Pancakes are a wonderful versatile dish! After all, it’s no secret that pancakes can be eaten both as an independent dish and with different fillings. Today we are preparing pancakes with cottage cheese and strawberries. The delicacy comes out delicious, tender, and melts in your mouth!

My strawberry puree is homemade: I simply puree frozen strawberries (defrost first) with sugar using an immersion blender. If you don’t have such puree, it doesn’t matter - you can not add it at all, but limit yourself to cottage cheese and fresh strawberries.

As for the cottage cheese: mine is soft, quite moist, but viscous. It can be spread on. If you have regular cottage cheese, rub it through a sieve.

You need to add enough cream so that the consistency of the filling suits you! My filling turned out to be quite liquid, but did not flow out of the pancakes.

So, to prepare pancakes with cottage cheese and strawberries, we will prepare the products according to the list.

Mix cottage cheese, powdered sugar, vanillin and cream in a bowl.

For filling:

- cottage cheese (fat content is not important) – 500-600 g;
- thick sour cream – 4-5 tbsp. l;
- sugar - to taste;
- fresh strawberries;
- mint sprigs to decorate the dessert.

How to cook with photos step by step




First of all, according to the recipe for pancakes with cottage cheese and strawberries, pour kefir or yogurt into a bowl, beat the eggs into it. Any fermented milk product is suitable for pancakes; you don’t have to use kefir. If the milk is sour, you can make pancake dough with it.





Whisk kefir with eggs, add sugar to taste, and salt.





Sift a glass of flour into a separate, larger bowl. This is enough for now, then you will need to look at the test. You may need to add more flour.

How to cook pancakes with cottage cheese and strawberries

Most likely, you already have your favorite recipe for stuffed pancakes - you can use it, and take the filling and sauce from ours. Or, for a change, you can try to do everything as we advise. This time the pancakes will be made from wheat and whole grain flour - they are even tastier than from just wheat flour. Well, there’s nothing to say about the benefits - everyone knows that bread and any baked goods made from mixed flour are healthier. Take two eggs, whisk together with sugar and salt.

Pour in kefir, preferably not from the refrigerator. Instead of kefir, you can use sour milk, drinking yogurt, yogurt or fermented baked milk. In general, any fermented milk product is suitable, except sour cream.

Sift the wheat flour, select as much as needed, pour it into a bowl with kefir and egg. Immediately add the whole grain.

Using a whisk or mixer, beat the dough without lumps, homogeneous, approximately as thick as liquid pancakes. This is what we need; after adding soda, the dough will fluff up and become liquid. But if you make it like this right away, then it will be like water, you will need to add flour.

We extinguish the soda with vinegar. I always do this - I don't like the salty taste of soda in baked goods, vinegar eliminates it. At first the soda will foam, you need to stir it and wait a little until the foam settles.

Pour into bowl with dough. Do you see what happened to him? All these holes and air bubbles are the result of the work of soda; the pancake dough has become watery, like... . Add sunflower oil and whisk again. Cover the dish and let the dough rest for a quarter of an hour. If after 15 minutes the dough has thickened, pour in a third of a glass of boiling water, stir and start baking pancakes.

  1. Mix the eggs with sugar and vanilla sugar, add kefir and mix with a whisk.
  2. Add sifted flour mixed with salt to the egg-kefir mixture, mix and pour in the oil. The dough should have the consistency of liquid sour cream.
  3. Bake pancakes in a well-heated frying pan.

At first you will get a thick flour mixture. This is done to ensure that there are no lumps in the finished dough.

Pour in the milk, adding it a little at a time. And stir the dough until it becomes moderately liquid (about the same as yogurt or sour cream).

Add vegetable oil.

The finished pancake dough should rest a little. Approximately 5 minutes for the flour to dissolve in the milk. Then you can start frying.

Pour about 50 ml of batter into a hot pancake pan with a ladle. Tilt the pan to form a large thin pancake. No oil is added to the pan.

Fry the pancake for about half a minute on both sides. To make the pancakes turn over conveniently and quickly, use a spatula or fork.

The cottage cheese and strawberry filling is easy and quick to prepare. Cut the washed strawberries into small slices, mix the cottage cheese with sugar and add the chopped berries. Stir again and you're done!
