You can use anything as a filling: minced meat, various combinations with vegetables, mushrooms, rice. But I will stuff it with vegetables.

Young zucchini, which have thin skin and almost no seeds, are suitable for this dish.

Zucchini boats stuffed with vegetables

We will need:

>small zucchini - 3 pcs.

>carrots -2 pcs.

>onions - 2 pcs.

>bell pepper -2 pcs.

>garlic -3 cloves

>salt - to taste

>vegetable oil

>any spices and herbs - optional

1. Wash the zucchini well, cut it in half lengthwise to make boats.

2. Scoop out the pulp with a spoon.

3.Cut the zucchini pulp, onions, bell peppers, and carrots into small pieces. I like it better when the carrots are grated.
