Lately, our Nastya has been completely giving up sweets (and thank God), but we hold salty foods in high esteem. I ordered salted straws in Poland... But the price is too high) This is my third attempt to make straws, all the previous ones were simply terrible. I couldn’t adapt any of the recipes from the Internet to our flour - the dough crumbled and it was impossible to roll it! This recipe was invented taking into account the characteristics of our flour and turned out to be an absolute victory - the sticks are crunchy, the dough is elastic, the dough is generally minuscule and the price is many times cheaper!
For the straw you will need:
120 grams flour (3.96 fa, 0.34 protein)
5 grams of vegetable oil
0.5 reconstituted egg
25 grams butter(7.75 fa, 0.125 protein)
70 ml boiling water
1 teaspoon baking powder
salt to taste
Yield 130 grams. In 100 grams there are 9 fa, 0.36 protein.
Preparation:
Pour 60 grams of flour into a bowl, pour vegetable oil and pour into boiling water. Mix thoroughly with a spoon, trying to break up the lumps as much as possible.
Add chopped small cubes cold butter, reduced egg (beat 5 grams of powder + 20 ml of water with a mixer), add salt to taste and mix everything well again
Add the remaining 60 grams of flour and baking powder. Mix the soft and elastic dough. You can start working with the test right away.
I have this special tool - an extruder. You can use the attachment on a meat grinder, various kitchen devices, you can buy a 20 cc syringe and squeeze it out, or you can just roll it out with your hands)))
After everything has been placed on a baking sheet, you need to grease our straws with water and sprinkle with salt, you can also sprinkle with paprika or other spices.
Bake at 180 degrees. I checked for readiness, as always - took it out and tried it)

My grandson came to visit for the weekend, and he really loves sweet straws. And so I was inspired to try to make it myself. But since there was already too much sweet, I wanted something salty. And I like salty baked goods more than sweet ones. I searched on the Internet for how to do it the factory way. Found it. True, I couldn’t find the exact ratio of ingredients - only a general description.
I would like to present to your attention my “masterpiece”. I used focaccia dough as a basis. I really liked the taste of it).
At first I made a half dose, which I give in the ingredients. If you want to do more, double it. Let's begin.
Take warm water and dissolve sugar in it (in the factory description, solutions of sugar, salt, margarine were taken everywhere), add yeast. Let them completely dissolve.
Melt the margarine, and I dissolved the salt in it.
Pour into the yeast.
Stir and add flour.
Now the hardest part of this process is kneading. If you have a dough mixer, great; if not, it’s difficult. Knead the dough for 10-15 minutes. Of course, it’s not like for shane women, where they knead for 30 minutes, but still.
Cover with a towel or film and leave to ferment for 40 minutes. Result.
Now we need to make thin flagella. I tried different ways. If you succeed, roll it straight into ropes.
The main thing is that they have a diameter of 4-5 mm. I got about 1 cm. - As a result, after baking, bread sticks came out.
Which, in principle, was also not bad)
But I need a straw! That's why I liked the second option better. Roll out the dough into a cake no more than 4 mm thick.
Cut the ribbons with a thickness of again no more than 4 mm
and form flagella from them.
At the factory they are treated with a soda solution - for less sticking and a beautiful golden brown crust - I can assure you - I did it - I didn’t see a difference. So there is no need to carry out such treatment at home. The only way to apply it is with a brush so that the powder sticks better - be it salt or poppy seeds. Place the sticks on a baking sheet.
And bake in the oven at 220 degrees for 7-10 minutes. They prepare very quickly. Here she is:
From the specified quantity, three such filled mugs were obtained. I can assure you that in terms of crunchiness and taste, they are very store-bought) they look, of course, clumsy)) The sweet straws are prepared a little differently; when I get ready, I’ll post them.
