  • Sugar - 100 g
  • Butter - 130 g
  • Chicken egg - 2 pcs.

After that, with a spatula or a whisk, I carefully stir everything, as a result, the soda will react, the mass will turn white and become more airy. You don't need to heat up again.

I cut the butter into pieces and add it to the hot mixture, after which I begin to mix it until the butter is completely dissolved. You don't need to take it out of the fridge first, it will melt well.

Next, add the eggs and mix back together until smooth. Don't worry, the egg white won't curdle because the temperature in the bowl is already much lower due to the cold butter. Therefore, it is important to add all the ingredients in a clear sequence, as I indicate, so that the dough for gingerbread at home is perfect.

I add flour last. I do this in several approaches to make it easier to knead. You can immediately add about 300 grams, and then add the remaining 200 grams during the kneading process. These products took me exactly 500 grams of flour, but there may be a difference in the amount due to the size of the eggs, as well as the type and quality of the flour. I advise you to completely mix in the added flour, and only then add more if it seems that it is not enough.

As a result, I got an excellent soft gingerbread dough, but at the same time very elastic and not sticky. But it's not finished yet. I put it in a bag or wrap it with cling film and put it in the refrigerator for 2 hours, at least, but better for a day. By the way, if you didn’t use it at a time, then it’s okay, because it can be stored in the refrigerator for a whole month.

How to cook gingerbread at home

You can take any honey for this recipe: linden, mustard, flower.

You will also need:

  • flour - 300 g;
  • sugar - 200 g + 5 tbsp. spoons for glaze;
  • honey - 100 - 120 g (you can take any: linden, mustard, flower);
  • vegetable oil;
  • soda - 30 g;
  • cinnamon - 30 g;
  • egg - 2 - 3 pcs.;
  • jam - 250 g;
  • vodka - 1 tablespoon;
  • milk - 100 g;
  • butter - 120 g;
  • spices (for flavor) - 3 teaspoons.

In the container we add sugar, cinnamon, honey, already liquid and melted, soft butter, soda, vodka, eggs. Mix everything gently.

We put the resulting mixture for 5 - 7 minutes in a water bath. Mix thoroughly to make the mass airy and homogeneous.

Sift the flour, add, knead the dough for dessert. It is necessary to work hard, sparing no effort, knead the dough well. If it lags well behind the container, does not stick to your hands, then it's ready.

The resulting finished dough is rolled out with a thickness of 5 mm, and then we fantasize.

If you want gingerbread with filling, cut the dough into a triangle. For the filling, boil jam with sugar so that it does not spread and becomes thick. We put the jam in the middle of each rectangle, gently pinching the edges. The edges should be teeth: we form them with the help of a block.

You can cut out the gingerbread with the help of curly dough knives.

Lubricate the baking sheet with oil, lay out the gingerbread cookies and bake in several stages. First, 2 minutes at 300C in a well-heated oven, then cool and bake for 10 minutes at 250C.

We make the glaze: combine sugar with milk, bring to a boil and cook for 5 minutes, stirring, until the sugar is completely dissolved.

Lubricate the cooled gingerbread cookies with the cooked icing with a brush.
