  • The traditional technology for preparing Czech-style tomato salad does not require peeling them, but many housewives remove the skins from tomatoes before preparing the appetizer, claiming that this has a beneficial effect on the taste of the appetizer.
  • You need to cut tomatoes with a special knife that resembles a saw with fine teeth. This device allows you to cut the skin without effort, as a result you do not have to squeeze out a lot of juice.

Composition (per 1 l):

  • tomatoes – 0.7 kg;
  • onions – 100 g;
  • garlic – 2 cloves;
  • allspice peas – 5 pcs.;
  • bay leaf – 2 pcs.;
  • water – 0.5 l;
  • salt – 25 g;
  • sugar – 30 g;
  • table vinegar (9 percent) – 20 ml;
  • refined vegetable oil – 20 ml.

Recipe for the occasion::

Cooking method:

  • Sterilize the jars and boil the lids that fit them for 5 minutes.
  • Place washed and dried spices at the bottom of the jars.
  • Use the flat side of a knife to crush the garlic cloves, chop them finely with a knife and place them in jars.
  • Wash the tomatoes, dry them with napkins.
  • Cut out the seals around the stalks. Cut the tomatoes into large slices, dividing each fruit into 4-8 parts.
  • Peel the onion and cut into thin half rings.
  • Fill the jars with tomato slices and sprinkle them with onion rings.
  • Pour oil and vinegar into each jar.
  • Separately, boil water, dissolving sugar and salt in it.
  • Pour hot brine over vegetables.
  • Cover the jars with lids and place them in a saucepan with a towel placed on the bottom.
  • Pour water into the pan so that the level reaches the hangers of the cans.
  • Over low heat, bring the water in a saucepan to a boil and sterilize the jars in it for 20 to 40 minutes, depending on their volume (20 minutes is required for half-liter containers).
  • Carefully remove the jars from the water. Close them tightly, turn them over and cover them with a blanket.

After a day, the jars of salad can be put away in the pantry or other place where winter supplies are usually stored in your home.

Czech tomatoes with bell peppers for the winter

Composition (for 6 l):

  • tomatoes – 3 kg;
  • bell pepper – 0.8 kg;
  • garlic – 5 cloves;
  • onions – 1 kg;
  • water – 2 l;
  • salt – 60 g;
  • refined vegetable oil – 40 ml;
  • sugar – 100 g;
  • vinegar essence (70 percent) – 20 ml;
  • allspice peas - to taste.

Cooking method:

  • Place peppercorns and finely chopped garlic at the bottom of the prepared jars, using about half the amount specified in the recipe.
  • Peel the bell pepper from seeds, cut into semicircles, not too thin.
  • After removing the peel, chop the onion in the same way as the pepper.
  • After washing and drying the tomatoes, cut them into large slices.
  • Place a layer of tomatoes in the jars and top with a few slices of peppers and onions. So, alternating vegetables, fill the jars up to the hangers. Cover the vegetables with the remaining garlic.
  • Boil the water. Add salt and sugar to it, wait until they dissolve. Pour in oil and vinegar, stir. Boil for 2 minutes and remove from heat.
  • Pour the hot marinade into jars.
  • Cover them with prepared lids and sterilize in a water bath for 20-40 minutes. Roll up and leave to cool upside down.

The snack made according to the given recipe can be stored at room temperature.

Czech tomatoes with herbs without sterilization

Composition (per 3 l):

  • tomatoes – 1.5 kg;
  • onions – 0.5 kg;
  • bell pepper – 0.5 kg;
  • garlic – 6 cloves;
  • basil – 6 sprigs;
  • celery – 3 sprigs;
  • bay leaf – 1 pc.;
  • allspice peas – 6 pcs.;
  • black peppercorns – 6 pcs.;
  • coriander seeds – 12 pcs.;
  • table vinegar (9 percent) – 60 ml;
  • vegetable oil – 60 ml;
  • sugar – 60 g;
  • salt – 45 g;
  • water - how much will go.

Cooking method:

  • Distribute peppers, coriander, finely chopped garlic and herbs into pre-sterilized jars.
  • Cut the tomatoes into small slices or circles.
  • Cut the peppers and onions into half rings or rings.
  • Alternating vegetables, fill the jars with them.
  • Pour boiling water over the vegetables, drain the water after 10 minutes.
  • Pour a new portion of boiling water, wait 10 minutes and drain it.
  • Pour salt and sugar into jars, pour in oil and vinegar.
  • Boil the water again and pour it into jars.
  • Roll up the jars, turn them over and wrap them up.

After cooling, store the jars in a basement, cellar or other cool room.

Recipe with onions

In this version, tomatoes are rolled with onions, bell peppers and garlic. It is better to take jars with a volume of 0.5, 0.7 or 1 liter.

Product Set

You will need the following ingredients:

  • 3 kg of ripe tomatoes of round or elongated shape;
  • 1 kg red or white onion;
  • 1 kg red or orange sweet pepper;
  • 5 large garlic cloves;
  • 10 peppercorns;
  • 2 tbsp. l. unrefined oil;
  • 1 tbsp. l. food essence;
  • 6 tbsp. l. granulated sugar;
  • 3 tbsp. l. table salt (not iodized);
  • 2000 ml filtered water.

Operating procedure

  1. The tomatoes are washed in cool water and each cut into 4 slices.
  2. The bulbs are peeled, dry edges are cut off, washed and cut into thin rings.
  3. The seed nest is removed from the sweet pepper, the fruit is also cut into rings, trying to maintain their integrity.
  4. Garlic is separated into slices, peeled and cut very finely. You just need to chop it, not grind it in a garlic press or blender.
  5. The jars are washed, rinsed, sterilized over a kettle or in the oven for 15 minutes.
  6. Sterilized containers are placed on the table.
  7. Vegetables are placed in layers: tomatoes on the bottom, then a layer of peppers, onions and garlic. In this way all containers are filled.

The marinade for the specified amount of vegetables is made quickly, so it can be prepared not in advance, but after all the ingredients have already been placed in jars. For it you will need to dilute salt, sugar, essence in water and pour in oil. Stir everything, put the pan on the fire, let it boil, after which the marinade is immediately poured into jars to the very top.

The containers are covered with metal lids and sterilized. For half-liter jars the time will be 10 minutes, for liter jars - 15, and 0.7 liter containers need to be sterilized for 12-13 minutes. If you wait a little, nothing bad will happen.

There is a variation of this recipe where the tomatoes are first peeled. In this case, take dense, not overripe, fleshy tomatoes. To make the skin easy to peel, the fruits are immersed in boiling water for 1 minute, then transferred to cold water. After 2 minutes, take it out and clean it immediately.

Classic version

According to this recipe, Czech-style tomatoes for the winter are prepared without sweet peppers. Experienced chefs say that this classic way, and bell pepper appeared thanks to the experiments of Russian housewives.

Food preparation

Vegetables and spices per 1 liter jar:

  • ripe red tomatoes - as many as will go in;
  • unrefined oil - 2 tbsp. l.;
  • garlic - as you like, you can take one clove or a whole head;
  • allspice - 5-7 pcs.;
  • 9% vinegar - 1 tbsp. l.;
  • laurel leaf - 3 pcs.;
  • onions - as many as you like.

Components for filling:

  • granulated sugar - 5 tbsp. l.;
  • salt - 3 tbsp. l.;
  • water - 2 liters.

Procurement process

Finely chopped garlic is placed at the bottom of the jars, and spices are also sent there. You can not cut the garlic, but crush it with a press, but then the brine will turn out cloudy. The containers are filled to the top with tomatoes, cut into several slices. Place onion rings on top. If the preparation is intended for a festive table, the vegetables can be arranged in a more original way, then the salad will create a real sensation.

To pour, dissolve sugar and salt in water, place on the stove and let it boil. Without waiting for the marinade to cool, pour it into each jar to the very top. Add vegetable oil.

Rinse the tomatoes thoroughly, remove fruits that have damage, severe dents, or rotten areas. Cut the tomatoes into neat quarters; the stem must be cut off.

Also wash the bell pepper, cut off the stem, and remove the core and seeds. Cut the pulp into thin rings.

Peel the onion and cut into thin half or quarter rings.

Peel the garlic and finely chop it.

Clean the jars in which you plan to seal Czech tomatoes with the addition of baking soda and pour boiling water over it.

  1. Water - 2 liters;
  2. Table salt - 3 tablespoons;
  3. Granulated sugar - 6 tablespoons;
  4. Vinegar - 1 tablespoon;
  5. Vegetable oil - 2 tablespoons.

Cooking method:

1. First, cut each tomato into 4 equal parts (since our tomatoes are “lady fingers”, you can safely cut them and not be afraid, because they are meaty and hard), chop the garlic, and cut the onions and peppers into rings.
2. Then we put them in layers in jars: we push tomatoes into the bottom of the jar, then onions, peppers and garlic.
3. Next, pour hot marinade.
4. Now we put our tomatoes to sterilize in a large saucepan with hot water (if you have 0.5 jars, then sterilize for 10 minutes, if you have liter jars, then 15 minutes).
5. Roll up, turn the jars over and wrap until they cool down (if the marinade is a little cloudy in color, then don’t be alarmed, it’s because of the garlic).


Wash the hot pepper pods and cut them in half. If they are quite large, you can cut them into three parts.


Place the following layers on the bottom of the jar: dry dill or seeds, garlic, some prepared pepper and parsley. It is better not to chop the parsley finely, but to arrange it in sprigs. Place tomatoes on top. The tomatoes should lie close to each other so that more can fit. When the jars are filled to the shoulders, add the remaining peppers.


While we are putting the vegetables in the jars, heat the required amount of boiling water. Pour boiling water into the jars - try to pour in a thin stream in the center so that the jar does not burst. The water should cover all the vegetables.


Cover the tomatoes prepared in this way with lids and leave for 15-20 minutes until they are warm enough. After this, pour the water into the prepared spacious pan. Add sugar and salt to the water, throw in the bay leaf, peppercorns and vinegar.


Bring the marinade to a boil and pour in the prepared vegetables again.


Also cover with lids and leave for another 15-20 minutes. After this, we repeat the procedure, bring the marinade to a boil, pour it into jars and immediately roll it up.


Cans of canned tomatoes prepared in this way should be turned upside down and wrapped in a warm blanket or towel. We leave canned tomatoes for the winter in this form until it cools completely - this time usually takes 10-12 hours.

Turn the cooled tomatoes in the jars over and place them in a suitable storage location. You can taste the tomatoes in two weeks, but it’s best not to let them sit for a long time. less than a month. Serve tomatoes with any side dishes or use them as a snack on their own.
