To cook delicious steamed cherry dumplings, make it a rule to stick to the exact proportions of the recipe, and not measure the ingredients “by eye”. Unlike dumplings, kefir and soda dough is very capricious and requires increased attention. But it is it that is preferable for the preparation of such dumplings. You will see for yourself when you try it. It is also important to keep kneading time to a minimum so as not to make the dough tough: the softer it is, the better the result will be. The recipe indicates the amount of products from which you can cook about 2 servings of steamed cherry dumplings.

Dough Ingredients:

  • kefir - 100 ml;
  • sugar - 1 teaspoon;
  • salt - 1/4 teaspoon;
  • soda - 1/4 teaspoon;
  • flour - 1 cup.

Filling Ingredients:

  • cherries (fresh or frozen) - 250 g;
  • sugar - 1 teaspoon.

Steamed dumplings with cherries

Combine kefir, sugar, soda and salt in one container. Add half a cup of flour to them and stir until smooth. Then add flour in small portions, stirring the dough with a spoon. When it comes together in a tight ball, transfer it to a floured surface (even if you haven't used all the flour in the glass yet).

Now dip your hands in flour, sprinkle a little flour on the dough and knead it a little with your hands. Your task is to bring the dough to a consistency where it can be rolled out, but no more. Each extra movement of the hands makes the dough stiffer, and you need to avoid this. It is not necessary to ensure that the dough stops sticking to your hands - just sprinkle it well with flour before rolling it out.

Roll out the dough into a thick layer (about 0.7 cm) and cut circles out of it with a shape or a narrow glass.

To prepare the filling, remove the pits from the cherries and leave the berries in a strainer to drain the excess juice. By the way, from the point of view of the appearance and taste of ready-made dumplings, it is better to use pitted cherries - this way the filling turns out juicier, and cherry juice does not stain the dough. But, of course, eating such dumplings is uncomfortable and dangerous for the teeth.

Stretch a circle of dough a little in the center and put 4-5 berries on it. Lightly sprinkle the filling with sugar and pinch the edges of the dough.

Place the dumplings in the steamer. When they rise well, take one out and see if the dough inside is ready. It is not worth overdoing the dumplings for a couple, but if you rolled out the dough thickly, they may turn out to be raw inside, so you need to check the readiness.

If you don't have a steamer, use a wide pot of water instead, tying cheesecloth around the edge.

It is better to sculpt dumplings as the previous portion is cooked, so that the blanks do not stick out from the juice.

Grease the finished dumplings immediately with oil, honey or other sauce, because their surface dries quickly and darkens.

Very tasty sweet sauce to this dish - cream whipped with sugar with the addition of a small amount of vanilla ice cream.

Steamed cherry dumplings you have to learn how to cook. They turn out lush and ruddy, if you cook the dough that makes them so steamed dumplings with cherries.


I learned how to make these dumplings when I lived in Ukraine. My friend Allochka told me about them. She herself is a native of the city of Zhytomyr, so she knows Ukrainian cuisine and cooks well.

Previously, I cooked only such dumplings that need to be boiled in water. New recipe I found it interesting so I decided to give it a try.


I must say that I liked this recipe, I often use it. Try to cook such dumplings, maybe you will like them too.

Vareniki with cherry filling.

Prepare:


  1. flour - 350-400 grams;

  2. kefir - 250 ml;

  3. baking soda - 10 grams;

  4. vinegar;

  5. sugar;

  6. egg;

  7. cherry - two glasses pitted;

  8. starch;

  9. vegetable oil - two tablespoons;

  10. sour cream - 100 grams;

  11. jam - 50 grams;

  12. salt - 25 grams (salt the water).

Let's make a cherry. Wash it and remove the bones. We discard the prepared cherries on a sieve so that excess juice drains.


Let's prepare the dough. To do this, pour the flour into a bowl, break the egg, add baking soda, quenched with vinegar (you can quench with kefir) and we will add kefir.


The dough should be plastic, knead it so that it does not grab your hands. We knead it well and set it to part for a short time, covering it with a napkin so that it does not dry out.


Now we need a pan in which we will cook dumplings. For this purpose, a double boiler or pressure cooker is suitable for us, or you can insert special plates for steaming into a saucepan with a large diameter.


Pour water into it, add a spoonful of salt and put on a slow fire. Let's start making dumplings. Roll out the dough into one sausage and cut it into small pieces one and a half or two centimeters thick.


Dip each piece of dough in flour and roll it into a circle, on which we put an incomplete teaspoon of sugar and the number of berries that can fit on the prepared circle of dough.


Cherries can be rolled in starch, then the starch will bind the juice, which, when cooked, will begin to stand out from the cherry.


Fold the circle in half and start pinching the edges. First, we simply press them one to the other, and then for tightness we will make tucks along the edge of the dumpling.


On the one hand, we will save the juice in this way, preventing it from flowing out of the dumpling, and on the other hand, dumplings with tucks look much more beautiful and retain a more compact shape.


Take a small saucer vegetable oil at the bottom. In this saucer, we will dip the bottom of the dumpling before we put it to cook on the grid so that the dough does not stick and you can easily get the dumpling.


We keep a distance between the dumplings, as during cooking they will be greatly distributed in size. Close the pan with a lid, put on a small fire, which will keep the water boiling in the pan.


Seven minutes and you can get dumplings. During this time, they not only cooked, but managed to brown. Arrange the dumplings on plates and pour over the prepared dressing.


I cook it like this: I mix two parts of sour cream with one part of jam, pour it all into a blender and beat. Pour the resulting dressing over the dumplings and decorate with fresh cherries.


Here we have prepared steamed dumplings with cherries. Such dumplings can be made with any filling. It can be cottage cheese, cabbage, mushrooms, potatoes, blueberries, strawberries or strawberries.

Steamed dumplings are very tasty, hearty meal which is easy to prepare. Cherry filling is one of the best, in my opinion. The dumplings themselves are sweet, but the cherry gives a little sourness - and this is an incredible combination. In order not to weigh down the lush and juicy dumplings, I do not lubricate them and do not pour oil on them, but only a little, so that they do not stick together, sprinkle with sugar.

I cook the dough for steamed dumplings with cherries on kefir with soda. Soda is an excellent baking powder, which makes dumplings incredibly fluffy and airy. The dough is easy to prepare. Unlike yeast, it cooks quickly, no need to wait for the dough, no need to wait until it rises two or three times.

Put the finished dough in a bowl, cover with a napkin and leave for 15 minutes to let the dough rest. Then cut off a small part from the common piece and roll it into a layer 5-6 mm thick.

Cut out circles - the larger the diameter of the cutting, the larger the dumpling itself will be.

Cherries can be used fresh, frozen or canned. The main thing is to take out the bone. If using frozen, it must first be defrosted in the refrigerator. Place cherries in a colander and drain off excess liquid. It is also necessary to drain excess liquid from canned cherries. Optionally, but not required, sprinkle the cherries with cornstarch. It slows down the release of juice and retains it - dumplings are juicier and do not "cry" during cooking. Place a cherry in the center of each circle.

Blind the edges, forming an even, beautiful dumpling. Put the blanks in the steamer pan. It must first be lubricated with vegetable oil.

Put the tray in the steamer and turn it on for 25 minutes.

The dumplings will start to grow before our eyes.

Here are the finished dumplings. They are lush, tender, beautiful, juicy and fragrant.

Turn on the steamer timer for 15 minutes. It may take less time if the dough is very thin.

Ingredients:

For test:

  • Wheat flour higher grades - 5 glasses;
  • soda - 1 teaspoon;
  • - 500 ml;
  • sugar - 50 g;
  • salt.

For filling:

  • ripe cherries - 500 g;
  • sugar;

Cooking

Sift flour on the table, add sugar, salt, soda. Mix this dry mixture well. Make a well in the center and pour kefir into it. With a spoon, stir the liquid into the flour. As a result, flakes will come out first. Then we start kneading with our hands. Dust a work surface lightly with flour, place the dough on it and continue kneading. We try not to add extra flour, otherwise the dough will come out too steep. For convenience, we divide the dough in half, wrap it in a bag so that it “rests”.

In the meantime, we ourselves make the filling: wash the cherries and remove the seeds from them. Then we take out the dough and slightly knead it with our hands. Next, roll it out with a layer of about 3 mm thick. Cut out circles using a glass. Pour a little sugar in the center, lay out a few berries. Let's start forming the dumpling. To do this, we raise two opposite edges of the dough and fasten them in the center. Then we also carefully fasten the dumpling from one edge to the center and from the other. Lubricate the bowl of the double boiler with vegetable oil, put the dumplings in it, close and steam for 6 minutes. Lubricate the finished dumplings with melted butter.

Steamed dumplings with fresh cherries on kefir

Ingredients:

  • kefir - 200 ml;
  • wheat flour - 4 cups;
  • butter - 150 g;
  • chicken eggs - 1 pc.;
  • salt - ½ teaspoon;
  • sugar;
  • quick-acting dry yeast - 1.5 tsp;
  • pitted cherries.

Cooking

Dilute a teaspoon of sugar and dry yeast in warm water. Then add 75 g of melted butter, kefir and an egg. Mix it all well with a whisk. Add flour and stir elastic dough. We put it in heat for about an hour. At this time, we prepare the filling ourselves: wash the cherries and remove the seeds. After about an hour, the dough will double in size. We tear off a piece of dough, form a flagellum from it and cut into pieces. We form cakes from them, put a few cherries and sugars in each. Next, we fasten the edges, forming a dumpling.

There are several ways to cook steamed dumplings with cherries: you can simply boil water in a saucepan the old fashioned way, wrap it with gauze and cook dumplings over steam. If there is a double boiler, then in general everything is simple and clear. You can also steam dumplings with cherries in a slow cooker. Pour into the multicooker bowl already hot water to save time, grease the bowl with oil, put the blanks into it and cook in the “Steaming” mode for 10 minutes. After that, place the dumplings in a bowl, pour with melted butter. You can also optionally crush them on top with sugar or sprinkle with honey. Fresh sour cream is also great.
