I was wandering around the courtyard of the former Trekhgornaya manufactory and came across a pleasant, good wine bar with interesting food. I was reminded of Touché this year while exploring another wine establishment called Litro. It turned out that these two points have the same owners. Since Litro instantly captivated me with its laid-back seriousness and creative approach to gastronomy and wine, I decided to pay its big brother a visit.

At lunchtime, Touché greeted me with a red façade with black accents and a row of coniferous plants. The cafe and grocery store were still hidden behind the glass door. There is a crush in the shop, silence in the cafe. In daylight the room looked different. The loft style, red brick, white brick, bottles under the ceiling, shabby wood around the perimeter and mismatched furniture remained unchanged, but in the rays of the sun they began to play differently, more vibrant and warm colors appeared in them. The open kitchen, like last time, was in full swing with activity, and this despite the minimal workload.

The menu is still small and unusual. The names are strange, but the descriptions are quite voluminous and fully convey the essence of the chef’s ideas. The food looked very nice, but there were problems with the taste components, although there were obvious successes.

“Sea bass ceviche with mango sauce” looked interesting and bright, but the fish was warm, there was too much onion, and it was so aggressive that even the desired spiciness from the sauce could not cope with it. “Trout Gravalax with Quinoa Tabbouleh” - appearance delicious, spicy yogurt - excellent, moderately sour, moderately creamy, tabbouleh, which was very reminiscent of millet, had a rich taste, without dryness, without lumps and blandness, but the trout was empty, tasteless and, like a guilty tomboy, hid behind other elements dishes. But “Baked cauliflower with homemade ricotta” did not disappoint. A year ago it was served with stracciatella and the combination didn't work. This time the combination worked like a charm. Cabbage is the star and the prima donna, the rest of the ingredients are servants, but the servants are high-quality, conscientious. “Beef tartare” disappointingly did not reach a good rating. The meat is of high quality, the cutting is correct, the appearance is fascinating and appetizing, but the taste only caught acid and onion. The "chopped beef burger on a potato bun" with fries arrived cut and fried. Externally, the cutlet was a dense, homogeneous mass, frightening in its grayness. But as soon as you tried it, the entire taste palette hit your receptors, hit you without hesitation, from all weapons, leaving nothing in reserve. The meat is juicy, the meaty taste is noticeable. The bun was tasty, the right size and with the right crust, it held the sauce in itself and did not let the meat juice out. The additional ingredients accompanied the cutlet like professionals. And what pickled cucumbers there were! These are not cucumbers, they are a work of culinary art! The French fries didn't disappoint either - lively, crispy on the outside, soft on the inside, with cheese crumbles and a golden crust. And everything would be fine, and one could rejoice and clap one’s hands at the next gastronomic progress, but “Beef rib with mashed potatoes” arrived at the table, which was cut up in the kitchen and placed in small slices on the bare, weathered bone. The meat was tough, dry and at the same time too fatty, I don’t know how this could have happened, but it did. And the puree generally settled on the plate in one large white puck, which could be lifted entirely and turned over. The potato mug had some kind of artificial, repulsive, plastic taste. Sadness and slight disappointment flowed smoothly into dessert, namely “Donuts with tiramisu cream.” There are no complaints about the donuts themselves, they are funny guys, soft and crispy, but they were spoiled by the filling. She had nothing to do with tiramisu. There was only coffee in it, ground coffee at that, which grated like sand on the teeth.

The staff worked competently. Everyone was extremely polite, professional and attentive. Cutlery was changed, dishes were taken away, napkins were brought, answers to my questions were at the ready.

This time Touché not only did not reach the top five, but also dropped one notch. It's a shame, but nothing can be done, now the food there is worth three points.
