Recipe for chicken liver cake with mushrooms

1. If you are preparing the liver for the first time or do not like its specific smell, you can pre-soak the offal in milk for several hours. In addition to the smell, this method of preparing the liver will help remove the taste of bitterness in the finished dish. If you are sure of the quality of the offal you are buying, you can skip the soaking step.

So, we wash the liver under running water, remove all films, vessels and dark greenish spots, if any. Grind the cleaned liver with a blender or twist it into a meat grinder. Usually chicken liver is more tender than beef liver, it grinds very quickly and easily.

2. Add the egg and sour cream to the liver puree.

3. Mix until smooth, and then add flour, salt and pepper.

Tip: Be sure to sift the flour. It will be saturated with oxygen, will not take lumps and it will be easier to stir it in the dough. And also the sieve will remove possible debris and impurities.

4. Mix so that there are no lumps, but a homogeneous liver mass of the consistency of liquid sour cream is obtained. Let the dough stand for a while so that all the ingredients mix perfectly and the flour swells.

5. We take a ladle (it is most convenient for them to pour the dough) and scoop up the liver mass. The step-by-step photo clearly shows the consistency of the finished dough.

6. Pour the dough into the center of a well-heated pan, greased with sunflower oil. And if we heat the oil over medium-high heat, then before pouring the mass, we set the medium-low fire.

7. We level it over the entire surface into a beautiful round pancake with a thickness of about 0.5 cm. From this amount of products, 5 such pancakes-pancakes with a diameter of 10-15 cm usually come out. The process of frying pancakes is the most important. We want them to cook well, evenly. If the liver pancake burns even a little, it will be bitter. Therefore, we do not leave the pan, but carefully monitor the preparation, frying the liver mass over low heat. We look, when the pancake starts to bubble a little, seize and blush a little around the edges - it's time to turn it over.

8. Turn the pancake over to the other side. Pancakes fry quickly.

9. Put the finished pancakes on the board on top of each other in a pile.

10. Now let's get to the filling. Peel the onion, wash and cut into small squares.

12. Wash the champignons, dry them with paper towels and cut into small pieces. By the way, you can take any mushrooms: dry, shiitake, mushrooms, chanterelles. Of course, dry mushrooms must first be boiled, but canned ones should only be washed.

13. The bow has just become translucent.

14. Add mushrooms to the onion in the pan.

15. Stew everything together under a closed lid for about 7 minutes. Mushrooms with onions will significantly decrease in volume.

16. Cucumbers can be used pickled or pickled, there is no clear recommendation. But it turns out tastier if the preservation is with a light point. So, cut the pickled cucumbers into small squares.

17. Rub hard cheese on a fine grater. You can also use processed cheese, which will give the liver cake a creamy flavor.

18. We prepare the ingredients for the sauce with which we will grease the pancakes. We need mayonnaise, we will use parsley from greens, while garlic will add spice to the liver cake.

19. Finely chop the greens, squeeze the garlic through a press or rub it on a fine grater. We add everything to the mayonnaise.

20. Stir the sauce. Mayonnaise can be replaced with sour cream, just add a little salt to it.

21. We take the first pancake, put it on a flat surface and grease with sauce.

22. Put the onion and mushroom filling on top of the sauce.

23. Put the second pancake on top, grease with sauce and put pickles on it. So we alternate the layers until the pancakes run out.

24. Lubricate the last pancake with sauce and sprinkle with grated cheese.
Our liver cake with mushrooms and cheese is ready! It remains to give him a few hours (at least 1 hour) to brew in the refrigerator so that the pancakes are better saturated, and you can serve!

It is convenient to cook the cake in the evening, overnight in the refrigerator it is perfectly saturated, saturated with taste, and becomes denser. And so that the cheese in the refrigerator does not wind up, it is better to cover the cake with a lid (I have a large cap-cap for the microwave oven), or you can carefully wrap it with cling film on top.

Chicken liver snack cake is a very tasty and satisfying dish. At first glance, it is difficult to cook it - more than 15 cooking steps, but this is not so, I just tried to clearly describe the preparation of this dish. Please note - the finished liver cake needs to be infused for at least 2 hours, so do not forget to take this time into account.

The cake can be prepared not only from chicken liver, rabbit or beef liver is also suitable, but this will be a different recipe. I think chicken liver makes the easiest and fastest version of such a snack cake.

From the prepared liver dough, 5-6 cakes with a diameter of 15-17 cm are obtained. Turn the cakes over carefully, since the thinner you pour the dough, the more it will tear. But making cakes thicker than 5 mm is not worth it, otherwise the cake will not be soaked. Do not worry if the cake breaks, carefully fold it into a circle shape - this will not be noticeable in the finished cake. And of course, I highly recommend making homemade mayonnaise to lubricate the cake!

You can decorate the cake with chopped boiled yolk, melted cheese, or just gently grease with mayonnaise and add a few sprigs of greens.
