Also, the amount of curd from milk depends on the fat content of the product; if the milk is skimmed, then you should not hope for a large yield of the finished curd mass.
  • Combine milk and curdled milk in a large saucepan, stir with a slotted spoon and place over low heat. Important! Under no circumstances should you bring the mixture to a boil or heat it to more than 70 degrees, otherwise the cottage cheese will lose its softness, curl into tight lumps and Almette curd cheese simply won’t work out.

  • The lactic acid mass should be heated for half an hour, stirring occasionally (no more than once every three to five minutes). You will notice that whey with a greenish tint and grains of cottage cheese will begin to separate.
