Recipe shortbread pie with cherries:

Sift the wheat flour, add granulated sugar and mix, put pieces of cold butter into the flour. Using your hands, rub the butter and flour into crumbs.


Make a well in the flour crumbs, add the egg yolk, and while kneading the shortbread dough, add another 1-2 tablespoons of cold water.


The dough should turn out plastic and soft. Wrap the resulting lump of dough in cling film and place in the refrigerator for half an hour.


Roll out the chilled dough into a round sheet approximately 4mm thick.


Roll the dough onto a rolling pin and transfer to a round baking pan.


Lightly press the dough against the sides of the mold; remove excess dough by cutting it with a knife or rolling it along the sides of the mold with a rolling pin. Make a few rare punctures with a fork.


Cover the dough with parchment and cover it with dry beans (peas) so that the crust does not deform during baking.


Bake for 15 minutes in an oven preheated to 200˚C. After baking, remove the peas.

While the cake is baking, prepare the cherries and filling: pit the cherries.


Mix granulated sugar, vanillin and starch.


Add sour cream, mix.

Beat in the egg.


Beat the mixture thoroughly with a whisk.


Place pitted cherries into the prepared shortbread cake.


Pour in sour cream filling.


Bake the cherry pie for about 18 minutes at 200˚C.


Cool before serving. Sand pie with cherries is ready!


This cherry pie recipe is very easy to prepare and is suitable for anyone just starting their culinary career. In the process of preparing the shortbread dough, it will melt a little, so we put the form with the dough in the refrigerator for 20-30 minutes, or better yet, in the freezer for 10-15 minutes. Try to form the edges of the frozen dough as best you can.


Thaw the cherries and drain all the liquid. Place the berries on top of the dough.


Sprinkle sugar on top of the cherries, I used about 3 tablespoons, and you can use as much as you can afford :) Next, remove the baking dish and place it in the oven preheated to 180 degrees. Bake the cherry pie on shortcrust pastry for about 40-50 minutes

Shortbread pie with fresh cherries

Fresh berries are rich in vitamins and nutrients, they help fight colds and perfectly satisfy hunger. Shortbread pie with cherries freshly picked from the bush retains all the beneficial substances of the berry, it is incredibly tasty and aromatic. The sweetness of the shortcrust pastry is complemented by the slight sourness and tartness of cherries.

Ingredients:

  • flour - 500 gr.;
  • butter - 250 gr. (you can use spread or margarine);
  • sugar - 1 glass;
  • chicken egg - 4 pcs.;
  • baking powder - 30 g;
  • vanilla sugar - 2 tsp;
  • lemon zest;
  • fresh cherries - 600 gr.;
  • mixture of ground nuts - 100 g;
  • sugar - 6 tbsp. l.;
  • flour - 6 tbsp. l.;
  • frozen butter - 80-100 gr.

Soften the butter a little, leaving it for 30-40 minutes at room temperature, then grind with regular sugar. Add vanilla sugar, then add eggs and beat until foamy. Mix flour with baking powder and lemon zest, combine butter and flour mixture, mix thoroughly.

Place the dough on a parchment-lined baking sheet and form sides. Place washed and pitted cherries on top. Grate the frozen butter or grind it in a blender, mix with nuts, sugar and flour, then pour the resulting mixture over the cherries. Place the dish in a preheated oven and bake for 40 minutes until fully cooked, at a temperature of 180º.

This cherry pie made from shortcrust pastry will appeal to all sweet tooth lovers. Along with cherries, you can use any berries as a filling, and whipped cream or buttercream are suitable for filling. Remember that fresh cherries must be pitted before adding to the pie, otherwise the finished dish may acquire an unpleasant, bitter aftertaste.

Shortbread pie with frozen cherries

The dessert is easy to prepare and does not require any special expenses. Combining regular shortcrust pastry with sweet and tart cherries creates a flavorful pie.

Ingredients:

  • chicken egg - 2 pcs.;
  • flour - 300 gr.;
  • butter - 150 gr.;
  • vanillin - 5 grams;
  • sugar - 200 gr. (for filling 5 tablespoons);
  • two teaspoons of baking powder;
  • frozen cherries - 500 gr.

Grind the softened butter with sugar and eggs using a fork, then add baking powder, flour and vanillin to the mixture. Knead the dough with a spoon or silicone spatula, then place it in a greased pan and place it in the freezer for 10-15 minutes until it freezes slightly.

Remove the dough from the refrigerator, place previously defrosted pitted cherries on it, and sprinkle generously with sugar. Place in the oven and bake at 180º for 45-50 minutes.

The finished dish will have a wonderful cherry aroma and can be topped with whipped cream or curd cream. Remember that after defrosting, all excess liquid from the berries must be drained, otherwise the pie may lose its shape.

To prepare the shortcrust pastry cherry pie dough, prepare the butter. Take it out of the refrigerator, chop it into pieces, place them in a blender container or other container in which you prepare the dough, and leave for a few minutes to soften. To speed up the process, you can place the oil in the microwave at low power 300-450 for a minute.

Then rub the butter with sugar and vanilla sugar, don't forget to add a pinch of salt.


Add flour, two glasses is about 260 grams. Keep in mind that one 200 ml glass equals 130 g of wheat flour, not 200! The most convenient and correct way is to prepare shortbread dough using kitchen appliances. Shortbread dough is not the kind of dough that loves the warmth of your hands. Mix all ingredients in the bowl of a blender or food processor using kneading knives or a spatula in a bowl.


The dough should look like crumbs. Pour in ice water and use your hands to gather the dough crumbs into one ball. Then there are two possible options.


First: distribute the dough according to the form in which you will bake the cake, i.e. Cover the bottom with dough and form sides.
Second: roll out the dough on baking paper or foil and then transfer the dough cake into the mold along with the surface on which you rolled it.

In both options, the dough needs to be cooled for 20-30 minutes in the refrigerator or 5-10 minutes in the freezer.


Use the time while the dough is chilling to prepare the cherries for the filling. Fresh cherries are used, although you can experiment with thawed ones...

You need to tear off the branches with leaves and remove the seeds. There are special convenient tools for removing seeds, and if you don’t have them in your kitchen, use a suitable stick. This could be a sushi stick, the back of a blender whisk, or the like, something in the form of a stick with a diameter of 3-5 mm.

Hold the cherry in your palm, pierce the surface opposite the place where the fruit is attached to the branch with a stick, and then pierce through. The stick will push out the bone in the place where the twig was. Additionally, you can first mark the entry and exit points of the stick with a knife if you have little experience or want the cherry to better retain its shape.


For chilled dough, often prick the surface with a fork and place in an oven preheated to 180-200 degrees for about 20-25 minutes. But the baking time still depends on the properties of the oven, so wait and catch the moment when the dough turns golden.


While the dough is in the oven, make the chocolate cream. To do this, heat the milk or cream along with the butter in the microwave under a hood or on the stove in a saucepan until almost boiling.


Break chocolate or even just inexpensive budget chocolate bars into arbitrary pieces and melt in this hot milk mass.

Today, almost any fruit is available to us at any time of the year, and if you want to cook something fresh and summery in the middle of winter, then you can easily do it. This also applies to desserts, so when I recently wanted to bake a cherry pie, I simply took the berries out of the freezer, and literally an hour later I had a delicious dessert on my table.

How to decorate and what to serve with

  • If you are preparing a closed pie, the easiest way is to decorate it with the same cherries that you use for the filling. Or sprinkle it with powder, jam or topping.
  • The pie, with meringue or open, turns out beautiful as it is, and it doesn’t need any extra decorations.
  • This dessert is best served with sweet tea or juice to balance the sourness in the pie. But if you like sour things, you can simply brew black, green or herbal tea, pour yourself a cup of coffee or brew cocoa.
  • Even mulled wine or grog would go well with this pie on a cold evening. And if you don’t want to drink alcohol, you can replace it with a cup of warm milk.
  • If the dough comes out runny, don't be afraid to add a little flour. It all depends on the products themselves, so it’s better to regulate the amount yourself rather than strictly follow the recommendations.
  • To remove excess juice from cherries, you can add a little starch to it. It will absorb any juice or water left after freezing so your cake won't be soggy.
  • If you use frozen cherries, be sure to defrost them beforehand. If you put cherries in a pie with ice, they will melt and release juice, which can ruin your pie and make it soggy.
  • Let the fresh cherries sit in cold water for a while so that all possible worms come out of them.
  • The easiest way to remove the pits from cherries is with the eye of a pin.
  • Sprinkle the table and hands with flour when you work with the dough, then you will definitely knead it well and not tear it.
