RECIPES:

The American chain KFC has become famous throughout the world for its signature dishes cooked in breading (and not only), especially for all sorts of chicken delicacies such as strips. Those who visited this catering establishment at least once appreciated the taste of the dishes there, while others wanted to cook them at home. It is worth considering that KFC is not only strips, but also: hamburgers, burgers, cheesecakes, tacos with various fillings, French fries and much more.

The five most commonly used ingredients in KFC recipes are:

How are chicken strips prepared? Everything is very simple:

  1. Cut chicken fillet (wings, legs, optional) into strips along or across the grain.
  2. Pepper and salt.
  3. Place a frying pan on the stove to heat over low heat.
  4. Separately, beat the egg in a deep plate.
  5. Place flour and corn flakes mixed with starch in two other plates.
  6. Dip each piece of chicken in the egg, flour, egg and cereal alternately.
  7. Fry the fillet on both sides until cooked.
    Vegetable oil for frying is used at discretion.

A simple KFC cheesecake with cottage cheese is prepared like this:

  1. Mix flour with sugar.
  2. Add margarine and chop it into crumbs with a knife and flour. Then rub the dough with your hands.
  3. Mash the cottage cheese with a fork, mix with sugar, beat in the eggs, mix.
  4. Place the dough in a round basket-shaped pan with sides and pierce it in several places with a fork.
  5. Place the filling into the basket and bake until done.
    Use the topping to your taste: chocolate glaze, whipped cream, caramel syrup.

Five of the fastest KFC recipes:

  • Chicken wings at KFC are deep fried under pressure; at home this device can be replaced with a frying pan with a thick bottom and walls
  • Corn flakes for strips use unsweetened ones
  • Before rolling the chicken in the flakes, crush them into 4 pieces with a rolling pin
  • for strips use cayenne pepper and chili
  • Remove excess oil from chicken using a paper towel
  • Strips are usually served with ketchup

Do you think the only thing you can coat a chicken in is breadcrumbs, spices and an egg? You are terribly mistaken, my friend! There are a lot of breadings for chicken that make it much tastier than it is. There are very cheap ones, and there are quite expensive ones, turning wings and legs into a work of gastronomic art. If you're tired of going to KFC and paying extra just to try the crispy parts of a big chicken, you can rejoice: today Brodude will show you a lot of breaded chicken recipes.

1. Sriracha hot sauce and honey

Americans are crazy about the extremely spicy Sriracha sauce, which is actively used in many dishes. In Russia this sauce is also available, and you can buy it along with the same Tabasco.

  • 1 teaspoon of viscous honey;
  • 1 teaspoon Sriracha (a few drops of Tabasco can be used);
  • 1 cup crispy bread crumbs (should be slightly stale);
  • 1 package of chicken parts (fillets, wings, thighs, legs);
  • olive oil and spices.

Preheat the oven to 200 degrees. Mix spices, honey and sauce in a bowl. Coat the chicken parts thoroughly with the resulting mixture and roll in bread crumbs. Place the chicken on a greased baking sheet. Bake for 20 minutes on one side and the same on the other. Then you can turn off the oven and simmer the chicken a little.

2. Chili and lime

Chili and lime don't go together? We don't think so.

  • 1 egg;
  • 1 tablespoon chili powder;
  • 1 teaspoon grated dried lime peel;
  • 1/2 teaspoon garlic salt;
  • 1 package of chicken parts;
  • 1 package of Greek yogurt.

Preheat the oven to 200 degrees. Beat the egg in a shallow bowl. The other contains bread crumbs, chili, lime peel and garlic salt. Dip the chicken into the eggs and then roll it in the spice mixture. Place the chicken on a baking tray. Bake for 20 minutes on one side, flip and repeat. Unsweetened Greek yogurt is suitable as a sauce, to which you can add spices, garlic salt and finely chopped herbs.

3. Spicy tomato paste and mango

You will probably find spicy thick tomato paste with chili pepper in the store; finding mango is not a problem now either.

  • 1 tablespoon glass of spicy tomato paste;
  • 1 cup crispy bread crumbs (you can also use bread crumbs)
  • 1 package chicken body parts;
  • 1 cup finely chopped mango;
  • 1 teaspoon garlic salt.
  • 1 tablespoon chopped fresh cilantro

Place thick tomato paste in a small bowl. Place bread crumbs or crackers in a wide bowl. Dip the chicken into the spicy paste and then into the crumbs. Place the chicken on a baking tray.
Bake for 15-20 minutes, turning once, until the bread crumbs are golden brown. Meanwhile, chop the chopped mango, 2-3 teaspoons chili paste and cilantro in a medium bowl. Make a homogeneous mass out of this.

  • 2 teaspoons curry powder;
  • 1 package of chicken.

Bake for 15-20 minutes, turning once.

5. In Mexican sauce

Fast and easy. All you need to do is buy a good thick salsa sauce.

  • 1 egg;
  • 1 cup crispy bread crumbs;
  • 1 package of chicken;
  • 2 tablespoons salsa;
  • spices: chili, garlic salt.

Place spice mixture in a large bowl. In another, beat an egg. Place the bread crumbs on a deep plate. Place the chicken in the egg, then in the spices, and then in the crumbs, then place the chicken pieces on a baking sheet coated with olive oil.
Bake for 15-20 minutes, do not turn, until bread crumbs are golden brown. Serve with salsa.

Smoky barbecue sauce will give your dish an unusual taste.

  • 1 cup crispy crumbs or breadcrumbs;
  • 1 package of chicken;
  • salt, pepper, other spices.

Pour barbecue sauce into a shallow bowl. Dip the chicken into the sauce and then into the crumbs, then place the chicken on a baking sheet.

Bake for 15-20 minutes, turning once. Serve with the same BBQ sauce.

7. Parmesan, garlic and herbs

Cheese and chicken are a great combination, but if you overcook the meat in the oven, there is a good chance it will become tough and unbreakable.

  • 2 tablespoons of mayonnaise (you can use Greek yogurt);
  • 1 tablespoon of Italian herbs mixture;
  • 1 level teaspoon of garlic powder;
  • bread crumbs or crackers;
  • 3 tablespoons grated Parmesan cheese;
  • 1 package chicken body parts;
  • tomato paste as sauce.

In a shallow bowl, mix mayonnaise, herbs and garlic powder. Combine bread crumbs with cheese. Dip the chicken pieces into the mayonnaise mixture and then quickly roll in the crumbs. Now you can place the chicken on the baking tray with a clear soul.

Bake for 15-20 minutes, without turning, until the chicken is no longer pink and the breading is orange.

The combination of bacon and cheese crust is always on point.

  • 60 g chopped cheddar;
  • 100 g bacon, chopped into small strips;
  • 1 package of chicken;
  • as a sauce: crushed garlic and onions with sour cream.

You beat the egg. In another bowl, mix bacon, cheese, spices and breadcrumbs. You first dip the chicken into the egg and then into the mixture. After which the future raw materials for the chicken are placed on a baking sheet in a preheated oven (have you forgotten about this?). You need to bake according to the same principle as in all other recipes.

9. Pesto and chicken

You can buy pesto sauce, or you can make it yourself. There is nothing complicated. But we won’t bake it in this sauce—it’s for dipping.

  • 1 teaspoon dried basil;
  • 2 tablespoons of mayonnaise;
  • bread crumbs;
  • 100 g grated hard cheese in long strips;
  • 1 package of chicken.

I used to not have a good attitude towards fast food. You know, like in the joke about the famous British group: “I didn’t like these Beatles at all, they burble, they don’t hit the notes, - Did you listen to them? - Yes, of course, Rabinovich sang on the phone.” It’s the same with fast food: I heard someone else’s opinion and took it at face value. But that was the case for the time being, until I encountered it myself and carefully tried everything that different networks offered. And you know, I changed my mind.

Today, especially for a report from the kitchen of KFC - one of the most famous fast food chains in the world, which is the third most popular in the world.

At the entrance to the kitchen, our group of experts/bloggers is greeted by a poster about secret ingredients and two Olgas - one of them is the director of the KFC restaurant where our excursion is taking place, the second is Olga Eliseeva, the company's director of operations.

The secret to making spicy chicken wings is kept tighter than Fort Knox gold.)

The morning of the KFC kitchen begins with the receipt of chicken meat. It is brought in as much as the restaurant estimates is consumed per day by its visitors, that is, a truck with chilled meat arrives here every day. Today they delivered 580 kg.

The food acceptance specialist checks the temperature of the meat with a thermometer; it should be from +4 to +1 degrees. Everything is fine, you can put it in the refrigerator.

They explain to us the intricacies of receiving and storing food in a restaurant.

The driver also signs papers stating that the meat is normal, there is no down or feathers on it and it is ready for cooking. The company has 6 different suppliers.

I almost forgot to say, before entering the kitchen, we all thoroughly washed our hands and wiped them with a disinfectant solution, went outside to click and washed and disinfected them again. The wash is partially contactless; in order for a stream to flow onto your hands, you need to hit the washbasin with your knee. Do you see "push" written below?

Secret information that competitors should not see.

Food in the restaurant is stored in three refrigerators: drinks and vegetables in one, meat in another, flour products in the third.

The attentive reader will see what the temperature is in the freezer.

The shelf life of flour products is also short. just like meat, they order exactly as much as is needed for the day. These rolls were taken out of the refrigerator so that their temperature became room temperature; they were not specially heated.

Now let's go to a place where chicken wings and other parts are breaded.

This guy cooked chicken with regular breading.

Papparazi is right there.

This chef makes those spicy chicken wings. They need to be breaded 11 times to get those same scales when frying.

Now everything is ready. We take the baskets and go to the deep fryers.

After immersion in oil, the timer starts, counting down the time. He squeaked, which means you can take out the wings.

From time to time, the oil is tested with litmus paper to check the ph level and the suitability of the oil for cooking.

These deep fryers fry meat under pressure.

You can fry on several baking sheets at once.

You see a hole on the table; all the leftovers from cooking go there.

French fries.

I like the twister from KFC more than any other analogue from another fast food.

It's very simple, buy lavash and try to make it yourself.

What am I photographing?

Found an interesting shot.

Here, fried wings wait their turn and are not allowed to cool ahead of time.

Fresh salad. The chain is supplied with vegetables by the Belaya Dacha company.

Potato.

Well, here the product from the kitchen ends its journey. Soon it will reach the table of a restaurant visitor.

Who knows what they're doing behind that door?

We will prepare our own salads and twisters under the guidance of a guest chef. The ingredients are the same for everyone, but you can come up with your own original recipe.

Director of YUM! which represents KFC, met us personally and told us a little about the company’s plans.

Well, they gave the go-ahead. Without thinking twice, I took the camera off my neck, put on my apron and began to cook. Not my first.

I look at the chef and try to repeat something.
