee grinder, mix with flour, salt and spices / herbs.

4. Combine the curd and flour mixtures and knead a thick dough.

5. We form balls with wet hands and put them on a non-stick mat / parchment, on a baking sheet.

6. Bake the buns at 180°C for 30 minutes (the cottage cheese buns should turn golden).

I mixed the dough in a blender more often. Pour cottage cheese into it and drive two eggs into it.


We put here two tablespoons of soft cottage cheese.


After that, pour the gluten and baking powder into the bowl. Baking powder, of course, can be replaced with slaked soda. Salt a little. If the buns are definitely salty, you can add spices or dried herbs to taste.


Next, pour in the bran. Many advise grinding them into flour, but it seemed to me absolutely superfluous. You will also see this when you see the result.


We well interrupt the entire contents of the bowl to get a homogeneous tight mixture. It will be sticky, but still try to carefully fashion the buns. I measured 80-90 g of dough for each roll.


We send the baking sheet to the oven preheated to 150 degrees. The buns will be baked for 30 minutes, then turn off the oven, but leave the buns to cool inside.


We get soft buns with a thin toasted crust. They can be used on burgers or simply eaten like bread. You can make vegetable du-jam and grease such buns for tea with it.


Inside the dough is not raw (this happened to me when I used other recipes with bran) and not rubbery, although there is quite a lot of gluten. And, although the bulk of the dough was occupied by cottage cheese, it is not visible at all in the finished bun.


I made myself some great sandwiches today. Greased halves of buns soft cottage cheese and add slices of poultry ham 3% fat.
On the Dukan diet, these buns can be eaten in two days (according to the norms of bran and gluten).

I am one of those girls who sometimes tries to watch their diet, but cannot deny themselves their favorite foods. No fruit can replace sweet for me. Until I eat what I dream about, I will walk unhappy and sad all day. One of those days, I found a diet version of my favorite cinnamon rolls, which I fell in love with as a child. The coolest thing about this recipe is that it doesn't require any rare flours or expensive sweeteners. Everything you need is already in the refrigerator or sold at the nearest grocery store.

So, the ingredients for the dough:

1. Kefir 1% - 100 ml. You can, of course, take kefir with a high percentage of fat content, but this will not be of any use. Do not take fat-free kefir for anything, because due to the too liquid consistency, the dough will not turn out to be dense enough, and lumps will appear on the surface.
2. Low-fat cottage cheese (~ 10%) -180-200 gr. I advise you to take grain cottage cheese. Of course, the reason is again in the consistency of the dough. If it turns out to be too liquid and sticky, then you will have to add more flour, but do you need it?
3. Eggs - 1 pc. There is nothing to add here. There is no point in more, and without it nothing will come of it.
4. Flour ~200 gr. This is an incredibly important point. The whole point is in the sign denoting "approximately". You may need less or more flour - it all depends on the brand of the product, so it's best to have a supply.
5. Soda - 1/2 teaspoon. No quenching with vinegar is needed. And it is better to evenly measure the soda: without a slide, but not too little. Add less and there will be no effect, and if you add more, then you will get excellent cinnamon and soda buns.
6. Baking powder - 1 full teaspoon. Nothing bad will happen if you overdo it a little (the maximum is a hillock on a spoon).
7. Sugar - 3 tablespoons. To prevent the dough from being too bland, you can add a sweetener.

For the filling we need:

1. Cinnamon - 3-4 tablespoons. You can change the value to taste.
2. Cocoa powder - 3-4 tablespoons Cocoa will perfectly complement the buns, make them beautiful and incredibly fragrant.
3. Sugar - 1 tablespoon. This point may surprise some, but I remind you that the recipes are designed according to my taste. You can choose not to add cocoa at all or use a sweetener. I don't think there is anything wrong with sugar. Everything is good in moderation. It is worth noting that I drink tea without sugar, so I can safely afford it in such quantities in baking. Also, sugar adds viscosity to the filling, so it becomes easier to work with. When I first made these buns, I didn't know how much water to use. In the end, I overdid it, everything leaked out, because I mixed cinnamon with water. Of course, there could be no talk of any viscosity here. Something very strange came out.
4. Honey - 2 teaspoons. This is the trump card of the whole filling! Aroma, taste, consistency - honey has a good effect on everything.
5. Warm (!!!) water - to the desired consistency.

You should have a thick mixture similar to cheesecake dough. You add water based on the amount of dry ingredients.

So, when all the products have already been bought, we begin to create.

1. To begin with, mix cottage cheese, egg and kefir in a bowl / saucepan / salad bowl / any container convenient for you. I always mix the ingredients with a regular fork, it's more convenient for me. Do not be alarmed if there are many whole grains of cottage cheese left. I assure you that they will not be felt a bit in the test, although their appearance may confuse. For example, I hate cottage cheese, so when I cooked these buns for the first time, I experienced an indescribable shock and fear, because no one warned me about it. But you are a little more fortunate.
2. Next, add baking soda, baking powder and sugar to the mixture. Pour everything at once and mix thoroughly.
3. After all this, we carefully sift the flour (I do this with a colander or sieve). Knead the dough, slowly adding flour. It is necessary to achieve a dense consistency so that it does not break while rolling into a roll. Otherwise, all the filling will flow out of the cracks formed and there will be nothing to do with it. Feel free to add flour until you get the result, BUT add in small portions so as not to overdo it.

Filling preparation:

1. Everything is as simple as possible here: mix all the ingredients and pour water to a thick consistency.
2. Next, we begin to make something tasty from the resulting masses: we roll out the dough in a rectangular layer. I advise you to sprinkle the surface with flour so that nothing sticks to the table / board. If the dough sticks a little to the rolling pin, then you can also add a little flour on top.
3. We distribute the filling over the entire layer, leaving a little free space across the width so that nothing flows out while the roll is rolling.
4. After distributing the cinnamon mass, we simply carefully twist everything along the width line.
5. Next, cut the roll into pieces of 3-4 cm and send it to the oven preheated to 180 degrees for 30 minutes. There should be at least 5 cm of free space between the buns so that they do not stick together.
6. Lubricate the mold with any oil of your own choice (I have non-stick, so there is no need for this).
7. Do not forget to keep an eye on baking, because all ovens have different capacities, and, of course, at the end, you need to check the readiness of the dish with a toothpick. Bon Appetit everyone!

Today for you my recipe is simple dietary, at the same time, tasty and delicate baking from curd. The roses turned yellow because the dough contains cornmeal. But you can make them, at your request, pink by adding beet juice to the dough. Above dietary buns can be sprinkled with cinnamon or sesame seeds.

Diet buns "Yellow roses" recipe

Ingredients:

  • Wheat flour 1 grade - 1 cup
  • Corn flour - 1 cup or less
  • Cottage cheese– 250 g
  • Honey - 2 tablespoons
  • Egg - 1 pc.
  • Syrup from any jam - for lubricating the dough
  • Butter (softened) - 70 g
  • Baking powder - 1 tsp
  • Salt - a pinch

My cooking method:

1. Mix two types of flour with salt, baking powder
2. Add softened butter and a mixture of cottage cheese, honey, and eggs
3. Knead soft dough such a consistency that it does not stick to the hands


5. Lubricate its surface with syrup (I took the syrup from) so that the layers can be easily separated from each other



7. Cut the roll into pieces about 5 cm wide


8. Shaping them roses pinching the bottom
9. Place on a baking sheet covered with parchment


10 We bake the semi-finished product in a preheated oven at 180ᵒС for 15 minutes.
