Beef or pork liver 500 g
Soda 1 tsp
Milk 50 g
Garlic 1 clove
Sour cream 200 g
Greenery taste
Salt taste
Pepper taste

Today, I purposefully went to the market for the liver in order to cook liver pancakes with sauce for dinner, which everyone in our family loves without exception! I have no doubt that this dish is also on your menu. But, my cooking recipe is somewhat different from cooking traditional pancakes.

Instead of wheat flour or bread, I use oat bran as a liver supplement, which makes the dish easier and healthier. And, I serve liver pancakes with a side dish or as an independent dish. But always with a sauce prepared on the basis of natural yogurt.

Ingredients:

  • beef liver - 300 g,
  • onion - 1/2 pc.,

- in order for the pancakes to turn out tender and with a pleasant texture, it is very important to properly prepare the product for use. First of all, the film should be removed from the liver

This can be done easily and quickly if you first pour hot water over it from all sides.

- then be sure to cut the veins. Believe me, their presence will spoil both the finished product and your appetite.

- cut into small pieces

If the offal has a specific smell, soak it in milk for 30 minutes. This way you will save the liver not only from the smell, but also from the bitterness, the presence of which is not always possible to predict.

- peel and chop the onion

- put the prepared ingredients in a blender bowl, break the egg there and throw a clove of garlic. Grind it all until smooth

- Pour the resulting mass into a deep bowl, add bran, spices and seasonings (paprika, salt, pepper). Mix thoroughly with a whisk or fork and let it brew a little (15 minutes)

- Grease a preheated non-stick frying pan with olive oil and bake pancakes on both sides until cooked

Preparation of cucumber sauce:

- on a fine grater, grate a pickled cucumber or 2-3 pickled gherkins

- Pour natural yogurt into a gravy boat or bowl, add grated pickles and mix well. Garnish with herbs when serving.

  • 1 tsp salt
  • Pepper, spices - to taste
  • Vegetable oil

Cooking:

1. We interrupt the liver with a blender.


2. Add the onions cut into 4 parts to the bowl and interrupt again.


3. It turns out a homogeneous liquid consistency.


Onions are used quite a lot in the recipe, so you need to make sure that they are not bitter.

4. Pour the mixture into a deep bowl and break the eggs into it and mix well.


5. Then add salt and pepper and mix again.


6. Add the next ingredient and mix in the flour.
