For babies

If you are preparing such a dish for a toddler who is less than a year old, then you can either buy vermicelli specially adapted for baby food, or grind it raw using a coffee grinder, for example, or use a blender to grind the finished dish.

Consider the option of using adult pasta.

As the baby grows up and becomes familiar with adult food, the mother makes the diet varied, including new unfamiliar components in the diet. The most popular and favorite dish of many toddlers is milk soup with noodles. It is not only healthy and nutritious, but it is equally important that the unusual shape of pasta arouses genuine interest among children. In addition, this dish also has high taste properties. The young mother just has to find out at what age to get acquainted with shaped dough products and how to prepare them herself.

When you decide to prepare milk soup with noodles for your baby for the first time, it is important to choose the right products. Pay attention not only to the interesting shape, but also to the quality properties. Today there is a huge range of similar products. When purchasing, remember that pasta for baby food must be made from durum wheat. First of all, this is necessary due to the fact that they do not contain gluten (gluten), which can cause allergies in children. Also, pasta made from durum varieties retains its shape better, is perfectly accepted by the baby’s stomach, is easily digested, leaving only useful components in the body.

An alternative to such noodles is gluten-free baby pasta. They are based not on cereal flour, but on gluten-free rice and corn.

You can try pasta at the age of 9 months, but you should introduce it as a permanent ingredient in dishes no earlier than the baby is 10–12 months old. It’s better to start getting acquainted with vegetable soups; after a year you can prepare milk pasta soup.

Pasta products are characterized by numerous advantages and significant benefits for infants. The most significant indicators include:

  • Contains a large amount of complex carbohydrates. This means that vermicelli can provide the baby with energy for several hours.
  • The product is rich in B vitamins, microelements (phosphorus, potassium, magnesium) and amino acids necessary for the normal growth and development of toddlers.
  • Pasta is easy to prepare and has a wide range of uses in cooking.

Some manufacturers offer vermicelli in different colors. Don't be afraid to buy green or red pasta for your little one. To give them a tint, safe food colors are used.

Milk in infant nutrition

In order for milk noodle soup to be beneficial for children, it is important to choose the right not only pasta, but also milk. It is better to cook babies aged from 10–12 months to three years with diluted milk. A child’s body is still unable to normally perceive and digest a whole healthy drink. It contains highly allergenic cow's milk protein, casein.

Dr. Komarovsky notes that for children under one year of age it is better to prepare soup with milk formula, since it has a number of advantages: it has a stable composition, contains the necessary vitamins and microelements, the mixture is adapted and hypoallergenic, and is easy to prepare.

If you are confident in the quality of homemade milk, it is also important to observe fat content in children’s diets. The optimal value is 2%. For example, dilute three percent milk with boiled water in a 2:1 ratio.

Rules for including milk soup in the diet

A one-year-old baby will love soups with milk if they are introduced correctly and consistently into the diet. To do this, we take into account the following principles:

  • Initially, the soup is prepared without filling. It is better to add vegetables - zucchini, carrots, cauliflower, potatoes. When the child gets used to it, we complicate the recipes, add spider web vermicelli, and then other types of pasta.
  • For the first time, the baby is offered one spoon of soup. If the product does not cause negative symptoms: rash, bowel disorders, we continue to increase the portion of the product. The norm for a one year old child is up to 100 ml, at one and a half years the baby will eat a full portion of 120 ml of soup, and at three years old – 180–200 ml.
  • Milk noodles are cooked quickly in an enameled stainless steel pan with a double bottom on the stove. Cast iron containers are also suitable for this purpose. Total cooking time is 15–20 minutes. It is not recommended to use aluminum utensils, especially for boiling milk and storing food for children. The safety of aluminum cookware with fluoroplastic (Teflon coating) is causing a lot of controversy today. It is quite safe to prepare a dish in a slow cooker.
  • Prohibited additives for children under one year of age are salt, sugar, pepper and other spices. They are added in small quantities to the dishes of children over 12 months. You should not put sauces, ketchups, industrial mayonnaise, or products with a high content of preservatives, dyes, or flavoring additives into the soup.
  • To give the dish a special taste, you can add 10–20 g of butter, honey (if you are not allergic), and dried fruits.

In addition to the question of how to cook children's milk soup, we decide on a suitable recipe and select the necessary ingredients. Such complementary foods will delight the baby, give him a good mood, strength and energy to explore the world.

Today we will plunge into our childhood and remember how to prepare milk noodle soup. Those who went to kindergarten remember how many times we had to feast on this. For example, I only ate it as a first course (I was picky in childhood). Well, today I’m preparing one for my granddaughter, and I must say, she appreciated my work. Despite the fact that milk soup is a fairly simple dish, I still had to work hard, since I decided to cook milk soup with homemade noodles. I have a noodle cutter - why should it sit idle in vain, because the last time I used it was when I was cooking.

In addition, the process of producing homemade noodles interested my granddaughter, and the two of us worked hard together. The strips of homemade noodles turned out to be long, we called them “worms”. It was from these “worms” that the soup was prepared. It has been eaten for a long time, and my granddaughter is looking forward to when we will cook homemade egg noodles in a noodle maker again.

The noodle cutter consists of two parts: one is for rolling out the dough, and the other is for cutting the dough into noodles. The kit includes an element for fastening and a handle that we will twist.

Combine flour with egg and knead stiff dough. Since we will still be rolling out the dough using a noodle cutter, now we don’t have to knead the lump until it becomes elastic: the dough will reach this state during the rolling process.

Let's give the dough an elongated shape.

The noodle cutter has a knob with which you can set the thickness of the dough to be rolled out. There are only 9 divisions: on number 1 - the thickest rolling and then in increasing order. Number 9 has the thinnest rolling. To begin with, we skip the dough several times at number 1. Each time we add flour to make the dough denser. We can cut noodles only from hard dough.

Next, move the handle to division 2, skip the dough. Next, roll out at number 3, then 4, and so on until we get the dough of the thickness we need. For noodles I stop at number 7, but you can make the dough even thinner. We got thin layers of dough. We cut them into pieces that are convenient to work with. I find it convenient to work with pieces that are not very long.

We attach the part for cutting noodles to the noodle cutter. You can cut two types of noodles - narrower and wider. I like the wider one. Skip the dough and get even strips of noodles. We need to dry them for storage.

Of the amount of noodles that I got, I took half and left the rest for next time. We will not dry the noodles that we will use for soup - we will simply cut long strips into shorter ones.

Homemade noodles are ready. Now you can start cooking. Pour milk and water into a saucepan, add salt and sugar to taste. Place on the fire until it boils.

Add the noodles and cook, stirring, until tender. This will take 5-7 minutes.

That's all, milk soup with homemade noodles is ready. If you don't have a noodle cutter, you can cut the noodles by hand. You can simply cook this dish from the most ordinary store-bought noodles. Bon appetit!

Milk noodles are not a special type of pasta, but an original soup with milk. A childhood dish that is eagerly eaten by both children and adults. Ideally, it should be prepared from homemade noodles; the taste will then be more delicate and pleasant. To prepare such noodles, both regular wheat flour and a mixture with buckwheat product are used.

How long does it take to cook milk noodles?

A simple product with the addition of a small amount of ingredients takes 8-10 minutes to cook if the noodles are immediately dipped into boiling milk. There is a technology that involves pre-boiling in salted water for 5 minutes. If denser pasta than vermicelli is used, the cooking time increases to 6-7 minutes.

In a slow cooker, the cooking process takes 10 minutes after the milk boils. There is no other way to prepare the original soup. In the microwave, milk does not heat up properly, and the dish turns out tasteless.

Step-by-step instructions on how to cook milk noodles

The recipe for making milk noodles is not overly varied, it is simple and straightforward. The speed of cooking allows you to prepare a delicious and healthy breakfast for all family members even in the morning:

  1. For 2 small servings you need to take 50 g of any noodles, as well as 0.5 liters of milk and 1 tbsp. l. sugar (a little more is possible), plus 15 g of butter and salt.
  2. Pour about 1.5-2 cm of water into a saucepan and bring to a boil, immediately pour in all the milk and boil.
  3. As soon as the liquid boils, add sugar and salt, reduce the heat to medium intensity, and cook for 6-8 minutes depending on the size of the noodles. If you use a very thin web, then it takes no more than 4-5 minutes to prepare it.
  4. When 3-4 minutes have passed, add a piece of butter, turn off the stove and leave the soup for 15 minutes. It is advisable to cover the saucepan with a lid, otherwise the milk may form an unpleasant film.

When milk noodles are cooked in a saucepan, you need to constantly monitor them. If you missed it a little, the milk either burns or runs away. And there is no way to restore such a dish. For busy housewives and those who want to simplify the cooking process, technology using a multicooker is provided.

Milk noodles in a slow cooker

When cooking noodles in a slow cooker, you need to consider its size. For thin pasta, select the “Porridge” mode, and for denser and thicker pasta, you can select “Steam cooking”. Here's how to prepare milk noodles in a slow cooker:

  1. Pour 3 glasses of milk and 1 glass of water into the bowl, turn on the selected mode for 10-15 minutes. There is no need to close the lid.
  2. When the liquid boils, add vermicelli and sugar and salt to taste. Vermicelli should be about 150 g.
  3. As soon as boiling bubbles begin to appear, close the lid and cook in the heating mode for at least 5 minutes. Once the product is ready, add a little oil.

Covering the lid, leave the soup for a few minutes so that the butter melts well.

Despite the simplicity of the recipe, you can make several interesting adjustments to it that will change the quality of the dish:

  • If you add a little honey instead of sugar, the milk soup will become less calorie and more healthy. You can also use products such as Jerusalem artichoke syrup and other sweeteners;
  • milk noodles go well with raisins and berries; some people like to add various fruits and dried fruits;
  • if you want to make a very tasty and unusual recipe, make homemade noodles!

Making delicious homemade noodles yourself takes some time, but it makes the dish much more interesting. You can use the leftovers for paste. Here's her recipe:

  • Take about 200 g of flour and make a mound on the table, put an egg in it and add salt.
  • Add about 50 ml of water and start kneading the dough. You need to add water by eye as the flour absorbs the liquid.
  • When the dough stops sticking and becomes elastic, wrap it in cling film and leave for 30-40 minutes.
  • Dust your counter with flour and start working with the dough. It is rolled out with a rolling pin to a thickness of a couple of millimeters, after which it is cut into strips up to 5 cm wide.
  • Stack the strips on top of each other and cut the noodles, trying to make very thin strips.

The finished noodles are laid out on a clean surface and dry for some time. Excess can be stored in the refrigerator like any other dough product. Well-dried pasta is stored in a textile bag in a dark place for up to 2 weeks.

Milk Noodle Recipes

Milk vermicelli is not used anywhere in other recipes, but special ingredients can be added to it. And the most popular of them is pumpkin:

  • for ¼ cup of noodles you need to take 1 liter of milk, salt, 1 tsp. butter and 100 g pumpkin;
  • While the milk is boiling, the pumpkin is cut into cubes, then placed in the liquid;
  • you need to cook until soft, then add salt and pasta;
  • cook for at least 5 minutes, stir and add sugar if necessary;
  • Turn off the stove, add oil and leave for 10 minutes under the lid.

Milk noodles are a wonderful dish that will add variety to your daily diet. It can also be given to small children if prepared without excessive amounts of sugar and butter.

Vermicelli is, one might say, a universal product. You can make a wonderful side dish from it, season soups with it, and even make vermicelli pancakes. This pasta takes first place on the children's menu. Today I want to tell you how to cook milk vermicelli. This is not a soup, but a thick second course, which was often served in kindergarten. My recipe with photos will try to show you step by step all the stages of preparing this dish.

In order to feed two children you will need half a glass or 70 grams of regular (not thin) noodles. You can see the difference between “classic” vermicelli and its variety called “Spider Web” in the recipe, where I talked about how to boil it properly.

Let me make a reservation right away: the volume of my glass is 200 milliliters.

How to cook milk vermicelli

Pour 1.5 cups of cold water into a small saucepan and add salt to taste. I used a small amount, at the tip of a tablespoon.

As soon as the water boils, add a measured amount of vermicelli.

From this moment until the end of cooking, it is better not to leave the stove. You need to stir the pasta almost constantly. Since there is little water, you need to try not to let the vermicelli stick to the bottom of the pan.

When the water has almost boiled away and begins to foam, stirring the vermicelli will become problematic. It's time to add milk. The time from putting the noodles into boiling water until adding milk is approximately 5-7 minutes. The fire should be medium.

Add milk (1 glass) and continue stirring the dish.

The final ingredient is sugar. It also needs to be added to taste. I usually put in half a tablespoon.

Cook the vermicelli with milk for about 10 minutes over low heat.

This is what finished milk vermicelli looks like.

Place the finished dish on plates and serve hot.

Milk vermicelli is an ideal dish for a children's menu.

If you add double the amount of milk during cooking, you will get a wonderful milk soup instead of the second dish.
